CulinHome Melrose Collection 7-Inch Santoku Knife

CulinHome Melrose Collection 7-Inch Santoku KnifeThe rear half of the cutting edge of this knife was slightly concave, which is to say that if you're chopping anything using the half of the cutting edge closest to the handle, your food won't be completely cut through, since that edge of the cutting edge never will touch your (flat, presumably) cutting board. About an hour of work with a stone was necessary for me to grind the cutting edge into a better shape.

Once that was done, this knife was much better. The spine of the knife is thicker than I would prefer. Cutting hard veggies like thick carrots or nice fresh potatoes is harder than necessary due to the thick spine.

It holds an edge well enough for a casual knife, and is well finished. The stainless steel handle looks nice, and is comfortable to hold. The heel of the blade is a good thick bit of metal, which should protect your finger if you let it slip under that corner of the blade while chopping food. But really, the heel is the part which needed the most grinding to get the edge into a usable shape.

It is a clever buy only if you can sharpen it (please use only japanese whet stone). It has a good greep and the stainless steel is of high quality. It should have been sharpend better at the factory.

Extremely awesome knife. The blade is sharp, feels awesome in my hand. The only thing I didnt like is that it is hollow. I would have liked to see a solid or just filled in knife. But thats complaint is minute compared to the value of the awesome product.

Chef'n Leaf Shear Salad Shears, Arugula

Chef'n Leaf Shear Salad Shears, ArugulaI was intrigued by this new kitchen gadget when I first saw it in the beautiful Su La Table catalog. But when my husband monopolized the chopping board one day, I decided to order this because I knew I could slice the veggie with this WITHOUT the chopping board. It cuts leafy vegetable very well and for the stalky part of the lettuce you have to push it to the pivot point of the shears.

Free from sharp knives and chopping board and WON'T RUST. We've used this for about a month and are quite pleased with this spiffy little tool.

Great concept, but poor results. These may be good for snipping herbs or very small items (and can't you do that with your kitchen shears anyway?), but is more trouble than they are worth for lettuce. They are difficult to handle and makes the process of cutting the lettuce VERY SLOW. I like using the plastice "brownie" or lettuce knife and just chop it up that way. Much faster and more effective.

I really like this product. Shipped on time. Works like a charm. Only complaint would be that I wish they were longer.

Really was hoping I would like the salad shears but to me they were worthless! My good ol' kitchen scissors, though not nearly as pretty, did a better job of cutting/shearing the various kinds of lettuce! As for the iceberg lettuce staying greener and not browning up like it always does, I couldn't see that by using the salad shears that mine faired anymore than it usually did -still brown and yucky after a week or so. I sold my shears or did I pitch them -don't know, can't remember but at least they're not taking up space in the drawer anymore.

Messermeister Park Plaza Spear Point Paring Knife

Messermeister Park Plaza 4-1/2-Inch Spear Point Paring KnifeThe blade's a little flexible although it seems thick enough to be stiff. That's really the only negative.

The handle's a typical german paring knife handle. No bolster means it'll sharpen better. It was pretty sharp right out of the box.

Laguiole Steak Knives-Multi color handles- Made in France

Laguiole Steak Knives-Multi color handles- Made in FranceGave two sets of these as a gift to my daughter...they're very fun and work like a dream. However, I just saw them in TJMaxx for a fraction of the price I paid here. Oh well....

I absolutely adore these knives! Prior to buying this set I'd received another Languiole knife set as a present so I was well aware of their quality and design. To me these knives represent the perfect marriage of function and style. The blade is perfectly sharp and cuts through various cuts of steak and other meats with ease. The handle is also easy and comfortable to hold while also being beautiful. The colors are even more vibrant in real life than they appear in the picture and add a nice pop of color to the dinner table. I also love the little detail of the bee on the handle because it makes the knives seem even more special. I've really enjoyed having these to myself but could also see them being a fantastic gift for a foodie or a fun ad to wedding registry. They're perfect for when I want to pull out my nicer silverware and plates for a sit down dinner, but when I don't want things to seem too stuffy.

Overall poor quality. Blades were scratched and not properly polished. I'd suggest to also consider the thickness of the blade when you decide to buy Laguiole knives.

J.A. Henckels International Forged Synergy 13-Piece Knife Set

J.A. Henckels International Forged Synergy 13-Piece Knife SetMy wife and I have been using this 13-piece set of Forged Synergy knives for about 8 months, and we couldn't be happier with them. They are well made, well-balanced, have beautiful handles, a nice finish, and hold a very sharp edge--we've sliced tomatoes with all of them. If you're buying your first set of fine knives, these WILL hold up to the Henckels reputation for quality.

Now regarding what some others have said, I'll just add my two cents. There is a "Forged Synergy" and a "Fine Edge Synergy" series, and the main kitchen knives in those sets are NOT the same (though the steak knives appear to be so). The forged series has a metal tine that runs all the way through the handle with the black grips riveted on. The J.A. Henckels International Fine Edge Synergy 13-Piece Block Set is totally different--see the Amazon photos and descriptions for yourself. Yes, this Forged Synergy set is also made in China (not Spain or Germany like some of the more expensive Henckels sets), but the quality is still excellent and should far surpass most users' expectations.

Regarding rust spots, we've had none. However, there are two main types of stainless steel: one is harder and slightly less stain resistant; the other is more stain resistant but slightly softer. That means that you give up a little stain resistance to have a knife that holds a sharper edge longer. I think that's much more important than having to clean an occasional rust spot off if it were to occur.

There are only two minor faults I find with this set (that didn't stop me from buying it, however). The kitchen shears are excellent quality and cut great, but the two parts should be easily separable for cleaning purposes. You'll see this in newer shear designs, and it's not a feature that would add to the cost. Also, the black finished knife block will eventually show wear and tear from missing when inserting knives into the slots. I'd have prefered a standard maple block. Lastly, for a few dollars more, I'd recommend the 16-piece version of this set which includes three more knives for about the price of one more (J.A. Henckels International Forged Synergy 16-Piece Knife Set).

I've worked in professional kitchens in my youth, so I know good knives and what to expect from them. My wife and I received these as a wedding present after registering for them, and though we've only had them 6 months so far they have been awesome. The knives do fit in the block just fine, contrary to what I read in another review. They have not rusted, also contrary to what I've read. The have a great balance on the blade, they handle extremely well, and they hold their edge for a long time before needing sharpening. The only complaint I would have about the set is that it didn't include every knife I could ever need, but the block does have extra slots in it and that's why I'm looking at Amazon.com today to add some more knives to the set. I would suggest picking up a bread knife at the same time you get the set, it only has a short serrated utility knife in it. Otherwise, I would highly recommend this set.

Knife, Serrated Bread & Bagel 8"

Knife, Serrated Bread & Bagel 8'This knife is amazing. I just got mine (gift) and it sliced through a thick loaf of oat bread, cutting in a very straight line with no effort. The knife seemed to slide effortlessly through the bread. The blade is slightly curved (like a samurai sword) and the cutting edge has an unusual serration. Maybe this is the secret.

I have to admit I am astounded at the one-star review. I don't know what kind of bread the other user was trying to cut, but I can't imagine that we are even talking about the same product. I cut all the bread I buy (I like thick slices and I also buy a lot of mini-baguettes and bagles) and have been looking for a long time for a knife. Even the expensive knives out there are failures (where did they get the idea that a bread knife should have a broad blade...which of course sticks and seized up in the bread!) and I have yet to find one half this good. This thing is great. I'm going to buy another one for a backup--I think it might work well on tomatoes, etc.

I am very disappointed this knife won't even cut through a fresh load of bread. I guess I got what I paid for.

Kapoosh 650 Knife Holder, Woodgrain Finish

Kapoosh 650 Knife Holder, Woodgrain FinishI bought this block 2 months ago. The block consists of a column of tightly packed thin plastic rods. When you slide in a knife, they get displaced and snugly hold on to the knife. There are no slots like traditional knife blocks, which allows you to slide in many many more knives, and in any arrangement you choose. I currently have 13 items in the block, including a big Chinese cleaver, honing steel, 5 large knives (ie, chef's) and 6 small knives (ie, pairing)...and there is still room for more! I was skeptical at first, but now I am a believer.

The plastic rods are approximately 8" long, so longer knives will stick out a little. But they still get held in place by the rods.

Pros: Fits more knives than a all-wood block. You choose the knife configuration. Cheaper than most all-wood blocks. Washable. Plastic should not dull knives.

Cons: Angle is a little too upright, so I need to slide the block out from under my cabinet (or tilt it) to get at some of the knives in the back.

i purchased this block to take care of one specific problem: i couldn't fit my meat and vegetable cleavers in my regular knife block. i saw this product recommended in cooks illustrated, and they said the only flaw was the block didn't fully hold knives over 8". my cleavers are 6" and 7 3/4", so i thought i had solved my problem.

well, not really. it holds the 6" cleaver if you give it a solid shove to get it down in the rods, and the 7 3/4" cleaver sticks out above the rods by a solid inch. i assume this has to do with the front edge of the cleaver displacing too many rods compared to a standard pointed knife. so when it comes right down to it, this block can't simply house two standard cleavers not quite 'universal'.

the pros? well, i found out i could shove other useful things in it. my meat thermometer fits perfectly, and i can actually stick my metal measuring spoons in the block, handle first. this is great because i don't have to dig through a draw to find these frequently used items. so i'm happy about this.

i like the product, just beware if you have cleavers or very long knives, it's not happening.

This knife block is a good idea. I hate trying to get my knives into a standard slotted block. I can insert knives, scissors, etc. into this block with plastic rods. Have had no problem with the rods getting cut. The only bad thing about it that I have found is that the heavier knives tend to migrate position to the bottom edge of the block if you do not have a full load of utensils in it.

Read Best Reviews of Kapoosh 650 Knife Holder, Woodgrain Finish Here

This product represents a very good idea that was perhaps not as well executed as it could have been. If you like to mix and match knives, or if you simply have more than two big ones most of the pre-cut blocks out there allot for, then you'll certainly appreciate the convenience of having no pre-cut slots. Shove anything you want anywhere you want, and it sticks. But there are a few drawbacks:

1. It's not deep enough to handle anything longer than 8".

2. The little plastic rods aren't rigid or dense enough to support heavier pieces well. If you put them along the top, they'll sink down until they hit something else. You can get around this by putting them along the bottom, so it's not the end of the world, but still...

3. Moisture isn't going anywhere in here. Stick a bunch of little plastic rods together and they'll create tiny capillaries between themselves which will hold water next to your blades for days on end. If you have any high end cutlery that's prone to rusting, you'd better make sure those things are wiped bone dry before you stick them in here, because they will not air out the way they would in a wooden slot.

Still, it's cheaper than one of those magnetic strips, and there's no holes to drill, so I'm keeping mine.

Want Kapoosh 650 Knife Holder, Woodgrain Finish Discount?

Loved this item when I first bought it. Perfect solution. However, after a year, the knives were difficult to impossible to push down all the way. What happens is this: after months of use, the rods get bent and once they are bent, they are ineffective. The more you use this product, the more rods you bend; the more rods you bend, the less useful this product becomes. I am writing this review because I am online looking for a "traditional" knife block now.

Ginsu Essentials Series Japanese 420J2 Stainless Steel 4.5-Inch Utility Knife 5103

Ginsu Essentials Series Japanese 420J2 Stainless Steel 4.5-Inch Utility Knife 5103Great knife. Cuts evenly and has a very nice edge for vegetables and meats. I would order a set of these again and I will probably order another set for my sister.

I needed a basic workhorse of a utility knife to replace a similar Ginsu that vanished during my last move. I didn't realize that the serrations on the knife are kind of, well, huge. My previous Ginsu utility knife had super fine serrations such that I could peel/slice/chop delicate foods without slaughtering them in the process. This knife, with its giant teeth, has a bit less usefulness to me. This is more of a steak knife with a point than an all-purpose utility knife.

You're getting what you pay for. Don't spend eight bucks on a knife and expect something special. It's fine, not great. It'll do.

4-Pc Stainless Steel Steak Knife Set

4-Pc Stainless Steel Steak Knife SetThis set was all that I expected and more. They have a nice weight and the finish is a nice quality. The blades are sharp and blend with my tableware. Very satisfied.

I recently received this item from Amazon. The knives are relatively close in pattern to an Oneida stainless set we use and that was the main reason for getting this specific set. After the first use they began to rust. These are supposed to be stainless steel. Even with repeated attempts, the rust could not be removed. I wish I had saved the packaging and could have sent back to Amazon directly. So, I contacted Oneida and was quickly told these are "marketed by Robinson Home Products" and they had forwarded my issue to them. Over a week later and no response. So much for customer service and product quality. I am extremely disappointed.

Farberware 3-Piece Wood Cutting Board Set

Farberware 3-Piece Wood Cutting Board SetWhat happens when you take razor sharp, tempered, high-carbon steel knives to wood? Well duh, the knives cut into the woood. I'm so tired of hearing complaints about wooden cutting boards showing knife marks. I read one review where the writer complained that they would probably have to replace the board after a few years. This is natural. If you don't want to see cut marks or replace your cutting board ever, get a slab of marble. It's bad for your knives, but these people seem not to care about that.

This Farberware 3-piece cutting board set is great. For the price, it's fantastic. These are the only cutting boards your average home cook should need. They are reversable (though only one side has grooves) and offer three various, useful sizes. The large is about the size of two sheets of paper side by side; big enough yet still managable in the sink to wash. The medium is about the size of one sheet of paper. The small is about the size of your avarage hardcover book. All are about as thick as the handles of your knives.

They are hard wood providing a nice cutting surface. The wood is well oiled to help protect it from water damage. After a while, your bound to have many cut marks, but so what? Take a look at the price again. You buy cutting boards so they take the damage, not your knives (or your counter).

The boards I received were all smooth and straight (not warped). None have any signs of cracking and seem well made. They are easily worth two or three times the price amazon.com sells them for.

If this seems like a ridiculous deal for three hardwood cutting boards, well it is. Only problem is two of the boards have split since I bought the set six months ago. I don't know if the wood is not cured correctly or what, but I have certainly not abused these cutting boards, nor have I subjected them to extreme temps or soaked them in water.

If I had it to do over again, I would get one good cutting board that would last, as these will have to be replace as they continue to split.

[added 4/3/07]

Just wanted to update with a note that for $10 I bought a huge heavy-duty wooden cutting board at a certain Swedish superstore. Buy the mineral oil that comes with it and treat it once a yearhaven't had any issues with it.

Buy Farberware 3-Piece Wood Cutting Board Set Now

I think it must be clear from the cost (and other reviews) that these are not what one would call "quality" cutting boards. Some of the flaws right out of the box were:

1. The largest had splinters (actually shavings half attached to the surface which would create an irregular surface once I'd pull it off.) The smaller ones have some irregularities too.

2. Also, they're coated with some sort of a material so that they don't absorb oil when trying to oil them initially. Dunno if that's good or bad, though.

I was not under any illusions when I bought them, but I'm giving them four stars because they serve the purpose I had in mind for them. I actually use them under flexi-plastic cutting sheets. Why use both together? Well, the flexi sheets let me transport the cut food to the stove (or wherever) easily, are cheap enough to replace periodically, and are dishwasher safe. The wood cutting board provides a surface underneath the flexi-sheet that is not as hard as my counter, thus protecting my knives' edge. And as I don't use the wood surface directly, I don't have to expose it to moisture etc. Sometimes stuff does trickle down to it, but that's different from cutting ON it, and can be taken care of by wiping it off. Hopefully, this will prevent the board from splitting apart, and the way I use them, small cracks won't bother me too much.

As an aside, I find the smallest board too small to cut anything on, so I usually use it as a trivet.

I read through all the reviews for this item before purchasing it. Since the positives outweigh the negatives I went for it. I have only used the big wood board three times and each time I washed it and dried it before placing it on a drying rack. Yesterday, I went to use the board and saw that it had warped and there was a huge crack running though the middle. It has been less than 3 weeks since I purchased this item and it is going straight back to Amazon. Go for the poly boards, skip the wood

16" Knife Wall Magnet

16' Knife Wall MagnetThis product is great. It's very strong and holds my global knives very well. It's also very easy to install. Took me 5 minutes or less.

I bought this knife holder to hold my Global knives. It was easy to mount, looks great, and has a very strong magnet. I am sure there are cheaper alternatives if you don't need/want to coordinate with the knives.

Buy 16" Knife Wall Magnet Now

I've looked at a lot of knife blocks and magnetic strips over the last six months, including this one, which I played with at a local kitchen store. It's attractive as such things go, and it holds on to a chef's knife with a solid grip. I stuck a narrow bread knife on it and, as expected, it didn't hold on quite so tightly (less metal against the strip), sliding slightly. That's no big deal, since magnetic strip holders do much better with wider blades. It performs as well as or better than the other magnetic strips I've tried. But for that I want to pay an extra $60-$80? Absolutely not.

For half the price I'd add a star. It is much prettier than the magnetic strip I've got in my kitchen now, even if it isn't more functional. I'm sure it looks striking with Global knives (all those dots). But there are other nice-looking strips that cost a whole lot less.

I use my magnetic strip for spatulas and scissors. This one would work very well for those, but it seems a shame to spend so much for a stylish spatula holder. For my knives (Hattori very sharp, very beautiful, and expensive) I ended up buying a Magna Pro knife block (Messermeister sells them). It's a free-standing quarter-circle wedge of wood with magnets inside. It holds ten knives, and when I have to slide one against it, it slides against wood, not metal. If I'm careless or distracted as I put away a knife, it smacks into wood, not metal. It doesn't hold knives quite as tightly as the Global magnetic strip, but it still holds them firmly, it cleans easily, and it has the hygienic open-air storage advantages of a magnetic strip. It looks much nicer and can be had for just $25 more than the Global strip (I found it online for $129 full retail is more like $180, and still a better buy than the Global strip, in my opinion). It holds two more knives and you can move it around to be handy to your workspace.

The Global magnetic strip knife holder is an attractive and solid product. I just don't think that it's good enough for that $104 price, and those dimples don't add $60 worth of pretty. But pretty is in the eye of the beholder. If you really want your magnetic strip to coordinate with your Global knives and price is no object, then go for it. It will do the job very well indeed.

Henckels Santoku Knife 7 Inch - Berlin Series - Stainless SteelThis knife arrived just as decribed and works really good. I would highly recommend it to anyone looking for a great addition to their kitchen.

I bought this knife on a whim on sale at Marshalls. I am a professional cook at aa local pizza joint, and I had been looking for a knife good enough to stand up to the heavy prep duties, but cheap enough that I wouldn't care if it got messed up during the hustle of a Sunday night dinner rush. this is that knife! A few strokes on the honing steel at the beginning of the day and it's good for an 18 hour shift. I have seriously used it to shave in the morning when I'm too late to do it at home. Again just hone it up and it's good to go! The only complaint I have is the handle is a bit heavy, the balance point is a tad behind the blade. But it's a vast improvement over the horrible "bakers and chefs" line of knives my work provides. Even at full retail price this knife is worth it. It's no Mac or global, but if you're

Victorinox Forged 8-Piece Cutlery SetGlad I spent the money on these Forschner/Victorinox. We had an old-old set of Henkels (maybe 10 yrs old) and didn't realize how thin they were until comparing these . These feel very solid in the hand. We use them for every day cooking we're no gourmets.
