Zwilling JA Henckels TWIN Pro-S Classic Parer

Professional S 3' Paring KnifeWhile visiting friends in KC, I happened to try their Henckels 4-star knives and was amazed at their sharpness, balance, and comfort. I immediately decided I NEEDED to get a set of these knives.

I quickly settled on the 4-star chef's and fillet knives, but tried paring knife after paring knife without finding one that really felt right. The 4-star handle is great on the big knives (where one grips the handle with the entire hand), but didn't feel right on the paring knife; it felt like my pinky was in limbo, not meant to be on the handle, but not meant to be off it, either.

Then I tried THIS knife. The Pro-S 3" paring knife just felt *right* it fit perfectly, it had just the right heft, and it was far more agile than the longer 4" knives. I've had it for six months and it performs exactly as I expected it to; this knife is just a joy to use.

I love the thing, but you'll probably want to do exactly as I did, trying a number of high-quality knives to find the one that feels right to you.

Henckels is the best quality if you stick to their Pro series. Skip their International line. This paring knife will last forever and fits well in the hands of both me and my much larger housemate. Holds it's edge well. Good tools make the job go well!

This knife was a Christmas present, and a replacement to a Forschner 5" utility knife that got lost (probably in the trash).

The Henckels Twin Pro S line are great knives. Professional quality stuff here including features like high-carbon, no-stain steel, drop-forged construction, triple rivets, full bolsters, full tang, and POM handles. It's weighted well, and feels good in the hand and pretty controllable for a 4" knife. The blade is long enough to use as a utility/sandwhich knife.

So far after 9 years it's been a good knife. It came from the box sharp and held it's edge for a good while before I sharpened it. The steel takes a great edge, and stays sharp for a while, but still needs to be re-sharpened after about a month of continuous use. This is respectable, but not great, especially for a knife costing $50.

I am impressed with the quality of this knife...no gaps anywhere between the handle, rivets, tang, or bolster and its balance.

However, I am not particularly impressed with the steel. It hasn't stained or discolored in 9 years, which is what I expected, but fell short of my expectations of edge-holding and ease of sharpening (I use diamond sharpeners). The angle of the edge from the factory was also over 20 degrees, which is too tall for kitchen cutlery. I compared this to my Forschner rosewood handled paring knives ($40 for a set of 3, 3" straight, serrated, and 4" utility), and the performance is so close that I wouldn't justify spending $50 on this knife. The Forschners are stamped knives, and performed very well for a fraction of the cost.

If you are looking for a good paring/utility knife, and have money to spend, then this will work very well.

I bought this thinking I'd be happier with it than a shorter paring knife, but I think that may have been an error. The blade itself is sharp and cuts nearly anything, but I find I use it minimally. Its too big for any high detail work, where I find myself fumbling and too small for any rougher work, where I endlessly reach for my santoku knife.

Remarkably, the only area I've found it highly effective for me is for sandwich making, where I previously used my santoku and a dinner knife. It can easily work its way through an onion or any other vegetable you'd want on the sandwich and allow for more simple tasks (like spreading condiments, cutting the sandwich, etc.) due to its nice length.

The overall heart style is different as well and does not have the swirl-like design. Still nice, just not what I had technically purchased, and therefore not what I expected.

This looked like it was a really nice set with fancy detailed handles. They were okay, but the server spatula had a scratch on it and was not at an angle that made it work well for serving cake.

John Boos Chop-N-Slice

John Boos Chop-N-Slice 20-by-15-Inch Maple Cutting BoardI received the Maple Chop & Slice 1 1/2" board for Xmas '09, and despite all the hype, I am disappointed with it. It began to split within a few weeks and now has several splits. As a home chef, I use the board daily, it is not allowed to remain 'wet' (such as with fruit juices), is wiped clean after each project and is wiped clean and dried, not immersed. It was conditioned before use and regularly since. Therefore, the three stars. Otherwise, the size and weight is great. If I had to buy one (which I probably will sooner than later) again, I would opt for an end cut and thicker board.

BTW, anyone know if there is a warranty on their products? I emailed BooS customer service but never received a reply.

The John Boos Chop-N-Slice cutting board is a very good board that exceeded my expectations. Over the holidays, my in-laws were staying with us and did most of the cooking. I was worried that my brand new board would not survive the abuse because of the way they cleaned and used it. Normally, I would clean the board with a wet soapy towel and immediately rinse and dry. My in-laws on-the-other-hand would wash it in the sink with copious amounts of running hot water and lots of soap and let it air on the dish rack. The cutting board held well despite this repetitive cleaning, and I didn't notice any warping or splitting which I noticed on my previous wooden cutting boards. I did see some splintering on the corners which is expected since this board's edges are not rounded.

This is a decent cutting surface to be used as a back up or if you cook with others and want a second surface or have very tight kitchen space. It is fairly small, but since I have a large end grain board, it is sized right as a small backup board for me. I will use one side for small cutting jobs and the other surface as a cheese and cracker/appetizer board for get togethers.

I have a few issues with the board at the price. The edges have no radius on them and are uncomfortably sharp. They need to be sanded round before use in my view. This should be done with an 1/8" or 1/4" machined radius on all corners during manufacture.

Secondly the board came with a plane mark stripe (done when planing the surface in manufacture) across the entire width of one cutting surface. The stripe is brown which leads me to believe it was burnt into the surface by the cutting blades as the board stopped moving through the planer for some reason.

Finally, the the other side had two noticeable compression dents right out of the box. Rock Maple is not easy to dent. This board was not packed well and the board was loose in the box with no padding on the interior of the box on the bottom surface. Sure enough, there were two impact perforation dents on the bottom of the box that convince me improper packing & shipping resulted in the compression dents.

That said, at this price a plane mark across an entire surface width, and the sharp edges add to my mark down of two stars. It is functional, but at the price with shipping, these finish issues are not acceptable in my book.

I looked quite a long time for a cutting board to use on my kitchen island and finally decided on the Boos 20" x 15" x 1.5". It arrived extremely well packaged and in perfect condition.

The actual thickness was 1.25", but this didn't detract from its usability. I chose this size because I wanted something substantial enough for usual cutting chores, but also something that would still fit (mostly) into the sink for washing/rinsing. This fit the bill perfectly.

It first appeared that it would slide around the counter a bit while being used, but I actually haven't found it to be a problem (and I use it a lot now).

Quality is very good and on par with what one would expect from a John Boos product. Care is typical and I also highly recommend using the Mystery Oil initially and regularly to keep your board in top shape. I believe reports of splitting or drying are directly related to a lack of care.

I'd buy this again highly recommended.

I'm a big fan of Boos traditional butcher blocks, but this clearly does not live up to the standards of Boos. I picked this up for my short stint in a small apartment where my butcher block was not practical. I oiled regularly, but the board developed a rough texture and begin to warp after a few weeks. I was useful for what it was, but will not make the trip back home and will find itself in a landfill.

Do yourself and stick with the thicker, end grain butcher blocks.

I never noticed it in the pictures here on amazon and when I got it I was shocked they changed the design. Luckily they break really easily and the knives are held in place by some strong magnets inside the hollow plastic shell. This thing is also friggin huge so be prepared to make some counter space for it.

I got this as a gift for my girlfriend who loved it until we got it out of the box. The plastic guy is hollow and feels cheap. The plastic sheath for the knives that stick out the back of the guy are ugly and take away from the appearance. The magnets that are supposed to help hold the knives in place aren't always strong enough and I usually find that the knives have fallen off them and are resting on the blade in the plastic sheath. The knives rust easily and often so they must be a very low grade stainless steel and they dulled very quickly. All around I was extremely disappointed. This is not worth anywhere near $70, I should have returned it when I still could but I was still caught up in the novelty of this product for the first week that the knives still cut anything. I have to sharpen these things way too often. For the people who said these knives were good, they could only mean when compared to a plastic butter knife.

I bought The Ex strictly because of the holder. To my delight, the knives are good quality. I made hot wings yesterday, and cutting through them was like butter. I had The Ex on my wish list for two forevers, I only wish I had gotten it sooner. You won't be disappointed. The ONLY caveat I would mention is to be sure to measure the distance between the countertop and your cabinets. The Ex is tall. Mine fit snugly, but if you have low cabinets, you might have a problem.

After looking through hundreds of knife sets online, I stumbled upon The Ex. You will have this product for the rest of your life.

Its more expensive then the rest of the similar products.

But the price justifies the quality. Great!

If you took apart just 2 whole chickens yourself as opposed to buying pieces at the store, this knife will pay for itself. If you enjoy cooking, it's a rewarding experience and you can use the carcass for homemade stock.

I'm not trained or a professional cook I bought this knife after reading the America's Test Kitchen review and began buying whole chickens. After watching a few youtube videos (Andrew Zimmern's is my favorite), I grabbed my new knife and successfully took a chicken apart. After my second try, the breasts I removed look even better than the premium quality packaged breast meat from the supermarket.

The handle is large and textured so even when wet, the knife is easy to hold. The slight flex lets you work the knife up against bones and get the most meat off. The blade arrived sharp and is easily sharpened. It's the perfect tool for breaking down chickens, de-boning, fileting, and also removing silverskin from tenderloins and flank steak.

Fantastic product, one of the best purchases I've made in a long time. Don't buy an expensive forged boning knife!

I am a hunter and I process the game I take myself. This boning knife was just what I needed to speed the process along. I recently processed a 100 lb. hog. The knife was flexible and narrow which allowed me to get the most from the bone. The handle was easy to grip. The blade held a good edge through the entire hog, I did not need to stop and steel the blade.

I used it the following week to process a deer with the same good experience.

At this great price how can you go wrong.

America's Test Kitchen recommended this boning knife and they were right. This knife is sharp straight out of the package. I used it the first time to cut the silver skin from some beef and it was so easy using this knife. The sharp point and long thin blade enabled me to get right under the silver skin and I did not cut into the meat itself. I was able to cut neatly and precisely where I wanted to due to the comfortable handle and sharp blade. Why pay a fortune for a boning knife when this one gets the job done quick and neat. Good job America's Test Kitchen and thanks R H Forschner for making another affordable but quality product.

Had I known it was possible to fall in love with a set of knives, I would have given up my eharmony membership long ago. (Just kidding) I have a set of Calphalon Contemporary knives and thought they were great. After reading an online review at a reputable cooking site however, I bought this set for a friend. (Price to quality ratio was well-reviewed) OMG, everything you cut is like butta (except for butter itself which is like watta) Whether you buy the set or just the pieces you need, I cannot recommend these knives enough.

Oh, and though I love them to much to do so, I believe they are dishwasher safe.

First, being a bit of a traditionalist, I much prefer a solidly crafted forged blade to a stamped one. But this knife was highly recommended by Cook's Illustrated, along with a number of other knives in this line. I was curious to see if such an inexpensive line of knives could compete with the very expensive knives which I am used to using. Since I was in the market for a boning knife I decided to order this knife to evaluate the Victorinox line.

While it will vary from person to person, I find the handle slightly uncomfortable to hold. It seems a little bulky, especially for the application. On the other hand, the blade appears to be very well suited to the task at hand, and this may be an application in which a heavier forged blade is at some disadvantage. The blade is flexible, but not overly so. Initial sharpness is good, as is the blade shape. It has a good sharp tip for piercing silver skin.

I have only had this knife for a short time, and I look forward to seeing how it will hold up. Will it hold its edge? Will the tip break when it hits one bone too many? Will I ever get used to the clunky feeling handle? Time will tell, and I will share these things here as I learn them. But at this point I would recommend this knife to anyone looking for an inexpensive but effective boning knife. Over time I plan to try the rest of the knives in this line. It will be interesting to see if I can replace a $2000 set of knives with a $200 set and be happy with the change.

While I will never lose my love of the beauty and craftsmanship of a set of fine forged knives, Victorinox/Forschner is offering an interesting practical alternative to the "work of art" knives we have grown to love. Interestingly, All Clad cookware is facing a similar challenge from low cost multi-ply cookware.

The knife, fork and spoon pack neatly into the plastic cover, and a set is not too heavy to carry around. The cover could be a tad larger it is a snug fit, and the cover on one of our sets cracked when snapped shut when the implements were not quite nested together perfectly. The cover was handy following a meal, when the cover could be snapped over the implements and the food residue was prevented from making a mess inside a pocket or purse.

I purchased a set of these for myself and a coworker so we could stop using the plastic utensils the office provides. The knife is awesome as often a plastic knife or fork would break when trying to cut up salads. This little set is quite sturdy thus, I highly recommend it.

I agree with others, the clamshell cover could be sturdier however; the first one lasted about 6 months with almost daily use. I called the manufacturer and was able to order replacement covers so we're all set there!

I also purchased this set to take to work with me so I could stop using plastic utensils every day. Overall, I'm quite pleased with the product but here are my comments:

The large handle that stores all the utensils is the handle for the knife therefore the knife is a little clunky to hold, but absolutely still useable. Also, the knife is serrated and is much sharper than I initally anticipated (I guess I thought it'd be more like a dull butter knife), therefore super easy to cut food!

Like others have said, the case is cheap. It is held together on the sides with two tiny snap buttons (maybe 0.5mm in width) and the hinge is plastic also, so I absolutely foresee these snapping off at some point or another.

When fitted together, the set is about 6.5 inches long super compact and easy to store in my desk!

No more plastic utensils! Yay!

This utensil set serves it's purpose well. I like that the utensils are sturdy, durable stainless steel. They pack up compactly in the cover making them perfect for travel. Now I always have cutlery for lunch on the go. One complaint I have is the cover itself has two small plastic snaps that are prone to breaking (the snap broke on my husband's set quite quickly). The spoon is also quite deep. This may be handy for chili or soup, but feels a little strange for my yoghurt!

Pros:

great cutting feel (a LOT like a good wooden board)

lightweight

fits in the dishwasher

Cons:

as both sides of the board are meant to be used, neither side has rubber feet to keep it from sliding under the knife. I use a damp towel or washcloth that holds it rock-steady.

Recommended.

We have an assortment of cutting boards of various sizes and material. The board is a nice mid-range size. We don't take great care of our boards so some of the woods ones have warped and cracked. The plastic seems to absorb the chopping action better than our other boards.

Update: I've had this for four years now. You can see the knife marks. The knife marks are stained, but they are not so deep as to hinder normal cutting board use. I would buy this product again.

It's not sharp on the edges, but still squared off enough to scrape the inside of a pumpkin with. I love it. I only wish they made this same spoon with slots/holes in it for scooping out things you'd like to leave behind the fluid with. I know that there is a skimmer but this shape is better.

That says it all. Great design. Well made. Feels well balanced in the hand, handles well, and does the job intended easily, with grace and dignity. Got to love it.

The knives are too thick; this wouldn't be bad if the blades weren't as dull as they are and could cut the food as easy as the genuine Richardson Sheffield knives do. The blades don't grab any type of food well and the knives slip, making them dangerous. The packaging is deceiving because it shows the laser-cut grooves on the side you see; the opposite side has no laser cut so they will have to be sharpened even when the description says never do it. I agree with the other reviewer; I took them from the package and already can see the red under the coating so they will rust or peel, even if washed by hand. I'm giving them two stars because the size of the parer and the all-purpose are the correct sizes. If you need knives, buy the Laser Soft Touch that are really sharp, but be aware, the smaller size is really a small cook knife, not a standard parer or all-purpose size. Have some 17-year old knives of this brand and are still as sharp as the first day even when I use them to cut anything (even plastic packaging) and wash in dishwasher daily. Very dissapointed about this product. My mistake I didn't use them earlier so I could return the two sets I bought.

A good price and simular to some I bought Eons ago at Kmart. Do get stained or rusty from dishwasher and don't seem to be as sharp. Keeping clean and hope they season in.

OXO Good Grips Locking Can Opener

OXO Good Grips Locking Can OpenerI used to work in a cooking supply store, and I saw so many of these returned. The idea is great but the lock breaks way too easily. Most of the OXO Good Grips items are great, but they need to work on this one. If you want to risk it, get it.

Last Xmas (1999) I bought my wife two of these. The locking mechanism broke on the first one in January of 2000. The locking mechanism on the second one broke in mid 2000. From what I'm reading in the other reviews, this is a common happening.

From that part of it, the thing probably deserves 1 star. However, the thing still works as a can openener, even though the lock broke. Taken strictly on the can opener part of it, it's got a nice grip feels better than most can openers, but probably isn't worth the extra money.

Overall, it's just "OK". If you like the rest of the Oxo line, you'll probably like this although I bet your lock will break before too long, and it'll just be any other can opener then.

I bought this because it is simply good design. Best damn can opener until the plastic latching mechanism failed. Being a self-righteous designer who believes in buying good design I went out a bought another. Same thing happened.

OXO is an excellent company with many good products -but the life expectancy of this puppy is less that a year.

After having a mediocre electric can opener for years, I got the OXO locking opener at the store. At first it looked questionable... plastic handles, a little release button on one side. Then my friends and I opened a half dozen cans for a party the day after I bought it and it was like a hot knife through butter. Nobody complained about having "can duty" at all for a change. Once you click the handles together you just have to hold the can level so you don't spill no squeezing involved. The knob turns very easily, which was also a surprise. Never in a million years did I expect it to work this well. Even though it's marketed as the low end model of OXO can openers, I would highly recommend it. The higher end OXO models are just glitz for more $$.
