Portion PadL and Rocker Knife ComboEvery Friday night is homemade pizza and a movie family night. The metal disk pizza cutters last a couple of months and go dull and it was a challenge to cut straight with the toppings being pushed around. We saw this and decided to give it a try. It works great. Center the pizza, push the cutter down in the center and rock it back and forth a couple of times in the grove and you have a nice straight cut.

It is not big enough for our largest pizza pan, but if your pizza fits on this board it works great!

Easy to use, easy to clean, the handle may be plastic but it is a very sturdy plastic and handles the dishwasher just fine. Just added this to my wish list since one of the kids has misplaced mine and I am feeling the loss almost daily in my kitchen!

Unbeatable little tool for making shredded green papaya salad. I use it to shred many different not-so-ripe fruits and veggies besides papaya. Better than the typical cheese grater for shredding because it doesn't bruise the fruit/veggie. I highly recommend this tool.

I love making Som Tum, but got tired of hacking a papaya with a chef's knife. Can't use a cheese grater b/c it makes the papaya too limp. This is the best and least expensive way to cut perfectly sliced papaya.

Wusthof Le Cordon Bleu 7-Inch Fine Edge Santoku KnifeThis 7-inch fine edge santoku knife is the most recent addition to my collection of W?sthof-Trident Classic knives. I've been using Asian knives for a long time, but this one has become my favorite because the wide blade makes fast work of scooping up chopped vegetables. you can make very thin slices of vegetables, too. I love using this knife for slicing celery, carrots, nappa cabbage, bok choy, and daikon radish for stir-fries. So far, it has stayed quite sharp without need for professional sharpening. I hand wash and dry it and store it in a wooden knife block.

Yeah, yeah, yeah...I've been way over hyped on this line of knives but you know how it is...marketing is everything.

If you are stuck on buying the name "Wusthof" then buy this in the "Grand Prix" line 'cause the grip on this "Classic" line of blades is the least comfortable of all the riveted scale handles available...too deep and narrow for a 12 hour day in a commercial kitchen or a big hand (grip test it against other brands before you choose, I might be wrong ;-). This Santoku weighs almost 3 oz. less than other brands... a trend that I've found throughout this line. I've tested this one at work and I need something heavier.

No complaints on the blade, edge, and finish though, it's top notch.

Stainless Steel Mandolin Slicer

Stainless Steel Mandolin SlicerI've had this exact model for about a decade. It's clunky and inconvenient. The sliding range for the first of two cutters is too narrow so the sliding part slips off the tracks and then binds up. It's easy enough to clean though. I mean it works, sure. But the pressure plate is small and round inside of a large rectangular crevice and comes down at too high of an angle to really hold a collection of radishes well. They slide around so I have to struggle with arranging them. The veggie holder area is quite small so you can't do long pieces beyond about 2.5 inches. I think this would useful to someone in a cafe who used it all the time so they got used to it, but for occasional use it's kind of a drag. I gave it 3 stars since it's certainly very high quality. The first of two blades is a bit chipped even though I haven't used it but a couple times a year. It's old world design though has me online as I write this, searching for other options to make zucchini and radish slivers. Maybe a rotary slicer? When I try to clean this it swings around in the sink and threatens to break my heirloom dishes since the support bracket is free swinging. It's like a violin I'm not good at playing and I can't quite tell if it's me or the violin. It doesn't finish the last 1/8" of a zucchini, so I get a snack that way. Slivers of zucchini and radish do make perfect low carb Atkins diet friendly salad bases though, so either I need to tweak this thing by bending the slots further closed that the moving part slides on or I need to get a more modern design. This beast is too clunky. I want to like it but I can't. This represents the perfection of an old world design. I think it makes more sense to look at either the $400 Shun Pro or something cheap that's perfected in plastic. I'm much more picky than most. If I say I kind of like something it means it's *fine*.

Edit: for making julienned zucchini and radish slivers my old Robot Coupe food processor grating blade disk works PERFECTLY. Instead of slicing long it cuts short 1" long very thin slivers so the zucchini peel gives a very nice visual effect on the ends instead of becoming inconsistent tough dark green noodles mixed in with the white pump noodles. Perfect for scoop-able salad. I don't need a working mandolin after all. I used to associate a grating blade disk with grated cheese, meaning little bits, but I'm getting perfect little toothpick like pieces that really bring out the flavor of the crunchy veggie without turning it into a pump whatsoever! It actually is so noodly that I get a pasta sensation from it, a very good thing for an Atkin diet lifestyle. So I would highly suggest that people look into food processors instead of $$$ mandolins.

I researched mandolines thoroughly online before ordering this model. The day after I ordered it, a dear friend gave me a Japanese plastic simple one that only slices thin. it does nothing else. It actually is easier to use, in part because the surface is uninterrupted. In addition the plastic one, being totally simple, has no little places for pieces of food to hide at clean up time. Nevertheless, the Bron does have more features, such as wavy cuts and lattice cuts. It also has infinitely graduated thicknesses and can make julienne cuts. However, the cuts are not always easy or elegant to make. Cucumbers, for example, usually get stuck on their skin. I am not willing to peel them because they are organic and most of the nutrients are in the skin. So my cuts are imperfect, and, while not ideal, it's ok.

This mandoline is a sturdy and well-made tool, excellent for making even and precise slices, shoestring potatoes (pommes allumettes), waffle-cut potatoes, ordinary French fries, and so on. I have had mine for about 15 years, and it works like new.

The main problem with it is that it's expensive. There are inexpensive plastic slicer/shredders available, such as Benriner (often sold in Japanese and Korean grocery stores), which work just as well. In fact, they're actually better for very fine slices and shredding. If you only want to make French fries, you're probably better off getting a French-fry cutter, which is faster, but it's hard to get blades fine enough for true shoestrings.

The Benriner plus a French-fry cutter together will cost about half as much as the mandoline, and work as well or better; of course, they are nowhere near as heavy-duty, but that won't matter for most home users.

The Bron mandoline has a couple of minor disadvantages. On older models, the feet would scratch countertops, but I believe this has been fixed now. Although most parts are stainless, the rivets and screws do rust a little; this has not been a problem.

The pusher does not work very well. On the other hand, this is a dangerous tool used without the pusher -it produces especially ugly cuts if you're julienning. My solution is to use a cut-resistant fillet glove (also good for the Benriner). This gives you far better control and thus less waste.

This is a great little huller. I find it works best to squeeze it like a tweezer, insert it, then twist it about 45-90 degrees and the hull comes right out. I would like the open end of the huller to be a little closer together so you don't have to squeeze it so hard but this may happen eventually with use. I have another one that I got 30 years ago and it still works. How can you beat this, especially for the price? There are much more complicated and expensive ones on the market but this one works just great.

This is a good size and shape to promote fine motor skills. The resistance is good for all but the smallest preschoolers. I have not used this as a strawberry huller, but to develop fine motor skills by picking up small objects. I would say at least half of all strawberry hullers are used for this purpose.

Global GS-10 - 5 1/2 inch, 14cm Cheese KnifeThe idea of a cheese knife with "holes" in the blade is to reduce the friction as one slices cheese, thus ensuring consistant slices, without the cheese crumbling or falling apart. This Global knife delivers admirabley to the task. Indeed, the design best fits hard cheeses, and Global have (imho) the best knife for this, period. Our old "stamped" knife bends and is awkward (dangerous) on hard cheeses.

For soft cheeses, this may not be the best knife, probably a knife such as one would use for pate would be best. But, it is the penultimate for soft cheeses, and the best all round cheese knife my wife and I have ever experienced. We never regret the purchase.

This beautiful Global knife comprises all distinctiveness of that great brand, including the price though ...

It is great for semi-hard and hard cheeses (although I would not strongly recommend it for Parmesan cheese, despite that it worked fine for me, since Wustohof parmesan cheese knife is appreciably more efficient for that purpose). Don't pay much attention on those that tell You advices such as that other [less expensive] imitations with similar shape would do the same job (I tried several of those prior I got Global). On the other hand, don't expect this knife to do a good job for soft cheeses.

Global knifes need a tad amount of attention and care, and in return beside superb design and balance (of course, which is an individual thing) are very thankful and durable. So if You are not cheese addict and prepared to give this knife care that it needs, then rather buy something else (cheaper that You can toast and replace after short time) but of course, You won't know what You are missing ...

This knife is great for hard cheeses, I can cut them without the slices crumbling to pieces. It feels very comfortable and sturdy in my hand like my other Global knife. The blade has a serrated edge so you will not be able to sharpen it easily, but if you only use it for cheese, it should stay sharp for a long time. This is another beautiful Global knife.

This is a great knife for hard and soft cheeses. It has a good grip and comfortable design. My wife was skeptic about it but when she used it she immediately told me to order an additional one as a gift for her parents because they are cheese lovers too. Some people complain that the knife will make a second cut after the middle holes pass through but this will not happen if you make a straight cut. Strong knife, it doesn't bend easily, I have even cut through old Parmigianos, still you have to apply some force but it will feel very secure.

This is my second purchase of this knife. I got one for myself in the summer and just bought another for my parents for Christmas. I have tried to find a flaw with this knife, but there is none. It cuts hard cheese like asiago and soft like brie or fontina. I use four knife in my kitchen. My chef's, vegetable, cheese and paring knife (ALL GLOBAL). I am definately not a cheese connoisseur but I will say this will be the last cheese knife I might ever need to buy.

This knife is really low quality they sell for about $5 in Japan and that really shows in the workmanship.

It's blade is very dull out of the box and too light for any practical use. The best part about this knife may well be it's real-wood handle!

Wusthof Dreizack - Sharpening Steel - 4470/32Make no mistake, size does matter in a honing steel. After reading how another style Wusthof steel can pop out of the handle, I opted for this older model. While the steel is not solid through the handle, the base screws on, so there is no danger of the handle "popping off". The fluted "behive" handle gives a great grip. While this steel is a bit top-heavy due to the hollow handle, it is definitely worth the $100 savings over the rod-through-the-handle models. 12 inches means I can hone my largest chef knives with ease, and the exceptional hardness of the Wusthof steel ensures a razor edge with just a couple of strokes (providing, of course, that your knife already has a good sharp edge). Use this steel before every knife use and you will greatly extend the time between sharpenings. This is an excellent value buy one today and your knives will love you long time.

I purchased this to replace a worn smooth steel that came with my Wusthof Classic knife set. This fine grade hone works beautifully to straighten all my knife edges. I learned to always use this just before the use of my knives instead of after. I can tell that my knife edges have a tendency to return to a slightly non-aligned state after sitting for a period of time and feel less sharp. Holding the steel vertically I use the lightest amount of pressure at a 20 degree angle about 4 passes on each side to return knife edges to razor sharpness. This steel is a larger diameter and finer roughness than most. I purchased the 12" version because I have the 10" and 12" chefs knives along with several 10" slicers and carvers and It easily fits into the Wusthof 35 slot knife blocks. If you have the room, the 14" version would be even better if you have knives longer than 10".

I decided that I really needed several more place settings since my family has grown. I ordered these and although they look very nice, they are now made in China, and the quality is not the same. The weight is a little lighter and the detail is not as before. Still very nice but not as when they were made in France.

If I had nothing to compare them to, these would be fine and a much better quality than some sets out there.

Terribly expensive, and the soup spoon is gigantic! I have ordered round silver gumbo spoons because these are so awkward. I agree that since the product has been made in China that everything has gone down except the price. It's last and major drawback is that it scratches very easily. If you store your stainless in a caddy in a drawer it will look terrible in no time. I have thought about going back to my very heavy Wallace Wickham made in the 1980's. It still looks better after two decades of use.

They scratch lightly after use, but they don't get scarred like acrylic or other plastics. We use all three sizes regularly and they are worth the money.

I purchased my first Epicurian cutting board from a department store, and desired to have a few more because they were so good! Usually, I shy away from composite boards and tend to go more to the classic, heavy hardwood boards. Those hardwood boards have a fundamental flaw, in that the grain of the wood is apparent and can harbor bacteria. Not so with Epicurian. You get the best of all worlds, really. A board that helps preserve the edge of the blade, an extremely hard surface resistant to bacteria, a fast cutting surface, it is all in a relatively thin board that can be stored almost anywhere, and it is made from recycled materia. They also do come in a variety of colors.

My only wish is that boards of this type should be bundled with some non-slip material to place under the board. But that aside, these are awesome cutting boards!

These are great. They wash well and are dishwasher safe. Multiple sizes are very useful. You can use one for raw, the other for cooked. Or get kitchen help and not have to fight over the one cutting board! I couldn't be happier with them so far. I was worried about knife scars, but see none.

These boards are just great thin, lightweight, tough, dishwasher-safe, and easy on your knife edges. I had been using Sanituff boards, which are made of rubber, grippy and also easy on knife edges. But they are insanely heavy and warp in the dishwasher. I bought an Epicurean pizza peel (also great) and was excited to try their cutting boards after seeing what the material was like. It can take on tasks that my other knives would stuggle with. It's relatively expensive but worth the money in my opinion. Great addition.

We know that stainless steel is a variable commodity. Some grades are very high quality. Others are not so high quality. That's obvious to most. The information that is provided with these knives and tools never tells us what grade Stainless is used. I'm looking for hardened cutting edges and at least 316L Stainless Steel.

You do get what you pay for. This stuff will do the job ..... for a while. The only way that any blade stays sharp is if it is sharpened. The saw blades that are often seen on these blades are not sharp, they are saw edged. That's not cookware or cutlery grade.

Still, it's a great deal if that's all you want out of a set of blades. The ideal is great quality workmanship, material and many years of use (think 20 30 years).
