Steeling your knives realigns the microscopic teeth on the knife blade (honing) and should not remove metal like a stone or file. Every other steel I could find had a grooved or file-like surface on it so I went with this one and it is great. It has a very slight texture to it like brushed metal but no grooves and is long enough to use with an 8" chefs knife. I do wish they sold a 12 or 14" version for my longer knives.

Victorinox 48042 Cutlery 3-Piece Paring Knife SetI almost didn't buy this set because I figured I'd have no use for a gimmicky curved knife and a serrated blade, I only wanted the normal paring knife, but the set was only a little bit more expensive than an individual paring knife. As it turns out I use the curved knife more than any other knife I own, and the serrated one more than the normal paring knifeI was fully prepared to hide those two knives in the back of my drawer and never look at them again, but they are really great. I'm sure you can get better knives somewhere, but not at anything remotely close to this price. I am pretty picky about knives, and Forschner's are definitely the best I have used. I also strongly recommend the 8 inch chefs knife. I guess the best way to sum up my feelings about these (and the 8 inch chef's knife) is that I would have happily paid 4 or 5 times what they cost.

I've ordered this set and other Foschner knives and I highly recommend them.

They are reasonably priced, keep their edge, and are balanced.

I think they are better than my high-priced, over-rated Henckels knives.

It's great to find a reasonably-priced quality product.

I purchased these on somewhat of a whim as my older paring knives were getting worn. They have quickly become the first knives I reach for. The varied selection fulfill most of my daily needs. They are sharp and lightweight which is especially handy for a woman. I'm very satisfied with my purchase and it didn't "break the bank". I think they will sharpen easily when needed and last for many, many years.

The standard paring knife included here is wonderful. It's thin, lightweight, flexible, and sharp. It slides through vegetables as easily as it does through butter. It neatly conforms to the contours of what you're cutting, if you so desire. I cored some tomatoes last night, and didn't have any issues. Great, too, for mincing garlic.

Honestly, I haven't really found much use for the other two knives in this package, as they're specialty knives, and I don't do a whole lot of the peeling which they're useful for. The normal paring knife is fine for most non-peeling sorts of tasks.

But, for $10, you're not going to find a better paring knife. The only way you're going to get something better is to spend four or five times as much, and I'd rather just buy a new one of these every few years (under heavy use). (As another reviewer said, they're quite thin, so sharpening would be a pain -I haven't had to do so, yet.)

Ginsu Sofuto Series Japanese 420J2 Stainless Steel 4-Piece Wasabi Style Steak Knife Set 5828The good: This is an ok knife set considering its price. It has a handle that is coated with a semi-soft nonslip grip and unlike many other steak knives, it is not serrated (which I like). So it's functional enough as a steak knife.

The bad: The set I received had one defective knife. The handle had a tilt upwards and was not aligned with the axis of the knife like the other three. So I returned it and got a replacement which was even worse.

The ugly: The title (at this time) says: "Ginsu Sofuto Series Japanese 420J2 Stainless Steel 4-Piece Wasabi Style Steak Knife Set" and the description says: "Sofuto Series blades are made from Japanese 420J2 stainless steel that is well known for strength and sharpness". Now what exactly do you understand from this? If you think that you are buying a Japanese knife you will be surprised. Apparently it must mean that Japanese "style" steel is used because on the package it says it is made in China. I have nothing against China made stuff but I do not like the fact that "Japanese" is reiterated in the title and description while there is no mention that this is not a Japanese made knife. Draw your own conclusions.

I bought three sets of these; initially one blue set and one of the yellow (reviewed here). The blue turned out ok. The yellow set had a defective knife. Amazon accepted it back and I got a replacement which was even worse. The replacement also had a similarly defective knife, but in adition one of the knives had a cut on the soft material of the handle, and all of the handles were dirty (the blades only were in plastic, the handles were not protected). All of these sets were apparently sold by different or on behalf of different people on Amazon. So please note that this may be a problem with the yellow sets and may not be for the blue.

All in all it is an ok knife for the price but that is all. It does not compare to way more expensive brand knives that either have sealed seams or no seams (to prevent buildup of bacteria in the seams etc) but then they cost a fraction of those and they are still well functional. If the descriptions were more appropriate then I would feel much better about purchasing them (because right now I am really ticked off by these marketing gimmicks).

Shun Premier Bread Knife, 9-Inch

Shun Premier Bread Knife, 9-InchI own Kyocera ceramic knives and other Shun knives so I'm used to quality knives in general. This knife has exceeded my expectations in every way: it's balanced, beautifully finished, it can handle any loaf size with its long and sturdy blade, it glides through soft and hard breads with ease allowing me to cut almost transparently thin slices. This is a wonderful knife worthy of the high price you pay.

I purchased this after reading, looking, and thinking a lot. This is a very nice knife. Mine is much more polished than the one in the photo, so it doesn't look as rugged, especially since the hammer marks are all polished, though still present. Anyway, it's smooth to the touch everywhere but the cutting edge of the blade. And the blade is super thin at the cutting edge. Goes through bread with very little work and cuts the straightest pieces I've ever made. Used it to carve a whole chicken the other night... it would be perfect for thanksgiving! I've used cutco for a while and I believe that this will hold an edge better than cutco's french chef knife, mainly because it is thinner at the edge. Not sure about longevity, but if I take care of this I think it will last a really, really long time. Also, as for the metal work in the blade... most of the knives out there ($75 and up) will last a life time with a bit of care (shun, wustof, cutco).

Our ability to make steel really hard, or really soft, at will makes creating blades like this a lot cheaper and more consistent than 100 years ago. I looked around and most of the serious cutlery is running around 58+ rockwell, which is pretty darn hard when it comes to it. So what I wanted was a beautiful knife to look at, hold, and use for a long time. This particular series of blades fit the bill because they have that hard cutting core and a softer wrapping welded to that core, and they reveal the core by grinding. That makes each knife unique, very well made, and for $200 (after taxes and shipping it's a lot, but it gives good incentive to take good care of it) I'm only purchasing ONE knife like this in my life time (assuming all goes well).

I'd like to purchase more of the series as the need arises. Oh, yeah, I do really like to get this one out!

BOTTOM LINE

Shun Premier Knives are made with the same technique as traditional samurai swords. After months of moderate use on the toughest items, my Shun Premier knives haven't dulled, chipped, scratched, or otherwise marred their initial perfect finish. I know what I want daily in the kitchen and by my side in the Zombie apocalypse. However, consider looking for a better price elsewhere.

SHARPNESS AND STRENGTH

I have used other Shun Premier knives for cutting through the toughest things, like pineapple. The outside of a pineapple is as hard as wood, and my Santoku does it with only gentle application of force no sawing required. After months of use on only the tough stuff (I use different knives for for different things), this knife still hasn't dulled noticeably. Notice, this knife is for bread, but I mention the pineapple as an example of how sharp Shun knives are generally.

BEAUTY

This knife is a thing of beauty it has a beautiful wooden finish on the handle, and the knife has this pretty blotted ink look, referred to in the description as Damascus. I love to show off my $160 knife to all of my friends.

SHARPENING

Shun allows you to sharpen their knives easily by sending it into a discounted, professional service center for professional sharpening and restoration. The price is cheap (25% off of $3 per inch of sharpening). Just google "Shun Sharpening."

I won't risk sharpening my knife at home because I don't know how to properly use a whetstone. I have a Zwilling J.A. Henckels Twin Sharp Duo Knife Sharpener for use on my cheaper knives, but the instructions on the Shun recommend you don't use that kind of sharpener, since this knife is sharpened to a different degree than European knives.

PRICE

Surprisingly, the price on Amazon is not the best price I've seen for the blade. You may want to check your local high-end home-goods or kitchen-goods store like Crate and Barrel. Still, I would consider ordering from Amazon, simply because shipping to my door is so convenient.

ZOMBIE APOCALYPSE

I'm so impressed with my Shun Premier Line's ability to cut through poultry, ligaments and all, that I'm already planning on how to adapt my knife for the zombie apocalypse. Considering these things are made like samurai swords, I'm confident I'll be more well-equipped than my regular knife wielding buddies when we're out of bullets and the zombies are inevitably bearing down upon us.

Wusthof Classic Ikon 10-Piece Knife Set with Block, BlackI just purchased this set of 10 Wusthof Ikon Classic Knives, primarily for my wife but also for myself as I have started doing more cooking and frequently serve as my wife's sous-chef. If you are in the market for a set of high quality knives you may ultimately make a different choice. However, I would recommend that you follow a process similar to the one I will describe here.

First, I went on-line and researched high quality knives. I read reviews, by both professionals and consumers, and made notes and comparisons. This resulted in the identification of the following brands of high quality kitchen knives that are readily available to American consumers: Japanese Knives: Shun and Global. The two high quality German Knife brands are Henckel and Wusthof.

The second step in the process was to go to local stores, in our case William Sonoma and Sur La Table, to see the knives in person. This is a critical point and, whatever else you do, should not be skipped. Based on the look and feel of the knives, my wife liked the Wusthof Ikon Classic and Blackwood the best. Further, based on our needs and the range of knives in the various sets, we decided on a 10 piece set. We also ruled out the Blackwood series because of price we just didn't feel there was sufficient added value for the significant increase in cost over the Ikon Classic Series.

Finally, back to the computer. When making price comparisons, it is important to note that one 10 piece set may be different from another 10 piece set by the same manufacturer and the same series. Be sure to look at the actual knives in each set so that you are comparing apples to apples. The two sites that I found most helpful, and made it into our final decision, was Amazon and Cutlery and More. We considered building our own set by purchasing individual knives but ruled this out when we did a price comparison. Regarding the set we are discussion, it sells for $600.00 but to purchase the same set through a collection of individual pieces would cost $865.00. The cost savings available through a set purchase can be substantial.

After deciding on the Wusthof Ikon Classic 10 piece set I actually went back to our William Sonoma store to purchase it. The reason I was willing to pay the tax (the only difference in cost) was that I wanted my wife to have the set for Thanksgiving. Unfortunately, their 10 piece set contained only two eight inch knives where the on-line sets included three.

So the final decision came down to the set at Amazon or the set at Cutlery and More. They were very similar but not identical. My wife said either set would be fine. I chose to purchase through Amazon because I have had very good experiences in buying from them. I have never had a problem with Amazon and just did not want to risk trying a different vendor with such a substantial purchase. I also purchased the Wusthof Ikon knife sharpener ($50). It was a little more expensive than the Wusthof Hand Held Knife Sharpener, but uses diamond sharpening rods that I thought were worth the extra cost.

Now, to the knives. They are fabulous. They are razor sharp, perfectly balanced, aesthetically pleasing, and feel like an extension of your hand when you cut with them. The hardwood block is simple and elegant. Most importantly, my wife loves them and they arrived in time for Thanksgiving! I highly recommend these knives to anyone seeking a high quality knife set.

I really like the color of the block. The quality of the knives is outstanding. I would strongly recommend this product.

Tamahagane San Tsubame 5 inch Utility KnifeI recently bought three Tamahagane San Tsubame knives for my home kitchen. As a chef, I also cook at work, but I would never bring something this beautiful there. I have used a lot of knives in my life: Shuns, Wusthofs, Globals, Masahiros, Henkels, and the like. But of them all (and with the exception of my hand-made Damascus steel Yoshihiro) these are my favorites. They arrived hair-splitting sharp, the look quite magnificent, the balance on all three of my Tamahananes is perfect, and so is the craftsmanship. When cutting with these knives I don't so much cut with the knife as guide the blade as it falls through the food.

And as far as the seller, Metro Kitchen, their service was impeccable. They shipped my knives very promptly, they arrived in perfect new condition, and when I had a question for them about the shipping of one knife, they responded the same day.

In short, great knives, great service.

I rated this item 4 stars because I can't get the steel grips to penetrate the pit and remove it. The knife and slicer works great. I will say though, that if you have a slightly over ripe avocado, the fruit will get caught in the slicer. For a perfectly ripe avocado it works great, Maybe it's just me, but because the design is so cute its fun to use. Is this item necessary? No. Is it useful and does it function well? yes.

The pit remover is actually easier to use than a sharp knife I've always slapped the knife blade into the seed & twisted, but then I have to pull the seed off the blade. I've never felt quite comfortable slamming a knife blade into the seed, or slicing the meat toward my hand -it goes against everything I was taught about cutting toward my skin with a sharp knife. The Good Grips tool provides a much safer way to prepare avocados. I've owned several avocado slicers which had wire cutters, and the wires always sprung rending the tool useless. The slicing strips of the Good Grips slicer are sturdy plastic, cutting and scooping easily and cleanly through both large and small avocados. On very ripe, soft avocado meat I've had to help the last little bit through the tool by pushing on the end of the avocado peel, but this is a minor thing. The tool fits comfortably in large or small hands; it certainly speeds up the preparation of avocados and is a clean way to prepare them; and it washes up easily. Customer review from the Amazon Vine Program ... in order to test this kitchen gadget out. The avocados I got were decently ripe and pretty tasty (not the hard underripe ones blah.) The plastic blade did a suprisingly good job of cutting the avocados open easily and cleanly. The pit remover worked pretty well. I can't say the same for the slicer. If you like your Avacados ripe and kinda soft, the slicer is going to do an abysmal job of making slices; halfway through the cut, the slices get jumbled up and turn into a lump. So, this is fine for making guacamole... not so good for presentation on a plate. So I guess two out of three functions is not bad. HOWEVER, you can easily acomplish what this gadget does with a good knife and save yourself some drawer space from another single function kitchen tool.

I usually ended up smashing my avocado a little when trying to remove the pit myself. And the slicer part actually digs all the meat out without wasting any. It's so easy. I read some reviews complaining but I learned that I start on one end. Get it a third of the way up, to make sure it's detached. I have opened Oysters for our large family for every holidays as far as I can remember.

Con: the stainless blade is too thick and end of it is too dull. We could not insert it in the small/medium Oyster.

May be it works better for the large oyster, but if you like small and medium oysters, find a knife that has a thin blade made of hardened steel.

I have a Global Santoku which I love and use on almost everything. When I saw this smaller Santoku knife I thought that for $10 it might be worth trying and if I didn't like it I was only out $10. Well I guess I'm just too spoiled using the Global. It is the sharpest knife I have ever used and when you've had a really sharp knife there is just no going back. The Silvermark was not very sharp right out of the package so I tried sharpening it with my Chef's Choice manual Asian knife sharpener. I was able to improve the knife but it still didn't come close to my Global. Granted the Global cost quite a bit more so it is not a fair comparison. However I have found that I like to use the Silvermark as a steak knife so it wasn't a total loss.

I'd always loved the little swirl and was excited to select the new version as our everyday flatware. We received them today and I am sad to report that they are NOT 18/10 as stated by Amazon. They are 18/0, which is lesser quality, and they overall look cheap. We'll be returning them and looking for other flatware that is 18/10. Very disappointing. Also be advised that the hostess set and flatware set ship separately.

Although my product was listed as in stock, part of it was not, and now I have to wait a month for remainder of my order. The in stock part was also shipped later than expected, and only after I reminded them they hadn't shipped it yet. The worse part though was this set is 18/0,and NOT the promised 18/10 stainless steel stated multiple times in this description I feel duped now!!! AND I'm still waiting for part of my order! Urrrghh!!!

Chicago Cutlery Walnut Tradition 8-Inch Slicing/Carver KnifeI have owned several Chicago Cutlery items for years and wanted to add to my set. This is an excellent carving knife and the wooden handle gives it classy look. I would recommend this knife to everyone.

What a steal! This knife is great. I use it mainly to carve/slice meat. I really like how the front of the blade is curved up to a point rather that just a straight point. It makes all the difference. The knife is extremely sharp right out of the package. Occasional sharpening (4 times a yr maybe) will keep it sharp for decades! My parents got one as a wedding present (approx 30 yrs ago!) and it is still going strong! They changed the handle and blade very very very slightly since the original one my parents got back in the day. The handle is a little less wide and the blade looks slightly different but it is barely noticeable even w/them side by side. I also have a J.A. Henckels 8-inch carving knife and I never use it. It costs way more than this but I do not see the value in the Henckels knife...I always choose the Chicago Cutlery one over it because it works much better and is easier to use. You will not be disappointed!

I have several brand name knives and this is the second one from Chicago Cutlery. The ones from Chicago I go to first and the others basically stay in the rack. This one does a beautiful job on slicing meat of all kinds.

You see, I went and broke my girlfriend's best knife. It was her 8-inch Chicago Cutlery slicing/carving knife. I was quite pleasantly surprised that I could replace it for such a low price. So now my sweetie is happy, and I'm thinking of getting one of my own. It slices bread better than my own supposed bread knife.
