Lansky Sharpeners Knife Sharpening System Standard

Lansky Sharpeners Knife Sharpening System StandardI've owned the Lansky system for almost 20 years and they perform perfectly and enable me to get fantastically sharp knives every time with a modicum of elbow grease but without any actual skill. Lansky's system is a brilliant arrangement of a knife clamp with sets of holes that ensure consistent grinding angle for the stones that have long steel guides. This solves the problem of how to hold the stone to the knife at a consistent angle. Using stones to sharpen your knives gives you total control and allows you to achieve the finest edge (much finer than using a chef's choice, motorized bench grinder (which can overheat the blade ruining the temper), or any of those ceramic wheel/rod dohickeys). The available angle choices are 17 degrees (for Asian knives), 20 and 25 (for Western knives) and 30 degrees (for hatchets). Lansky offers various different stones (from natural Arkansas stones, to diamond abrasive). This particular set includes 3 synthetic stones coarse, medium, and fine. The stones are of good quality. The fine is fine enough to get your blades shaving sharp. The coarse one cuts quickly, but will be the first stone to wear out. They also give you a bottle of sharpening oil to help carry away the metal shavings to keep the stones cutting. I don't like using oil so I keep a wet paper towel handy when sharpening and wipe the metal off the stones and blade periodically while sharpening that that works fine for me.

To use the Lansky the process is simple clamp the blade into the clamp then scrub the blade against the stone with a consistent angle until you feel a burr (a thin raised seam) along the edge. The burr is your cue to flip the blade over and do the other side. When you get burr on the other side, move onto the next stone. By the time you get to the final fine grade polishing stone and get burr on the last side, then flip and give slight touch with the stone on the other side (to remove the burr but not raise another one) and you'll find your knife is literally shaving sharp (will cut the hairs off your arm).

Is Lansky the perfect sharpening system? For medium and small knives it probably is. Knives over 6"-7" long, however, require you to sharpen 1/2 the knife and then move the clamp and sharpen the other half because the edge angle changes too much if you attempt to sharpen too far from the guide hole. The stones themselves are pretty small (about as wide as your middle finger and as long as your hand) so it can take a long time to do a big knife. I can do a 5" utility knife in about 5-10 minutes, but an 8" Chef's knife can take more than double that which starts to become a bit of a big project. If you do a lot of big knives you'll probably want to spring for an Edge Pro Apex (same mechanical concept, bigger size for much much more money). If you only periodically sharpen then this can be lived with. You shouldn't sharpen your knives more than once or twice a year (or they wear out too quickly) since sharpening removes metal. You should use a honing steel frequently in between sharpenings to keep your knives sharp.

Lansky's system is the best way for normal regular people (non fanatics) to sharpen their knives. It's pretty easy, fun, satisfying, and extremely effective.

It's a little work to sharpen knives; not really sure if the electric one would have done the same.

I read the review from above and it helped me decide to purchase this knife. The knife is SOLID, much beefier and heavier than I expected. No need to worry about the blade flexing on you as you cut or chop or dice or cleaver. I have a Henkels set, but not the 5 star and I have to sharpen the knives more often than I expected, so far this knife has held a better edge. Forget the mezzaluna do it with the Santoku!

I purchased one for myself several months ago and loved how smoothly it sliced through both vegetables and meat. I gave this one to my sister after preparing pizza toppings with the dull chef's knife she had. The 7 inch is a good size longer and I find I want to put my hand on the back of the blade to steady it rather than on the handle where it belongs. Definitely go for the full tang and heft of this knife made of high carbon stainless steel. It holds its edge and has good balance. Just remind the new user that this knife is a thin cleaver and not a chef's knife that requires a rocking motion. It's not a difficult transition.

I purchased this knife for my wife who, after using the first time, proclaimed the knife to be quite sharp and then show me the bandage on her finger. She has often told me how much she likes this knife's carving and slicing abilities as well as how it has reduced hand fatigue & labor when preping food(we have a catering business). Haven't had it long (a month or so) so I can't say how durable the edge will be over a long period of time but it's still just as sharp now as the day I gave it to her(bought more band-aids) and she uses it daily, several times a day with an Ironwood Gourmet Acacia Wood End Grain preping board.

Norpro Jumbo Pastry Mat

Norpro Jumbo Pastry MatI bought this in Feb. 2009, as of now had it for about a week.

From the "correct" (non-ink) side, all the measurement marks are visible and quite usable, but the text is too blurry to make out. There are solid lines throughout the mat (instead of dotted lines or marks along the edges like most others), which is very nice.

The mat moves a bit when rolling I expected this since it's not a silicone mat it was a trade-off between non-slip and knife-friendly, and I opted for knife-friendly (which might've been a bad call, see next).

The mat is knife-friendly, but extremely heat sensitive. I think it's composed of 2 pieces of plastic pressed together and only glued at the edges, and the slightest contact with heat separates the layers and creates a big bubble. I threw about 1/2 cup of toasted walnuts on the mat and it immediately bubbled up (they weren't very hot, easily handled with bare hands). Once cooled down the mat returns to its original shape, but basically you can't put anything even mildly hot on it, which takes away some of the advantages of its knife-friendliness and also precludes leaving it on the counter semi-permanently. This is the main reason for my low rating, I would've given it at least 4 stars otherwise.

I bought this for the measurements printed on mat. You can't read them on the roll out side. Is basically useless for what I wanted it for. If you try to roll out on the side with the print, the ink comes off in your dough.

This mat is wonderful, a perfect size for pie crusts, rolling out the biscuts, etc. All of our pastries have just slid off of it. The measurements, and wording are to faded to be able to see, and if you turn it over to the darker side, it's backwards. Other than that this thing is wonderful. It arrived in a HUGE flat box and stores nicely behind the microwave so I don't have to bend it. Very useful product to have around

I like this pastry mat a lot. The only complaint, a fairly minor one, is that the material is a little more rigid than I would prefer, making it difficult to roll up for storage. Similarly, when it's unrolled for use it doesn't readily flatten out on the work surface. What I need to do is figure out a way to store it in its flat (unrolled) mode.... perhaps strong magnets on the side of the refrigerator.

Calphalon Contemporary 8-Inch Bread KnifeA bread knife is a specialized tool -you really can't use it for much other than cutting bread. It's tempting to purchase just any bread knife. But this is forged, rather than stamped, and the reduced flexing of the blade goes a long way towards making the slice the slice you wanted rather than what you happened to get. Functionally, this knife is beyond reproach. Even with crusty breads, the crumbs are minimized.

It does not use the traditional three-rivet handle -the handle is molded. But it is a full tang, and there's no reason to expect any loss in longevity.

I gave this four, rather than five, stars primarily on the basis of the appearance of the blade -but this is a matter of personal taste. Unlike knives used in the kitchen (where getting the job done is the job, and the appearance is not particularly important) a bread knife is likely to be used before guests. The utilitarian appearance of the blade is entirely appropriate to my tastes, however it may not appeal to those who expect a highly-polished appearance. Also (and this is visible from the photos) this bread knife does not have an offset handle, which may be awkward with large cutting boards.

This is absolutely the BEST knife I've ever used for cutting bread. Even when the bread is piping hot this knife glides right through it w/ease and doesn't even begin to squash or damage the loaf. I'm amazed how thin I can cut slices (when the bread is cool). It's a fab knife. Just be careful it cuts well for a reason! It's sharp as all heck! GREAT knife!

Sabatier 4 Inch Forged Carbon Steel Paring Knife Made in FranceFirst let me say the price of $29.99 was the best I found and these were shipped fast. (The name Sabatier is not protected by patent. Sabatier knives are made by a number of companies including China and really the 4 Star Elephant brand are the nearest in quality to these K Sabatier knives). I bought a set of 4-6-8-and 10 inch. I liked these well enough to buy my daughter a set. They do have a slight curve to the edge so you can dice or slice with them. These knives have a RC of 54-56 and while may be considered a soft steel it's also easier to sharpen, plus holds an edge pretty well. These are carbon steel (not stainless) and will develop a patina or will also rust If not hand washed and dried, then vegetable oil applied. Truthfully I believe any good knife should be hand washed, even stainless can rust and handles crack. I prefer carbon steel knives for kitchen work . Now I'm 69 years old and own 200 plus knives (stainless and carbon steel) for hunting and kitchen work (some hand and custom made), plus own a number of sharpening systems. Many stainless knives sold today are junk (cheap ones won't hold or take an edge) and good stainless knives will be harder to sharpen due to the alloys used. I'm not a novice when it comes to knives. I'm very satisfied with this brand of Sabatier, have found they do take a good edge and hold it well. I also have three 4 star Elephant Brand Sabatiers, two of steel forged in the 1930's (sold as historic knives) and one of new forged steel. The two historic older forged will match these in edge holding, but the modern one doesn't match them. I really didn't expect that and I know a lot of people like the Elephant Brand, so many will disagree. (Both brands in my view are better than the German Knives, yet generally cheaper in price) Fit and finish on these are good, did notice one had slight grind marks on the top edge, but not bad. Most wouldn't even notice it. But one of my Elephant Brand historic knives did too. That doesn't effect use though. The blades are thinner than some Chef Knives, they are lighter than many, well balanced, but for most of us in home kitchen use, these are great. Handles on the smaller knives are larger than most making them easy to use too. The only kitchen knives I have and rate better are 40+ year old Carbon Steel American made, Wear-Ever and some Clyde Knives. I don't believe anyone has ever matched those in quality, nor do they now. This review is just my opinion and some will disagree and that's OK and why we have many knife companies. Hope this review helps someone and I tried to be very honest.

I have a fondness for old carbon steel knives, and was intrigued when I saw these K Sabatiers listed as such a great price. Based on research, and on the reviews on the 10-inch version of this same knife, I bought a 4-inch, 6-inch, and 8-inch version. I am VERY pleased with these knives, and will probably go ahead and order a 10-inch as well. They were fairly sharp upon arrival, but a quick trip to my professional knife man for a pre-use touchup turned them into razors. Care must be taken, remember, to wipe these occasionally during use, to wash and dry immediately, and even wipe with a bit of oil, as they WILL rust and discolor.

If you like carbon steel knives, trust these. These are the real K Sabatier. You won't be disappointed.

I needed to replace my Sabatier 4" paring knife because, unfortunately, it fell out of the moving box and was run over by the moving van. Searched Amazon.com. Came across many Sabatier-type knives. Decided to take a chance on the 4" paring knife from China Fair, Inc because their description seemed to be honest. Besides, I fully intended to send it back if I were disappointed because $40 is a lot of money for a knife that small.

Was extremely pleased. That little knife met all of my expectations, right out of the box. It would slice a hand-held piece of typing paper into shreds, just like the proverbial hot knife through butter.

I have just ordered a 6" chef's knife from China Fair, Inc. Incidentally, in subsequent e-mails with high-level staff, I learned that China does not come from the word `China'. It comes from the word `china', i.e. dishes. They are a family-owned business who have been purveyors of fine kitchen `equipment' for 47 years.

This is a very nice knife at a good price. It is super sharp because of the material: carbon steel.The disadvantage is that it SHOULD NOT GO IN THE DISHWASHER. The sheller states that, and I can testify to that, since I ignored his advice. It will discolor in the dishwasher, but it stays sharp.

This case is nice and secure due to its folding operation. The cutlery are tucked away nicely. However, I purchased the plastic/plush-lined knife sleeves for each knife because your knives will puncture any travel beg unless you place the knives in a sleeve of some kind. This bag did not come with a strap but you can use any strap w/ clips you have from old bags. I use this bag all the time. It is lightweight (except for all of the cutlery/accessories you happen to travel with). It is durable and looks appealing. Overall, I am happy with this purchase.

This case does what is supposed to do. It securely holds knives. I like the pockets and it is a nice case. The thing i don't like about it is how easy it is to cut it. I already have about 10 cuts in it and knives go right through the fabric without any force. It could be because my knife is super sharp, but my old case seemed to be a little tougher and my old one was a really cheap case. My case also had giant Wustoff letters across the side which the picture didn't show. Not a big deal but i personally don't own or like wustoff knives, I just bought the case because it looked like what i wanted. Now i'm a walking Wustoff billboard.

Instead, the range of items we DO use it for is huge. Warming tortillas (flour or corn), thin chicken breasts or steak slices, english muffins and bagels, even french toast are things we've made on this. The lines give neat char marks, and it never seems to burn anything.

The floating lid matters if you have thick items, and since it cooks from both sides things heat up quick. It's actually easier to clean than the Foreman grill, with less moving parts. Cleans up very easily with a paper towel and water.

I'd have given it five stars if the temperature could be adjusted...that would have been a neat feature. Instead, it's a single temperature but it works well and feels solid. There are cheaper ones but they feel cheap...this feels solid.

I recommend this knife for any type of melon or pineapple.

This is the only watermelon knife I have used. It sees to never ware out so I am not lured to other versions. I was surprised that there is a need for this critter; it found me in the store. It is so much easier than using steak knives. I also have longer knives but they are not as easy to use as this critter. I also appreciate the sheath especially with inquisitive cats.

Henckels Sharpening Steel Prof "S"

Edge Maintenance 10' Professional Steel Sharpener in BlackI bought this steel along with a Henckels chef's knife as part of my good starter cutlery when I moved to a new apartment. That was 25 years ago.

I still have that steel, and use it on a regular basis. There is a little rust around the base of the handguard, and the the hanging ring has darkened over the years. The steel surface is excellent and shows no wear.

I must admit that I was surprised to see that the tool has not changed in all this time, but then, it needs no improvement.

This sharpener works well. I bought it additionally to a brand new knife set and I am glad I did. Good brand, I recommend their products, they're worth every penny.

This Sharpening Steel is of good quality at a fair price. A good rating is probably a bit understated given that it is of high quality, however,having used steels in the past the proof is in the long-term durability. More important to me was how the company handled a shipping issue. This is a small tool that if properly packaged would have fit in my mail box. However, it was shipped in a crate large enough to handle the national debt so I had to take a trip to the PO, wait in line and get the box. Next I had to dispose of this large box. Not so big a deal but I live 50-miles from the post office and it was a minor inconvenience when a small box would have been perfect. The company promply, professionally, and curtiously responded to my opinion and compensated me by refunding the shipping fee for the sharpener. Highly Recommend the company for their customer service.

the set is beautiful and functional but the tea spoons are TOO SMALL! I guess that's how they design things in Sourh Korea or Taiwon. Small hands. Will try better next time.

Make sure to hand wash and dry after using. No dishwashers here. The rosewood handle will last a lifetime, but soaking it in water will only dull the wood over time. Consider buying a single knife if you don't need a full set. Other than that, it's a tough knife; one that should definitely be in your knife block!

Excellent price for the quality of these knives that cut thru steak as if it was butter. The knives came in a very flimsy box. Keep that in mind when you buy them they should be kept in something so the blades don't become dull. Love them knives!

I was looking for some nice quality steak knives for my husband for a birthday gift. These are fantastic knives and the rosewood handles make them just a little more special than the standard plastic. We don't eat much steak, so it's great to pull these out for company. We like Victorinox products. Only complaint is the box -not made to last for longterm storage.

Forschner knives have been long known as good quality knives, but less expensive than other German knives, such as Henckel and Wusthof. The wooden handles are becoming less available, but reflect the original design of the knife. These are full-tang knives, which means that the blade goes all the way through to the end of the handle (you can see this by the 3 rivets in the wooden handle). These knives are very light in weight, yet perfectly balanced. The blades are sharp, and stay sharp. You will not saw meat with these knives, but rather slice easily through the toughest meat.

By this I mean almost any job. I was already a Global knife enthusiast, and had a Chef's Knife, a Cleaver, and a paring knife (in addition to a bunch of German legacy knives), when I read a review somewhere about this particular knife, and how the reviewer's wife referred to it as her "go-to" knife. So I cratered and ordered one. What a revelation! Perfectly balanced, big enough for most cutting jobs but delicate enough to split and remove the seeds from a small Thai chile (for instance). I echo the wife's appraisal. If you only want two knives, this one and a Chef's Knife are amply sufficient. All those other German knives look out forlornly from the woodblock as this one gets pulled out....again and again.

Zhen Japanese VG-10 Large Slicer Chopping chef Butcher Knife 8"

Zhen Japanese VG-10 Large Slicer Chopping chef Butcher Knife 8'This Zhen knife claims to be a mimick of the Shun Chinese Chef Knife 8". Well, I own two of the Shun Chinese Chef Knives, and decided to purchase a Zhen one for my in-laws and also to test out the claims.

Out of the box, the Zhen knife is definitely very sharp. I did my usual "sharpness" test my slicing some food items (e.g. tomato, celery, semi-thawed chicken) and a piece of paper. I also test the blade against my thumb nail, which is a good indicator that the knife is sharp if the blade causes some friction against the nail. However, in comparison to the Shun knife, the Zhen knife blade is definitely slightly wider...maybe around 1.5 inch. Also, the Zhen knife weigh around 75% lighter than the Shun knife. One of the nice thing I like about my Shun Chinese Chef Knife is that its weight is just enough to assist with chopping food without me using much strength. With the Zhen knife, you do have to use a little more strength, but not much since the blade is pretty sharp. Finally, the handle of my Shun knife is straight, and the Zhen knife is a little curving downward. It was awkward to use at first since I am used to the straight handle of my Shun, but you get used to it pretty quickly.

Thus, overall I would give the knife a 5 star since it's a great quality knife and a great deal for the $59 price. However, since the company claims to be similar to the Shun Chinese Chef Knife, I knocked out a star since it's almost there (but not quite). Yes, I would seriously consider this knife again if my Shun ever got damaged considering I won't need to pay 3-4 times more in price to get the same Shun knife.

I own a few knifes from shun and the steel in this is compatible , holds its edge for a long time.

Factory edge is decent but would recommend using a 1000/6000 grit stone on it to get the edge

It came sharp enough to shave with, and I did.

Slicing is effortless, but it feels light. I actually appreciate how it balances in my hand.

The price is right. You're going to spend ~$200 for a knife of similar quality.

The handle is terrific. The tang was a solid piece of metal, ground flat in the middle, with the end cap left the width of the handle. It will last Forever. The grip is a sort of rubberized material, and it's bonded so tightly there is no place for water or gunk. I don't mean 'a crack thinner than a hair,' I mean there are no seams. I've used it twice daily for a year, and it's perfect. This is a better grip than my Wüsthoff knives. I especially like how the blade tapers into the handle, as it provides a very comfortable grip when holding the knife properly.

No Gimmicks. It seems like once you go above the $20 price range with a Chinese chef's knife, some cooking show personality or 'respected brand' is adding at least 100 bucks to the price tag. I know that is a valuable service because most people will never feel satisfied with their choice unless there is a brand or celebrity endorsement, but at the same time these products are usually marred with a logo, built from materials more suitable to European knives, or have 'distinctive' styling that gets in the way of functionality.

If you're the sort of person who has hand sharpened knifes since you were a kid and cooks by intuition, I think you'll find this knife a pleasure to use. But if you've been watching Alton Brown explain knives on youtube and he didn't rub you the wrong way, you should really spend the extra money and get Shun knives or whatever.

Caveats:

This is not a butcher's knife, as it is titled.

Leaving it in the sink or leaving food on it will cause the blade to stain or develop a patina. I wouldn't put this in the dishwasher either.

This is a fine instrument. It won't survive in a house with casual roommates or lazy children.
