Bought this to add to my existing. Couldn't find a label the existing and thought this was the closest I had seen to shape of spoons, forks and knives. It is heavy flatware, which I really like. So much of today's flatware is really thin and seems cheap. This is heavy and sturdy flatware that also doesn't stain in the dishwasher. The only thing not positive is the handles except for the knives are too skinny. Feels awkward.

The set is just okay...not the best quality. My attention was first drawn to the fact that it is displayed in a great looking keepsake box. But, when it was shipped I quickly learned when I took it out of the box....there was NO display box at all! It was just in really cheap cardboard...that is not even in the shape of a box!!! Not impressed...I would have bought a different server set had I known that it DID NOT come with the box.

These are the best little butter knives I could find on the internet or at any retail store and the price was fantastic. They are not quite as decorative as I had originally hoped to find, but they look nice and have a good weight to them. At first I was just looking for a few decorative knives to put out with the butter dishes at our large family holiday meals. Then I found these cute little knives, and marked down to boot! I bought 4 packages (4 per package) and now I'll just put one out with each place setting.

When I opened them and took them out of the package two of the spreaders were pulled right apart. 2 of 4 spreaders were broken when sent to me. I would not recommend this product and would have returned it if I didn't have to pay for shipping.

These spreaders are not knives for cutting with and are not supposed to be large. As spreaders, they are the correct size. They are stylish and are made from good quality materials. I especially like the seamless, one-piece construction (no separately attached handles with the potential to eventually loosen and/or fall off as I've experienced). These spreaders wash and polish well, looking especially nice placed next to my large glass covered cheese tray. These spreaders are nice enough to use for any occasion. I shopped around before buying and would purchase these again.

I am dating a chef at a fine dining seafood and steak restaurant and he had mentioned that he needed a fillet knife so I got on line and with the help of these great reviews I chose this one. He was very surprised and happy when it shipped to the restaurant. He said that I could not have done any better, that guys he has worked with would try and carve their knifes to look like this one. It is a very sexy knife and gets right under the skin. I am a knife junkie and love buying these when they are on sale. Most from Amazon don't come with any protection once I take them out of the box so these covers are perfect. They are nice and strong so I know the blades will be protected well. This is a nice large package with a variety of sizes. I do have a block on the counter that is full of knives and the ones that cannot fit in, these sleeves work great on. Now I just need to stay away from the knives on warehouse deals.

I recently order the 65 piece Waterford Monte Clare flatware set with chest and have been very satisfied with flatware portion of my purchase. The chest is another story. The chest I received was not like the one pictured in the description. The pictured chest shows the Waterford symbol on the inside lid but the chest I received had no inscription. It makes me think that the chest isn't apart of the Waterford line at all but rather a standard old chest. Now, mind you, there's nothing physically wrong with the chest. I just would have perferred the chest to have the Waterford symbol in it. I paid more for the "Waterford Set" thinking that the chest was Waterford as well. If I had known it wasn't, I could have saved myself about $50 and gone with just the Waterford flatware set from the Bowl Company for around $170.

Heavy Duty Meat CleaverI've purchased a Henkel's cleaver several years ago and though it is a good cleaver I never thought I would get one under $30.00 that would surpass a brand named cleaver! This Heavy Duty cleaver cuts through bone as easy as it cuts through meat and vegetables! Living in Hawaii we Huli Huli Pig a lot for parties and special events and this cleaver can chop up a whole pig in no time! My brother is an Executive Chef for a renown restaurant in Hawaii and he was impressed with the weight and cutting edge of this cleaver. I would recommend this cleaver to anyone who cooks for a living or for the home gourmet enthusiast.

This is a massive kitchen cleaver, but it handles well enough for more delicate chores than just chopping up chickens or rib bones. The blade is razor sharp and slices veggies well. Mincing a few pounds of meat takes less time than it does to clean my meat grinder!

This is a fantastic, heavy cleaver: chops off heads, feet, and body parts quickly and efficiently. However it quickly becomes obvious that the money saved was in the quality of the metal. It will very quickly rust and discolor from blood and other liquids. No big deal. Just scrub it off, wash it, dry it, and its ready for use again. This is its only weakness I've noticed in the short time I've had one.

Great cleaver. Takes a razor edge but doesn't hold it as well as a higher end German knife (much less a Shun, japanese). This thing will replace your 8-10" chef knife if you let it. If you can handle the weight this puppy does it for you. You can chop, slice, mince, cleave, scoop, turn, beat and even use it as a spatula. As a line chef this was my go to during busy rushes, allowing me to perform a myriad of tasks with just one tool. Keep your steel handy though, the cleaver takes a great edge but is soft and needs frequent, light steeling on a fine steel to avoid having to hone it after heavy use....

Wusthof Gourmet 23-Piece Block Knife Set

Wusthof Gourmet 23-Piece Block Knife SetBought these as a step up from the crappy Pinzon knives we bought from Amazon years ago. They were shipped from Macy's and Yay! they shipped to APO addresses. Let me tell you, when these things arrive they are SHARP! However, these aren't Wusthof's top of the line by any means. Some of the steak knives were full tang, some only partial. Most of the blades are pretty thin, with the exception of the larger blades (santoku, cook knife, cleaver, etc.). And the included block clearly wasn't intended for this set. It's short two slots, so I had to double up on some of the knives, while the slots for the smaller knives are too big, leaving way to much wiggle room. But using these knives is a dream. They glide through produce and veggies with nary an effort. I've been using them for over 4 months now, and they still seem as sharp as the day I got em. Been using the steel only when I felt I needed to, and have used the provided Wusthof pull-through "sharpener" as sparingly as possible. Would I buy this set again? For the price I paid (on sale) yes. But I do think I'll spend the extra money and get Trident Classics or their Grand Prix2.

I NEVER put it in the dishwasher even though it states it is dishwasher safe. It was only hand washed. Now I have a flat, clear cutting board that is difficult to pick up b/c it lays flat on the counter top without the legs.

I have purchased a number of Joseph Joseph Worktop savers. They first came to my attention in the MOMA catalog. I loved the strong vibrant designs but not the designer price. I began searching the internet for alternate (translate cheaper) sources & other designs. I have purchased the Orange slice, Kiwi, Hot Lips, Marilyn & Elvis to name a few & have given many as gifts. They are tough, functional & very eyecatching. I have never had any problems with any of the other designs. The Watermelon however did not live up to its promise of being dishwasher safe. My mother had admired my Orange slice & Kiwi savers but because her kitchen is accessorized in red I chose the Watermelon as the best color for her. The first time she ran it through the dishwasher she noticed a blurring around the edges that she attributed to dampness. The second time the design was really & truly damaged. Apparently moisture seeping or forced between the design & the tempered glass left puddles & ripples & strange white watermarks across the face. Since I purchased it as a gift there was a significant lag between purchase time & the gifting occasion & then by the time the two trips through the dishwasher were accomplished months had elapsed. That's a little too long to return for a refund and since Joseph Joseph is in Britain I guess I am stuck with an expensive Watermelon Rind.

If you really love the design go for it. But handwash only!

Great as a worktop saver for putting hot things on (I use this round one for my crockpot) but don't soak it in the sink to clean it, or the backing (which isn't painted on -it's a sheet of plastic) will separate from the glass and peel off. Don't cut on it, because it will dull your knives. Don't drop it, or it will break.

Chef's Choice Commercial Model 2000 Diamond Hone Knife SharpenerI have finally ordered a replacement sharpening cartridge for my Chef's Choice 2000 model, after nearly ten years of good service. I have used this in a commercial kitchen, before my retirement, and for keeping my home knives sharpened. Amazon was not even on the horizon when I purchased my unit, and I do not remember where I bought it, but the sharpener has served me well over the years. This unit may not have the flexible strop of the newer unit, and may not produce the true razor sharp edge of it's younger brother, but this is a great unit. Finally wore out the sharpeners enough that they are not producing the edge they used to, but they have lasted over ten years. I figure this unit has saved me several thousand dollars, plus quite a few knives, and of course time lost driving back and forth to somebody to sharpen my knives, and generally get them back a week later.

Great investment! Probably give this to the grand kids when I can no longer cook!

Zhen Japanese Damascus VG-10 Large Slicer Chopping Chef butcher Knife 8"

Zhen Japanese Damascus VG-10 Large Slicer Chopping Chef butcher Knife 8'Background (1): I'm not Asian, but I've been using Chinese cleavers for over 30 years. I used to own a restaurant, and when I first started cooking I gravitated toward Chinese cleavers (somewhat unusual for a white guy); they just seemed to me to have a very practical, common-sense design when you pick one up and use it. (The wide blade makes it much easier to guide the blade on the knuckles of your food-holding hand so that you can't cut yourself; and it also allows you to scoop up what you've chopped so you can easily move the food wherever you want it to go.)

Background (2): I used a Dexter/Russell Chinese cleaver for many years. After that I bought a Chinese cleaver made in Japan by Mac, for Martin Yan (same approximate dimensions of the Dexter), which I really loved; but I broke the blade cutting frozen chicken and couldn't find another since they stopped making it. Since then I've purchased maybe 10 Chinese cleavers -Martin Yan; Joyce Chen; Messermeister; Forschner; a heavy-duty Chinese cheapie ($6) for whacking through bones; and a few others. But I've never purchased a super-expensive one (e.g., one of the Japanese ones sold at JCK, some of which sell for close to $400). The most expensive Chinese cleaver I own is the Kershaw Shun DM0712, which now sells for $200, more or less. The Shun is very finely crafted, but it's small, heavy for its size, and, because of the weight of the blade, not particularly well-balanced.

Now, as for the Zhen Damascus -My initial impression is: (1) It's very very sharp; (2) It's extremely and surprisingly light for its size -light to the point that I'm a bit worried that it might be fragile. (Only time will tell.) The blade is thin at the spine (less than 2 mm.), and narrows severely to the edge -almost like a straight razor. However, there is no taper on the spine, from the heel to the point. (3) The craftsmanship is good to very good, but not obsessive/perfectionist, like top-level Japanese craftsmanship is; (4) It's well-balanced and well-designed (assuming, again, that it holds up); (5) The handle is very comfortable -but this may be a matter of personal preference; (6) Over all, it's pretty much what you should expect it to be, given its description and price.

$130 for a knife is not cheap; but it's less than half the price of top-tier Japanese knives of similar design. And the Zhen is clearly a knock-off of the Kershaw Shun -similar metal in the blade; similar handle design. But the dimensions (of the Large, which is what I bought) are very different from the Shun; and the workmanship is not quite as good. The blade out of the box, while literally razor sharp, had tiny burrs on the side of the edge. I could feel them with my fingernail. They were easily removed with a honing steel or fine stone, but it's the kind of thing that a high-end Japanese craftsperson would never have let go. Similarly, you can feel just a bit where the rear bolster attaches to the handle -it's not perfectly smooth. And where the bolster is welded to the blade, it's not as uniform and nicely done as the Shun. I attribute these slight imperfections to the fact that this is a $130 knife, not a $330 knife. If I had paid $330, and the knife was made in Japan, I'd be seriously disappointed, even though none of these things affect the knife's functionality.

That's about as much as I can say after just a day's use. I personally like this particular handle design -I find it very comfortable (similar to the Shun, but without the bulge toward the palm). So far the knife has been easy to use, though I'm still adjusting to its dimensions. (It's about 8" x 4"; the other cleavers I own are about 3" wide; but many of the top-end and commercial Chinese cleavers are 4" wide, or wider.) My primary concern is that the blade will prove to be fragile. (While I don't plan to whack bones with it, I do expect it to hold up when used as intended. And I'm trusting Zhen that the knife is really made from first-class Japanese steel. I hope they are telling the truth, but how can one really know?)

[Regarding fragility of blades: I've been surprised before. I found that the blades on my Dexter/Russels were easy to deform and knick. But the blade on my Messermeister -which I bought on E-Bay for $40 a few years ago -seemed very thin and light, to the point that I was worried that, though made in Japan, it could be fragile. But I was surprised to find that that thin and innocent-looking blade was actually really tough. Since it was only $40, it became my work horse, and I kept pushing it to see what it could handle. I eventually starting using it to chop chicken bones (both raw and cooked), including leg bones -and the blade doesn't bend or knick or anything. Pretty amazing.]

Anyway, the bottom line for the Zhen Damascus is that it seems well designed; it's very very sharp; craftsmanship is fine but not perfect; it's too early for me to report on the quality of the blade; and finally, relative to high-end Chinese cleavers it seems to be reasonably priced at $129.

UPDATE 6/15/12

Well, I've been using my new Zhen knife for about a month now. Overall, I'm very happy with it. For the first couple of weeks I was very cautious; the knife and I were getting to know one another. Among other things, it's so sharp that it tends to catch on the cutting board when I scoop up veges. (The remedy is to scoop, spatula-style, at a very very low angle.) But just a few days ago I realized that I was becoming very comfortable with the knife. At first I would have been more comfortable using one of my old knives, because that's what I was used to. But I now prefer the new one to my other knives -a good sign.

As with any razor-sharp blade, the edge dulls with use. But I've been able to keep it sharp with a few strokes on a stone (my main stone is soft arkansas) or, my favorite, a ceramic sharpening rod.

I still find the handle very comfortable. And I'm liking the extra width -it's great when cutting something big, like napa cabbage, or watermelon. And it also means I can scoop up a larger pile of stuff in one scoop.

Having said all of that, if you've never used a Chinese cleaver before, but you're thinking of giving one a try, IMHO this would not be a good choice. I say this because a 4" wide blade is indeed quite big; and the width of the blade definitely alters the ergonomics. All of my previous chinese cleavers had 3" wide blades. If you're thinking of trying out a Chinese cleaver, I'd suggest getting one with a 3" wide blade first. There are plenty to choose from. Get used to that. The 4" wide blade makes for a big knife.

Ergonomics note: If you get a chance, watch some cooks and prep-cooks in a Chinese kitchen. Chinese kitchens are set up very ergonomically -but they are very different from standard western kitchens. With respect to chopping and food prep, the counters tend to be lower, to make room for (1) the big fat round of a fir tree that is the chinese chopping block, and (2) the wide chinese cleaver. With a standard American kitchen counter, you may find (depending on your height, of course) that the 4" blade of a big chinese cleaver requires you to raise your arm and wrist higher than you're accustomed to. To a certain extent, this can off-set one of the advantage of a chinese cleaver -which is that you don't have to "push" the knife very much, because the cleaver's weight does much of the work.

Love these boards and how they take up so little room on the counter. Always stored the others in a cupboard, now they are easily accessible. Seemed to have held up well after several uses and runs in the dishwasher. Would have liked them to be a little bigger but they are your average size chopping board.

Calphalon Katana Stainless-Steel 8-Inch Chef's KnifeSince I was planning to spend a few days in a commercial kitchen, and my 6" Henckels knives are both embarrassingly small for serious work and embarrassingly dull because I'm too lame to sharpen them, I decided to grab the 8" chef's knife (at Bed, Bath & Beyond, with a 20% off coupon.)

It worked extremely well for all the tasks I set it to today, including mincing parsley and chiffonading mint as well as the usual cutting tasks. Despite its shallow curve (I strongly prefer knives whose edges are mostly straight, rather than the curved French style) the blade rocked very well for mincing, and was flat enough to cut completely through the rolled mint leaves in one short stroke. Furthermore, the sharpness impressed the other people who used it, though we shall have to see if it can be REsharpened to the same degree.

The handle design is clearly not for everyone, but I found it very comfortable when I held the knife as many cooks do, with the back end of the blade pinched between thumb and forefinger(s). In particular, most knife handles/bolsters seem to be designed for people who grip knives solely by their handles but the integrated bolster made it feel *right* to grip knife at the blade. The handle *seems* to be just the right weight to balance the blade, but I'll reserve judgment on whether it actually IS that well-balanced until I've spent more than a few hours using it.

I'm impressed enough with the 8" chef that I'm considering getting the block set, which includes the chef and a paring knife (I have no idea if the handle design will work well for that, though) as well as three other not-entirely-useless knives: 5.5" serrated, 6" utility, 5" santoku (which probably would have been great for the chiffonade.) I must admit a 6" chef is probably marginally more useful than a 6" utility, but it's nice to have at least one knife you're willing to hand to your less skilled friends. It also has a diamond hone, which will actually sharpen knives, not just align their edges (though I use a DMT diamond hone for sharpening.)

I find this assortment considerably more useful than many others, which include things like boning knives, carvers and bread knives--all of which are IMO far too specialized to include in a basic knife kit, especially for home cooks. The only shortcoming of the block set is the inclusion of laughably dubious kitchen scissors. I hope that Calphalon will see fit to add to the line at least a 10" chef, and a 9-10" santoku, but most of the funkily ergonomic (or just funky) knife lines I've looked at don't have those, alas.

I have no idea if I'll continue to like this knife as it enters daily use. I hope that Amazon will let me revise my rating later if it turns out to be overly optimistic, but based on this one afternoon's use (and since they force me to rate it) I'll give it five stars.

I am not a professional chef but am a foodie who loves to cook. My wife noticed the way I ogle the fine knives when we are out shopping and so decided to surprise me with this knife for Christmas. I have used it several times in the last few days and my initial impression is "what a great knife"!

Specifically, here is what I like about it:

1. The edge expertly sharpened right out of the package. It cuts cleanly and easily. The core in made of VG-1 steel. VG-1 is high carbon steel which should take a very nice edge when resharpening is needed.

2. The Damascus style stainless steel layers provides a degree of rust and stain protection and has great eye appeal.

3. The handles integrate with the blade without the use of rivets or other fasteners. I have fairly large hands and the shape of the handles are very comfortable for me.

4. The wedge shaped bolster, integral to the blade, is fantastic for people like me who mainly use a pinch grip on the rear of the blade.

5. The knife has a good heft to it without being so heavy that it is tiresome to use.

I am rating this knife 4 stars instead of 5 simply because I have only been using it for a week and would want to use it for a while to confirm it is as good of a knife as I think it is.

i've had my 8" katana for about 4 years now, and i'm just as much in love with it as the day i bought it. like others have mentioned, it's amazingly sharp right out of the package, and i can confirm that a few swipes with a steel bring it right back up to speed years later. beyond keeping it out of the dishwasher and only using wood cutting boards, i certainly don't baby my knives i generally forget to wash it and put it up right away, things dry on it, etc. still, it cleans up and sharpens up with no problem. the unique handle shape (wider at the butt, narrower at the bolster) means it's comfortable for either a standard handle-grip or for the "chefs grip" where the knife is pinched between the thumb and forefinger right at the back of the blade in front of the bolster. unfortunately, this handle shape also means it might not fit quite right in a standard knife block (it does in mine, but it doesn't in a friend's).

my best advice: go to the store and pick one up in your hands! everyone has different fingers, and some knives will be more or less comfortable to you get ones that work for your hand shape and grip style. personally, i hate most wustof & henckels knives for this very reason, since i find their squared-off cross-sections very uncomfortable. this one, though, feels great in the hand to me, and has served me well for quite some time.

I am no chef, just a granny who cooks huge meals regularly for a very large extended family. The knife was a gift over a year ago and I love it. It has become something of a workhorse for me and after all this time and use (almost daily) it has begun to lose just a little of it's edge. I also have very small hands(my eight year old grandsons hands are the same size as mine, which he finds amusing) and I don't have any problems handling the knife. This knife and an ancient, but very reliable faberware paring knife are practically the only knives I use. I cannot say about how a professional chef would view or rate this knife. I have a sneaking suspicion that our chopping and cutting techniques would be VERY different, but for the kind of cooking I do, this knife has been wonderful, and I would not hesitate to recommend it to others like myself.

I bought this to replace a damaged Eberhard Schaaf Goldhamster knife, thinking that the replacement would be "just OK". The Katana is fantastic! Super-sharp out of the box, nicely balanced, with a wide bolster to easy the pressure on my forefinger when I have to apply a lot of pressure. Looks good, if a bit "different" next to my collection of classic Schaaf knives. However, I'm probably going to buy more of these over time, so it'l look less strange.

18 months later, I am still in love with it. The knife feels like a natural extension of my hand, and is super-comfortable. The blade does;t seem to stay sharp for as long as the Schaaf knives, but maybe that's because I use it far more. Five minutes with a Spyderco Sharpmaker and you could shave with it, so no big deal.

If it doesn't hold up for the next 20 years, I'm going to buy another.

Surprisingly good for stir-frying. Size and shape are perfect.

This is hands down the best for STIR-FRYING in teflon pans that can't handle metal or wood (sharp splinters). The spatula never melts even at red high coil burner temps so I can stir fry super fast. It is soft so there is no damage whatsoever to teflon. It will also wipe the pan/wok/pot clean because there are no gaps between the spatula tip and the pan. You can scrape with it and not worry about scratching the pan. Easy to clean (no holes where food gets stuck as in some other spatulas).

It is a tad soft on the edges so it is not as easy to say, mince and dice ground meat as it is browning in the pan. The handle also should be longer and made of material that won't melt if you set it on the side of the pan for a long time (right now it is fine if you set it on the side of a hot pan for about 10 seconds...I haven't tried longer). I wuold suggest putting a metal plate at the underside of the handle, or just making the handle all metal.

If there is too much hot oil and little food material, it may splatter on your hand since the handle is short, but I actually tied a long stick to the handle so I can really fry up stuff.

But the cons are easily adpatable. This is still my favorite stir-frying untensil.

I love supporting this cause so regardless of whether this spatula met my exact need, I knew I'd be happy with the purchase.

As it turns out, it isn't exactly what I was looking for. The edge, though tapered, is simply not thin and sturdy enough to really rock those sticky cookies off my sheet. Instead, I found myself resorting to the other thicker, but metal, spatula I'd purchased for lasagna to do the job. I bake enough though that I'm sure another use will present itself, like scooting out brownies or other bars from the casserole dish when a regular-sized spatula is just too wide.

The green shade pictured is an accurate depiction of the color of the actual product.

I've learned two more things.

1. Or rather I'd like to emphasize a word I used earlier: sticky. When I baked a different recipe, one a little less sticky, the little flipper got right underneath. So it seems to depend on the recipe; the more recent recipe had a higher butter ratio, so it stuck less. (This caveat is relevant for gooey as well, but I actually consider that a slightly different condition, one where I underbake the cookies a bit, and in that case, it's usually nothing to do with the spatula; you just have to leave them on the cookie sheet a minute or two while they firm up.)

2. I was right! Other uses have presented themselves, and, ironically, this "cookie" spatula has turned out to do just the job for both lasagnas and casseroles. I cooked a savory spinach and artichoke bread pudding last night and I don't think any tool other than this spatula could have lifted out a slice as easily.

Thus, I'm upgrading to 4 stars.

I don't know quite what I was expecting but it wasn't what I got. Perhaps I should have recalled those famous Ginsu TV ads where they cut through nail and a pop can, etc. and I would have suspected the blades were all going to be serrated and thick. In fact 5 out of the 6 knives have serrated edges. The reason I don't like serrated is they cannot be easily sharpened when they eventually get dull. And even that would be okay if they were actually quite sharp to begin with but alas, they are not all that sharp... in fact, these are the dullest knives in the house right now and so maybe it is fortunate that they are serrated because they seem to require a sawing action to get any serious cutting out of them. Because these knives often require a sawing motion on so many items, I find in some situations they can actually be dangerous, like 'sawing' a slice off a peeled melon or peeled mango etc. that's already slippery. One of the knives already had some rusting on it right out of the box. Also the blades are quite thick and I suppose that is why they can cut a nail without doing too much damage but then really who wants to be able to cut a nail in half anyway? The santoku is the best of the set and does chop vegetables. This set was so cheap (price-wise) that I won't bother returning them to Amazon however at some point I will be back on Amazon again looking for yet another set of knives to use to cut-up fruits and vegetables, and this time I will make sure they are not serrated and hopefully have thinner (sharper) blades that can be re-sharpened easily and I'll save the Ginsu knives for any nails I need to cut-off.

Blade is sharp. Packaging caused blade to be curved from handle to tip -couldn't straighten out. There's a large gap where tang enters handle (I was surprised at that, given its NSF certification). VERY lightweight (some may prefer that).

After the wooden handle gets wet it smells like a porta potty (literally). The oder is so strong it will actually stay on your hand after using the knife. Other than this issue the knife is great. Unfortunately, the amsomeness of the blade is a mute aspect because of the smelly handle. In case you're wondering, I hand washed the knife as directed by the packaging. I returned the knife, and will most likely order the same one with the plastic handle.
