Wusthof's Cordon Bleu line has the same handle as their Classic line. But:

The knives have no bolster behind the cutting area. This gives you a second point at the back of the knife perfect for things like pricking the skin of a tomato to insure a clean slice, or scoring an apple or potato skin as you rotate it against the blade. However, because there is nothing between your finger and the blade, you have to balance the knife properly as you use it, and pay attention to where the knife is resting in your hand. Yes, you can hurt yourself with this knife. Much more easily than with the Classic.

The blades are thinner, harder, and more highly polished than the Classic, with a shallower and sharper angle on the cutting edge. As a result, they will keep their razor edge longer, but you'll have to baby the knife more, and the edge will be harder to steel. (The metal is the same amalgam as the much older Wusthof knives were, before they changed the formula. I finally gave up on using my Wusthof steel, and I'm using a Kyocera ceramic steel rarely to keep my Cordon Blue knives sharp).

This is not an entry-level knife. But if you know what you're doing, it will become the go-to paring knife in your arsenal. Think of it as the turbo version.

I ordered this knife to replace one that had been used as an icepick (by a nameless spouse), and this design is even a bit better -good length and taper -than the one we replaced (which was part of "Emeril" Wusthof knives). We won't be testing its usefulness as an icepick, however.

I do not like serrated knives.

After I bought a set with one of these in it, I realized that I loved this as a steak knife as well as a paring knife. I have purchased a full set of these for just this use, but I end up using these for all kinds of knife work in the kitchen.

I like that it doesn't have the back catch for nice clean continuous cuts, and I have never come close to injuring myself with this feature.

I bought this over the normal Built NY wine tote because I liked the idea of a messenger bag. It gets cold in winter and it's nice to have something I can sling over my shoulder and still keep my hands warm in my pockets.

The reason I returned this bag is not the quality; I've always found the Built NY brand to be top notch. It's because I can't sling this over my shoulder, at best I can throw it over my forearm. If I were a man; maybe just my wrist. The strap is EXACTLY as long as the picture indicates; it's really my fault for assuming there was additional slack tucked away and it truly was a shoulder bag. What's a bit puzzling is that the two-bottle version is indeed a shoulder bag.

Hampton Forge HMC01B607A Continental 15-Piece Cutlery SetI purchased this knife set after having held the chef's knife and felt that I can love its wonderful weight and balance. It has the similar feel to a knife from another company which cost almost three times as much. I've had the set for about four months now and can not be happier. It's a "humble" knife not heavy or impressive. Rather, it's sleek and balanced and when it touches the food, it just naturally "sink" into the food and cuts with minimum pressure.

I had only a passing period of regret when some spots which looked like rust spots appeared on the knives. I scrubbed the spots off with an abrasive cleaning pad and it came off, but reappeared. Since everything else about the knives were so wonderful, I called the company's customer service for help and they offered a replacement. They were very curteous and very nice. Excellent response.

The same type of spots appeared on the replacement, but because I could not bear to part and give up on the knife, I kept scrubbing the knife for several times. The spots have not come back again for over a month, now, so I no longer have to scrub them. In fact, they now look like new with just normal cleaning. Now, I wonder whether I should've been more aggressive with the first knives as well.

So, in sum, purchase these knives. They're worth every penny. You won't regret it. If some strange spots appear, give the knives a good scrubbing for a few times and they'll be tamed. Enjoy!

Overall, this knife-set has a professional feel to it without an inflated price.

* Balanced so well, that you can practically balance it on your finger. That's not the only benefit of a well balanced knife, I think it gives better cutting precision too.

* Didn't seem sharp upon arrival. However, that was quickly remedied using a Presto Eversharp electric knife sharpener.

* Anxiety of the plague stain another reviewer mentioned. See note below.

* Hand wash recommended The documentation recommended hand washing for best performance/durability. Could this have to do with the plagued stain Ann described? I hand wash just in case. This might seem inconvenient to some, but it's also a trade-off to time/effort potentially saved from better performance of the knife (after sharpening). I wash, then dry immediately to avoid staining these beautiful knives.

Cons Summary: The cons can be eliminated by: 1) hand washing and drying immediatley 2) sharpening thoroughly 1-3 times upon receiving

Bought these for my new apartment because I needed decent cooking knives on a budget. They all have proper weight and rigidity. The construction exceeds my expectations. Not being a chef, I don't know how versatile this collection is, but I easily cook for 4 with these a few nights a week. I did not know how to use an edge honer, and the included instructions were not very helpful. However, YouTube was very helpful.

Kyocera Revolution Series 7-Inch Professional Chef's Knife, Black BladeI bought this knife recently as a work knife at my job. I am a professional chef and I am experienced and well educated on cutlery. This is the second ceramic knife I have bought, the first was dropped by a co-worker and that knife shattered. I love working with ceramic knives because they are the sharpest knives around,period. Nothing is sharper. It glides through food. It requires a bit more care, but if you take good care if it ,it will last a lifetime. This knife is very versitile in the 7" model and very resonably priced. Perfect for meat and fish, slicing, fruit and vegatables. I can cut perfect slices, juliannes, and very fine dice. I laugh when I hear people talk about " my shun knife" or the extremely over-rated "my henckels". They are good all right but very expensive and they will NEVER be as sharp or hold it for as long as a ceramic.

Now, I will say this knife has one thing I don't care for. While the handle is extremely comfortable and feels oh-so-natural( it actually helps cutting in a mechanical sense by design),if the handle is greasy or oily (when cutting steaks from large cuts or dealing with certain fish it can get oily from handeling) it becomes slippery. Not good for a knife as razor sharp as this. Just keep it clean, protect it from abuse and you will have a knife like no other for alooooong time. In a home I suspect it will not be subject to the rigors I put it through, therefore this knife is a great value for the home chef. I would put this knife up against Shun or Henckles or Wusthof any day.

I'm not a professional chef.........I just have a bad case of "chef envy". Recently got this knife based on the chef's recommendation LOVE it. Extremely sharp, as are all the Kyocera knives. Very well balanced and comfortable to use. I have a full set of top of the line Henckels love them too but I find myself reaching for the Kyoceras for most jobs because of their sharpness. This knife allows you to slice through large onions and get really thin slices with ease. Goes through meats like butter. This 7" knife is a new addition to the Kyocera line, and I'm glad they added it. The Revolution blade is a little heftier and the black blade is very cool looking.

Don't be fooled by cheaper imitations if you're going ceramic, go Kyocera. I was given a less expensive starter set from Linens N Things. They weren't Kyocera and they were a disappointment and waste of money.

In my opinion, this knife, a paring knife, and 5" slicing knife are must haves for serious cooks. Expensive but worth every penny. In the case of Kyocera, you get what you pay for top quality.

payed for itself already and I have yet to send it off to get sharpened. Yes, some people complain you cant use it like a steel knife with prying open things or that its fragile. Really people.... its a knife! you should be careful not to drop it, and using ANY knife to pry things open will cause damage to any knife. all in all a great knife, kinda cheap handle, that has a potential to lose grip when wet or oily.

I'm kind of reluctant to write this review. Particularly since a professional chef seems to favor this knife in a previous review but I have a particular issue with this knife that I feel I have to point out for others. I like the quality of the knife. It feels very nice in the hand, very well balanced though obviously feels a bit fragile since it's made out of ceramic. I have no issues with the quality or the fragility of the knife.

The issue I have is that the sharpness of the blade is not all that impressive to me. My favorite steel for blades is VG-10, which I think is the best all around steel since it is very easy to sharpen and also holds an edge for a decent amount of time. I have a few knives made out of VG-10. I tested this knife out after using a VG-10 kitchen knife for a long period of time time and I have to say that for the cost, the sharpness just isn't all that impressive to me with this ceramic blade. I sharpen my own knives from home and while I'm not an expert by any means, I've been able to achieve the same sharpness just using some Arkansas sharpening stones. This is as sharp as the knife gets obviously so as it dulls down it will be even less impressive to me.

My test consisted of cutting celery and basically the knife made fairly clean cuts but they weren't smooth. I'm not getting hair splitting sharpness or a razors edge cut. I expected the knife to be much sharper than this so I can't say it was worth the price to me.

Kyocera ceramic knives are a work of genius but very different from steel. They are unbelievably sharp and hold their edge for many months of daily use. You should know however that there are two significant drawbacks. When the knives finally become dull, you cannot sharpen them yourself but must send them to factory service in Los Angeles. The Kyocera people return them quickly, and in fact will sometimes replace broken items with brand new ones free of charge without being asked, but of course it is still inconvenient. Second, the ceramic is brittle and fragile so the edge chips easily. If you try to pry with it, it will break right off.

Overall it is more practical for everyday to use quality steel knives you can sharpen easily yourself. I do recommend having one or two ceramic knives in your collection for items like tomatoes.

Although this garlic keeper does seem to keep it fresh longer, it is really only for small, very small heads of garlic and I find myself unable to use it because the garlic I buy tends to be the size of a small fist and the opening for this keep is only about 2.5 inches. So if you need a keeper for small heads of garlic, this will work, otherwise go for a larger one.

I had a terra cotta garlic keeper that got broken. This one looked just like it, so I was happy to order it. When it arrived, however, it was MUCH SMALLER than I expected, and I can only keep two heads of garlic in it at a time. I could keep four or five heads in my old one. It will do its job just fine, but it is smaller than the picture suggests.

With a change of life style diet comes many surprises, including using fresh rather than powdered or ground garlic. But how to store it, keep it fresh, and ready for immediate use??? Was fairly disappointed when I received this and found out that it can only hold 1-3 cloves of garlic. For someone who goes through a ridiculous amount of garlic, this doesn't cut it. For normal people, it may suffice.

Chef's Choice M130 Professional Sharpening Stations

Chef's Choice 130 Professional Knife-Sharpening Station, PlatinumI am an Executive Chef and have worked in a kitchen for over 25 years. I purchased this sharpener about a month ago and so far I am very satisfied. If you read the manual, it is very easy to use. I was at first worried about taking too much metal off of my kinves. As long as you don't over use the first stage that should not be a problem.

It put a good edge on my knives quickly and easily. I have a 10 inch wusthof that is my main kitchen knife. I put an edge on it with stage 1 over a month ago and it has remanined very sharp since. All you have to do is run it through stage 2 ( which is just like a steel) every once and a while and it maintains it's sharpness.

So far I am very satisfied.

As a user of Chef's Choice model 110 and 120 for over ten years I had greatly anticipated the release of this new model.Unfortunately some poor design choices prevent me from fully recomending this product.The older M120 provided 3 stages and created a triple bevel edge.The new M130 can create at best two bevels and only one if you use the sharpening steel.The first stage creates a single edge that can then be steeled with the second stage.If the third polishing stage is used the steeled edge is ground away.That being said the number of bevels is secondary to sharpness of the blade.In comparing the sharpness of the two machines they are very similar with the new 130 seeming slightly sharper.The major issue with the machine is the need to have it out on the counter at all times.The whole point of a sharping steel is to hone your knives each time you use them in order to maintain an edge.This means you need to lug out the box every time you cook, or to have it out on the counter taking up space.If you are model 120 owner looking to the M130 as an upgrade you are much better off buying the Chef's Choice 470 SteelPro.That way you only need to have the larger machine out for major sharpening and can quickly grab the small steel for honing.You'll also notice the M470 has two steeling rods versus the M130's one rod.

I would like to add one note of warning to anyone new to the Chef's Choice line.If you have a collection of knives with heavy bolster heels, know that Chef's Choice models have problems with sharpening all the way to the base due to the heel not fitting into the sharpener.Most Japenese(Shun,Global,MAC, etc) knives aren't effected since the blade extends the full lenght of the knife.Many European(Wusthof,Henckels,Sabatier) knives have the heavy metal heel, and will over years of sharpening develop a gap as the metal from the blade is ground down and the bolster remains.meaning the base of the knife will no longer be flush with your cutting board from the heel extending below it.

When I bought my Henckels (not the el cheapo Henckels International, mind you) knives I was looking for a sharpening steel but ended up with the pull-through gadget they call a "sharpener". Someone's already pointed out the difference, that the device is a "honer" that merely sets the blade straight. It returns usability but doesn't actually SHARPEN, i.e, shave off metal and recreate the edge. After reality set in that I could keep running my knives in this honer until I was blue in the face and never increase the sharpness but merely prolong it, I decided to look for a way to really sharpen a knife.

Local and mail-order services didn't appeal to me because I didn't want the knives out of my hands or tested on stuff I wouldn't cut in my kitchen. So I went looking for sharpeners I could use in the home.

As I read opinions, the whetstone seems to be the best possible way. The electrical sharpeners are about the only alternative that actually re-create an edge, so I thought if the best of them doesn't satisfy me I'll have to go with a whetstone. And I bought this machine.

As one reviewer pointed out on a slightly different model, READ THE INSTRUCTIONS. If you think you'll simply get an edge by running the blades through the six grooves in order, you will be sorely disappointed.

The first and second pairs of grooves are for different knives and the third works with the first, maybe the second too. And that's not all.

You have to run the knife, test for a good burr on the new edge, and polish the edge straight to get your razor sharpness.

Don't forget to wash the knives, before and after the sharpening. You don't want food or moisture in the sharpener, or microscopic metal in your cut food.

Big question: is it razor sharp? Yes, but under some conditions. I tried this with five knives: Four Henckels five-star blades, and one some-other brand blade. On one Henckels santoku, I made do with a minimum burr and got a sharp blade, but it wasn't razor sharp. This will be done over. The other brand blade got a nice burr and everything, but never got razor sharp, though it was sharper than it had ever been. The three other Henckels knives, they are as close to razor sharp as anything.

What do I consider razor sharp? I ran an edge across a small part of my arm and it took off all the hair. THIS IS NOT SAFE I have shaved with a straight razor so I didn't cut myself. DON'T DO THIS, read on: I used the same blade to cut a slice off a vine ripened ripe tomato without using a chopping board, and established this test: The slice comes off with no skin left on the end of the slice where the knife finishes the cut. That is razor sharp. Vine-ripened, ripe tomatoes tend to have a skin that is almost like plastic wrap thin and very resilient to the sharpest blade.

None of my newly bought knives were able to pass the hand-held ripe tomato or hair-on-arm test when they were new. So the sharpness is better than the factory blade.

The second groove can put a microscopic serration on the edge for better cutting in some situations. Or sharpen a serrated edge. I haven't tried this yet, will update the review when I do. But I'm very happy with this product.

Criticism that won't take away a star: Reading the manual in this age of short-attention can be painful because the text is small and the lines too long. Paragraph breaks are scant. More pictures, narrower columns and some white space couldn't hurt, especially here where reading the manual is a requirement (not just an overload of warnings or obvious, unnecessary direction)

All this seems long and tedious the way I describe it, but once you've read the manual, you will have your knives sharp in minutes. So sharp you may be tempted to try to work on the factory edge of a newly bought knife. Just remember, it's important to start with a reasonably good quality knife whose metal can stand up to a fine edge.

I just finished sharpening the knives in my knife drawer with the M130. Some of the older knives took a while to get a burr in step one but once the burr showed up even my older dull knives were sharp again. My every day knives sharpened in less than a minute. My best knives sharpened in a few seconds.

The middle position is not motorized. It is a quality sharpening steel like you use by hand but this position keeps the knife near the optimal angle so the steel works optimally. You don't turn the motor on to use the middle position so you can walk over to the sharpener and put a quick hone on your knives without using any electricity. This is the big difference between this model and the Chef's Choice M120. For the extra $10, I prefer the sharpening steel over having a second grinding wheel. The third position is a "polishing" wheel which is similar in effect to the old barber shop razor strap which smoothed and polishing the knife edge.

I like the 20 degree grind used by the Position 1 wheel and see no need for an additional wheel used to change the grind angle in the Trizor system used in the M120.

I have a wide range of quality in my knives and this system seems to work well on all of them. I don't have serrated edge knifes since a well steeled knife works as well for me. I won't spend hours using an oil stone to sharpen knives any more. Also at 55 years old I don't see as well as I once did and can't hold a consistent angle using the stone. This system gives you a consistent sharpening angle.

I sharpened 10 knives in less than 15 minutes with some them being quite dull. I thought about giving the M130 4 stars based on cost but it saved me so much time, the cost was worth it.

UPDATE: I've been using the M130 for two years now. I use it daily (sharpening steel plus polishing wheel) on my best kitchen knives (Calphalon Katana Series) and they remain super sharp under constant use for about a month before I do a touch up with a single pass under the grinding wheel. I don't hand sharpen any of my knives now.

For an electric sharpener, this one is nice. I've used it on five knives now, and all of them are sharp enough to slice a tomato without any pressure from me (just run the knife across the surface under its own weight). So I'm happy. I know that on reviews of the previous models some people complained that the sharpener didn't get their knives razor sharp. This one doesn't either. But it gets them plenty sharp enough for cooking! And much sharper than the knife vendor here in town does...

The only serious negative is that I'm not very impressed with the manual. While it does give instructions on how to sharpen your knives, I didn't think it did a good job of explaining the different types of edges this sharpener can create.

This knife is perfect for the job, the curved blade makes it super easy to trim off large caps of fat and seperate muscles. The size might be a little intimidating at first but the knife is very light and even is good for semi precision work, I have used the knife for 3 hours straight before with little fatigue. For the price and performance I have and will continue to recomend to anybody any of the Mundial knives. I also own the 12inch slicer, 6inch curved boning knife, and 2 8inch chefs knives and love them all and love the price.

I have an old Farberware peeler and I expected the same quality, but this ceramic peeler is not good. It doesn't work both ways; you can only use it in one direction. Also, it is not sharp at all. It cuts little thin pieces at a time, so instead if five seconds it takes a minute to peel a carrot. They sell the paring knife without the peeler; I recommend buying that.

This set of ceramic knife and peeler is the perfect complement to the ceramic knives I already owned. Sharp and stylish, and the peeler was an unexpected delight (I knew the knife would be fabulous!). They do the job with half the effort of a regular knife or peeler!

I wondered why this knife was so cheap compared to other ceramic knives, but i bought it anyway. There is no issue with the build quality, i know how to use and take care of ceramic knives properly, so i have not damaged the blade yet. The problem is the cutting edge is just a sliver. You can seriously cut alot of stuff with such a small edge on the blade. Oh it's sharper than heck, but i want to be able to cut through a chicken strip in one slice, and this doesn't cut it, literally. Also Ceramic blades are supposed to prevent food from sticking to the blade, but i got lots of cheese stuck to this one.

I have wanted a ceramic knife for some time. I finally decided it was worth the splurge as I am cooking a huge meal for my relatives this weekend. This knife is really nice. It is extremely sharp and durable. I didn't stab anything terribly hard, but it performed the tasks I was doing very will. I plan to get a few different ceramic knives to replace my steel ones I have now.

let's be fair, it was a sharp knife to begin with. However, I bought it only 1 month, only cut some rolls, and fillet. Blade become like saw teeth. It's a very thin, poor quality knife. I don't think it should be called a sushi knife.

The reversible Polly-Boo cutting board is a great tool in the kitchen. The bamboo side is excellent for cutting fruits and vegetables, the Polymer side is excellent at cutting meat, fish and poultry. It has a raised lip around the edges and the handle that keeps juices from running onto the counters, which our other boards don't and the 15" by 12" size is great for whole chickens, roasts and larger cuts of meat. The handle makes it easy to pick up off the counter with one hand and take out to the BBQ. This is a very good tool that will replace almost all of our current cutting boards. It washes up quickly and easily and that's an A+ coming from one who thinks everything should go in the dishwasher! Oh and my husband LOVES the handle!
