Global G-61 Hollow Ground 8" Chefs Knife

Global G-61 Hollow Ground 8' Chefs KnifeThis is a great knife for a cook who cares a lot about quality and blade design. It has the Japanese angle (which I believe is a 15 degree compared to German much more abrupt), so it is very very sharp. It's ready to use straight out of the box, but you might want to give it a rinse to get any packaging gunk off of it. It uses great steel, and I grew up using a lot of different hunting knives, so I care a lot about the quality and grade of steel that is used. This is a very light and well balanced knife as well. I highly recommend this knife if you want to break away from the heavier German knives.

As a Food Service professional I always need sharp knives in the kitchen with me. Whether it's cutting tomatoes or dicing raw sweet potatoes. It the best knife I've ever owned. My German knives can't top this and I've been using German steel for years.

I purchased this knife after a professional chef said it was the best knife he's ever used. I LOVE it!! They are perfectly balanced, light weight and beautiful to use. I also bought the boning knife and plan to add a few others in the near future. They are worth every cent of the purchase price.

Well balanced, slim profile. Remains to be seen how well the edge stands up to moderate / heavy usage. Had Global blades before that have not.

Imusa 8 Inch Chef Knife

Imusa 8 Inch Chef KnifeThere were 2 reviews for this knife before, one of them mine. Now they're gone. So here I go again.

This is a great bargain. I bought it with zero expectations. The intention was to use it purely as a camp knife, something that I wouldn't mind throwing away if it got too rusty or banged up on the trail.

I couldn't be happier. It was relatively sharp from the factory. Not quite tomato-shaving sharp, but sharp enough for most kitchen duties. The blade is rigid enough and the steel is fair. It holds up to sharpening well. After a little grinding, this knife is quite sharp!

The handle is very basic and pretty small. It's like a steak knife handle; perfect for little hands. There was no thought put into the ergonomics: 2 wood planks riveted to the tang. It's easily the least comfortable handle in my entire kitchen, but it's still acceptable.

Bottom Line: For camp duty, this is a home-run. For home use, it's just fair.

I got three of them. They are well made and the price is great. I use them all the time and only hand clean them. I don't soak them in water or soap. I just wipe them clean. They come sharp enough for me. So far they have easily cut through any job.

Kuhn Rikon Classic Serrated Utility Knives, Set of 2, Blue and Periwinkle

Kuhn Rikon Classic Serrated Utility Knives, Set of 2, Blue and PeriwinkleI already own two of their small paring knives and these are just as nice. One comment, however, Amazon's description "Kuhn Rikon Classic Serrated Utility Knives, Set of 2" led me to believe that both knives would be serrated. Only the smaller, Periwinkle one is serrated. However, the other knife, which is a chef's knife is also very nice and useful, so I'm not really complaining, just explaining that the description might lead you to believe they are both serrated.

Knifes are very sharp. Good value for kichen and general household uses. I would definitely recommend these knifes to others.

Best knives I have ever had to use in my kitchen. We love them. We bought exactly what we would use on a regular basis and total spent was not much more than $100 and a terrific value for that.

...whatever the color name -the colors and sizes are easily distinquished. The larger knife, on the left, in light blue, has a 5.75" blade, with a very fine serrated blade. The smaller knife, on the right, in turquoise, has a 4.75" blade, and has a noticeable serrated blade. Keep them in the blade covers and they should stay sharp for a long time, as running serrated knives through a knife sharpener is not recommended. These are great knives.

Victorinox Swiss Classic 3-Piece Paring Set

Victorinox Swiss Classic 3-Piece Paring SetThese knives are great. Nice and sharp, will last a long time. However, the description states that they have Fibrox handles but they actually do not. They have just a basic plastic handle. But this really shouldn't sway you from buying them. You're still getting three knives for the price of two.

These are great knives. They are sharp, they are attractive and seem sturdy. Time will tell, but they do seem to be here for the long haul. Maybe I should write another review in ten years to say if they did hold up. Nah, that would be ridiculous.

Master Grade Electric Knife Sharpener

Master Grade Electric Knife SharpenerThis sharpener is very smooth and easy to use. It does a great job of sharpening my high grade kitchen knives. It is not inexpensive but it is also not "cheap".

After several years of faithful service my Chef's Choice knife sharpener bit the dust. I was going to buy another when I came across this model. I had read in one of my cooking magazines that the Chinese Food chef Martin Yan had launched a line of knife sharpeners. I always enjoyed his cooking show on PBS and thought that if a man could chop through a chicken that quickly he's got to know how to sharpen a knife! Well, I'm pleased to report that this sharpener does just that and with just a few passes of the knife unlike my old one. If money wasn't so tight right now I'd be giving these away as gifts but in the meantime I get to keep my knives nice and sharp. Now where's that chicken?

My daughter, the chef to be, thought this sharpener was a bit too aggresive, so she prefered to use steel rod on the knives during the preperation of our holiday meals. I have usedthese to bring back edge on my well used hunting knives, Buck, case, Gamakatsu, and Russel skinners. It has been fast and effective but can get too aggressive if you are not careful.

I've just bought one of these here in Australia under the Nirey brand name which is used in Europe and AU. They also cost considerably more here but it has been money well spent.

I have bought a few different sharpeners over the years and have usually had to resort to buying new knives as none of them have sharpened my knives like this one.

I bought it fron a kitchenware store who run a cooking school and they demostrated this model on some of the school knives before I purchased it. WOW what a difference! It took a bit of practice to get the technique right but now my collection of cheep knives are super sharp, probably better than they have ever been. Now I will happily invest in quality knives knowing I have a reliable method of sharpening them that can be done quickly and consistantly.

I've give 5 stars as it does what it says on the box but i'm sure if I had the time and inclination sharpening using wetstones would probably get better results

Chef's Choice Commercial Model 2000 Diamond Hone Replacement Module

Chef's Choice Commercial Model 2000 Diamond Hone Replacement ModuleI use the module for professional knife sharpening. I use a second, cheaper machine for deburring, and then use the stropping wheels to finish. Doing this, I get some 500 knives per module sharpening mostly home damaged knives, meaning rather heavy sharpening. Knicks and broken tips are dealt with separately. A couple years ago there was a run of these modules with poor quality cubic boron nitride wheels, (not diamond, by the way)that only lasted about 200 knives. These seem to have worked their way out of inventory and the modules are now back to as before.

Jamie Oliver Carving Set

Jamie Oliver Carving SetCarving set is of acceptable quality, but not the same as a high quality German made set (as far as feel, balance, finish, and knife edge out of the box). Def a couple of grades up from most lower end Chineses made knives though. Knife feels hollow, which does not give it great balance. This set is more than acceptable for occasional use, but if your carving all the time I would recommend buying a better quality German made set......But these sets usually cost at least 3 times the price !!!. I seriously dought Jamie Oliver uses these knifes in real life, only for show on TV, there def not professional knifes. I would also buy a sharperner from Amazon at the same time (great prices), so you can get and keep your knife sharp.

I would have given the product 3 stars, but with Amazon's (current) fantastic pricing at just under $28 I give this product 4 stars. I would recommend purchase for someone wanting a carving set for occasional use like Thanksgiving, the odd dinner party every once and a while etc :-). Looks stylish.

Pro's: low cost through Amazon, stylish, has the "look" of a high end knife, def does the job for occasional use, reasonably good stainless steel used, packaged quite well and could make a very presentable gift.

Con's: Handle and bolster of knive not a great weight leading to average balance and handling, handle feels "cold" , Knife blade is wielded together to the handle next to bolster, (unlike higer end knives that are one piece forged steel which equals better strengh and durability), not for high use or commercial uses.

The set seems to be well made, good quality, and the knife is razor sharp as we had hoped it would be. For home use, can not really see why anyone would spend more money on a carving set unles they just want a particulr knife. They should last for many years. Glad we bought them.

I have to admit, my husband and I are both knife snobs!! We only ever purchase the top brands and pay top dollar.

I was buying a block knife set and a carving set for my son-in-law and didn't want to disappoint him, but wanted to be frugal about it, therefore I did a ton of leg work before buying. I fell in love with the ones by Jamie Oliver. They have the strength and sturdiness of a German brand knife yet the flexibility of the Japanese knives. It allows for the best of both worlds. I settled on these and had them shipped to my son-in-law. They arrived so quickly and they were loved by their new owner. The weight has a perfect balance in the hand and they are strong and sturdy but also flexible. My son-in-law was really happy with them and I got some brownie points!! I have since then seen them for myself and have to totally agree. The knives are wonderful and this carving set is great. I know when I am in the market for more knives, Jamie Oliver's is the way I will go. I highly recommend them.

OXO Good Grips Lettuce Knife

OXO Good Grips Lettuce KnifeCutting lettuce crushes cells adjacent to the cut, bruising them, so the edges turn brown. This can be minimized by slicing lettuce with a plastic serrated knife or by tearing it. This knife does not slow oxidation, it merely does less damage than a metal knife, so it takes longer for the edges to become obviously brown.

I use it mostly to cut foods that are too soft to cut cleanly with a metal knife: brownies, cakes, meat loaf. For these applications, it does an excellent job. Use a gently sawing motion. Brownies come out square like bricks, not smashed at the edges and cracked across the top. It cuts cake or pie cleanly without crushing it. And meat loaf slices come out neater that with a metal knife. All with fewer crumbs to clean up.

The knife is well made from clear plastic that is frosted, like a shower door. Its handle is comfortable and doesn't become slippery. Cutting edge is 7.25 inches long. Blade maximum height about 2.5 inches. Dishwasher safe, but very easy to wash by hand; made in China.

This knife does a fine job for what it is, but I wish that it was a couple inches longer so that it could slice through a head of iceberg lettuce in one stroke. It always leaves a couple inches uncut.

Buy OXO Good Grips Lettuce Knife Now

Ok I didn't buy this to cut lettuce. I bought it because the blade is safe for non-stick surfaces. I bake brownies in a non-stick pan and am forever getting frustrated trying to get them out without marring the surface of the pan.

That's the sole purpose for this knife for me. My non-stick cooking pans are metal utensil safe and I buy lettuce already cut up.

The balance on this is great and the handle is a terrific shape i have arthritis so handle shapes are an issue and this is easy to hold but Good Grips usually are.

Been thru the dishwasher several times and it looks new. I was worried about the plastic blade breaking but so far so good!

So, I bought this for our commercial kitchen since we now offer salads. I was very excited to get this in. I told everyone how our salads were going to last longer because of the plastic knife.

Well, that's all crap. I did a test where I cut up part of a lettuce head with a metal knife and this plastic knife. Guess what...the both turned brown at the same rate, 2-3 days. What a joke. Don't bother with this, it is all hype.

I bought this to use as a cake knife on my crystal cake stand. It works great and doesn't look too bad. We made it through the holidays just fine. Remember the metal scratch up your cake plates. They look nice and may match your lovely silverware pattern, but metal cake servers, etc.. are a hazard to good crystal.

KitchenAid 3.5-Cup Food Chopper

KitchenAid KFC3100OB Chef Series 3- Cup Food Chopper, Onyx BlackI have had a few full-size food processors in the past -both expensive and cheap models -and the main complaints I had with them were: bulkiness, noise, and cleanup time. Over time, I realized that I was doing fewer and fewer things with the processor, and then finally, it got put away for good.

But lately, I found that I was chopping the same ingredients, in almost the same amounts, again and again.

So, on a whim, really, I decided to give the Kitchenaid 3-cup chopper a try. I own a number of Kitchenaid large appliances, and have always been satisfied. This food chopper is no exception, as it exceeds my expectations for handling my chopping drudgery. Be it onions, garlic, emulsifying dressing, making bread crumbs, chopping nuts, whatever.

This unit takes a very small amount of counter space, has a great look, stores its cord in the base, and its bowl and cover are dishwasher-safe.

This appliance is a nice time-saver, and that, in my opinion, makes it a great item.

When I starting searching for a mini-chopper I was surprised by the huge rating difference between the Cuisinart DLC2 and the KitchenAid KFC3100, so I bought both and did a side-by-side comparison. The only explanation I can give for the ratings difference is that Cuisinart buyers must have higher expectations. For most operations they have nearly identical performance and for some operations the Cuisinart is the clear winner.

Onions: Many Cuisinart reviewers panned its performance here, claiming it made onion purée, but most KitchenAid reviewers praised its onion chopping ability. I found almost no difference between the two. Maybe its an issue with the instructions for chopped onions you must use a few short pulses. A few more pulses and you get minced onion more than this and both give you onion puree. I wouldn't say either is great at chopping onions, but both are equally mediocre.

I also tested chopping nuts, and making breadcrumbs with similar results. Both performed about the same for a course chop, although the Cuisinart produced a more even chop on the nuts, but its when you want a really fine chop that the Cuisinart starts to shine. The first reason for this is the grind feature found only on the Cuisinart. This spins the blade in the opposite direction which allows the flat, back-side of the blade to impact the food. More importantly, it redistributes the food, so if you've got a couple of chunks that refuse to be chopped, a short pulse in the opposite direction helps it drop into the blade. For perfect, fine breadcrumbs I alternate between the normal chop mode for a few seconds, and grind for one second.

The other reason the Cuisinart gives a better fine chop is that it does a much better job of cycling the food through the blade. This is a real key when you're working with softer foods like spreads, pâtés or purees. When I made a cream cheese spread in both choppers the Cuisinart did a far quicker and better job of pulling the ingredients down the center and into the blade. The KitchenAid kept larger chunks bobbing on top. If you're making dips, spreads or baby food, the Cuisinart is the hands-down winner.

On the practical side, both choppers were equally easy to clean. Both have small holes in the lid for pouring in liquids on the fly, but only The KitchenAid has a slot for dry or thick ingredients if that's important to you. Overall, I found the Cuisinart easier to use for several reasons. First, the Cuisinart blade drops on easily, while the KitchenAid blade is keyed and I found myself turning it several times before it dropped in. Second, the KitchenAid lid must be removed first before you can lift off the bowl, but on the Cuisinart, the bowl and lid can be detached as an assembly. Finally, the Cuisinart blade has a "handle" that extends to the top of the bowl like a popsicle stick allowing you to remove the blade without getting your fingers in the food.

After all my testing, I really can't understand the large ratings difference between these two. Neither is perfect you'll never get a perfect, even, course chop with things like onions or chocolate, but they do come in handy. For many uses either one will give you pretty much the same results. Because of its advantage with softer foods and its ease of use, I recommend the Cuisinart.

Buy KitchenAid 3.5-Cup Food Chopper Now

I love almost everything about this chopper. It's reasonably priced, a nice size, and it does a good job with the chopping (my first experiment, chicken salad, was a success). It's easy to clean, the cord stores in the base, there's a slot in the top to add ingredients while mixing, and the little paddle is handy for scraping out the food from the bowl (it's a tight fit for one of those regular size rubber kitchen paddles). Another good feature: the chop button won't function unless the lid is locked in place.

The one thing I don't love: the noise. I expected some noise with a chopper, of course, but this thing is so loud and *shrill* that it's almost embarrassing to use. It sounds sort of like a dentist's drill, times ten.

So, we have four stars for this product. It does its job, it just makes a lot of noise doing so.

I've never really liked food processors. They are bulky, confusing to assemble, and a pain to clean. I also enjoy the feeling of cutting up my own vegetables the old fashioned way with a knife and board. But after throwing a dinner party where I spent HOURS chopping vegetables, I decided enough is enough and picked up this little buddy.

It works best as a chopper for things like onions, shallots, garlic, or nuts. I've also used it to make fine ground bread crumbs that would have taken forever using a mortar and pestle. Given how small it is, I always leave it on the counter so I can use it whenever I want. The best thing is that clean up has never been a problem. No scrubbing, picking food out of a funky blade, or any other real chores. The blades are as sharp as knife though, so treat that with caution in the sink.

My only real complaint with this chopper is that it is slightly awkard to put together. I always want to take the container, put the blade in, put the food in, put the top on, and put that on the chopper base. Doesn't work that way (but then no chopper or food processor probably does), though I wish it did. Instead, the container goes on the base, then the blade goes in, then the food, and finally the top.

The only other caveat is that you need to quarter or roughly cube your food to be processed. If you don't, then it can often end up stuck above the blade. This limitation is not particular to Kitchenaid's product but choppers in general. The small basin doesn't allow you to drop in big food items like a food processor can handle. Still, it saves you plenty of time.

Want KitchenAid 3.5-Cup Food Chopper Discount?

I had the Cuisinart DLC Miniprep first, and was not happy with it. I wanted a small food processor primarily to chop up an onion and some garlic cloves, and with the Cuisinart, I pretty much ended up doing almost all of the chopping before I put the food in the processor, otherwise large sections wouldn't get cut.

After reading the reviews here about how the Kitchenaid has the reverse sprial action which pulls down the food, I thought I'd try that one, and it's true!! The Kitchenaid KFC3100 is a superior product! Now I can just cut the onion into quarters and throw in whole garlic cloves and it cuts them all up perfectly. If your not sure which of the two products to buy, get the Kitchenaid KFC3100!

After reading many glowing reviews, I decided to add three Victorinox knives to my kitchen. As advertised, they probably perform excellently. When I received them, however, I was turned off by the cheap look and feel of them. I kept the bread knife, but sent the other two knives back.

The knife cuts bread well, but I'd recommend a longer size for a more versatile blade. The seven inch blade is a little short for some wider bread loaves, but it's great for sandwiches. I think I might have liked the rosewood handles better for home use. In a commercial kitchen, the fibrox handles are ideal. I purchased two Chinese Kenda brand paring knives for 1.50 each, and the handles were EXACTLY the same as the "fibrox". (just an observation).

The Ex 5-Piece Knife Set with Unique White Holder Designed By Raffaele Iannello

The Ex 5-Piece Knife Set with Unique White Holder Designed By Raffaele IannelloI fell in love with this at first sight -it resonates with my rather odd sense of humor, I guess. I decided to take a chance on it -I needed a set of decent knives for my "home away from home," and after reading the reviews, I ordered.

It's very sturdy -heavy plastic, it arrives in two pieces, and it takes only seconds to mount the figure onto the base.

The knives are very good quality, nicely weighted stainless steel. The "block" has heavy clear plastic sleeves in back to protect both the knives and the user, and the knives are secured in place with hidden magnets that "grab" each knife as it is slipped in place -nice safety feature.

This is a fairly large unit -14+" tall, about 8-9" in diameter. I purchased the white one, to work with the rest of my counter-top appliances, but it comes in several other colors (red, green, black, chrome).

This would be a great housewarming gift for a divorced friend.

All I have to say is that this knife set is the S-word. Once I found out about it, I knew that I needed one in my life. I've recieved countless compliments and questions from guests who come to my house, and it serves as a great conversation piece. And the knives are great too! Stainless steel, and definately sharp enough to do the job. An awesome gift for anyone who's into this sort of thing, and kinda even likes cooking.

Russell 10 inch sashimi knife

Russell 10 inch sashimi knifeWOW!

I chose this Sashimi knife by Dexter Russell, Basics Series because of the price, but I got a lot more than I expected!

Culinarydepotinc.com sent the knife so fast I didn't even know I had it. When I opened the shipping package I was surprised to see a professional grade Sashimi knife. The look, feel, and weight were first class. This is a chiseled (single bevel blade knife) from Seki Japan. I'm sure this knife is used by many other distributor's under a different brand name, and sold at a much higher price.

The performance is of a professional commercial grade Sushi knife, but will require knowledge of how to sharpen a knife of this type. You will need a diamond, or ceramic steel/sharpener to maintain this knife at (9.5-12 degrees) at the very least. You should also know how to use a Tri-stone too. This is a first class product, and the seller was great!

I recieved my Dexte Russell Sashimi Knife and went straight to work with it. Its a little lighter than I normaly care for. Other than that, its a good little knife.
