The Large Cheese Knife
We like cheese. Nearly all of it is the kind you cut off large blocks like Tillamook Extra Sharp Cheddar wrapped in black plastic.This knife will not cut the plastic. Use a regular knife to cut plastic at corners, peal down, then use this cheese knife.
Of the many cheese knives we have this one is about ten times cleaner, smoother, easier cutting. If you are not really happy with your cheese knife this one deserves a chance. We bought the longer version so I can put my fingers on the tip to guide straighter cuts especially when they are thin.
With the medium firm cheeses there is nothing to wash off the blade. It glides through the cheese like nothing I have ever tried and comes out clean on the other side. Sponge wipe and rinse. Perhaps the plastic edge might be delicate? Store it like any other good knife where the edge will not bump anything.
I was a little sceptical after looking for so many years. At least for medium firm cheeses this is the BEST.Wow!! I love this knife!! I used the smaller one at a friends house and had to buy my own. Unfortunately I read the reviews which directed me to buy the big one instead of the small one. In my opinion you need both. The big one is HUGE and would be great for a big party where you buy 7 blocks of cheese from Costco and have to cut them in to half inch squares. For a regular dinner party the small is perfectly adequate. You can't take the big knife out and hand it to a guest. It would be akward! Buy both.
This thing cuts thick sharp cheeder blocks like butter. The way the blade is shaped it has multiple ridges which seem to allow air in while a regular knife allows no air and becomes more and more "stuck." This is the best way I can describe the way I understand how it works. Whatever it is, it's wonderful. I can remember cutting block after block for parties and my hand hurts SO bad while using my best knife. NO MORE!! NO MORE!

The smaller one would have been fine for me but it would have cramped my husband's hand.I bought this for my aunt who ownes a wine and cheese shop in Montana. I recently switched all my utensils and things in my kitchen to products that were made in the USA. I found Rada cutlery after doing a search on Amazon for kitchen utensils made in the USA. These are great quality, and I am very pleased that I made the purchase. All my cooking utensils are now Rada cutlery and I ditched all the Kitchen Aid ones.Christmas 2011 ABC TV challenged us to spend $60 on American made articles. If every American spent this much we could turn our economy around. I wasn't looking for spatulas only found these when I searched "made in America". I love these. They are small and efficient. Unlike their plastic counterparts they take up little storage space. I had purchased a set of steak knives and small knives in a specialty shop in Gatlinburg Tennessee years ago. If there were instructions to not put in the dishwasher I did not pay any attention hence the handles darkened. This did not effect the quality or performance of the cutlery. To hit the $60 dollar amount I purchased several other items made by Rada . After a year and 2 months usage and hand washing they are just like the day I opened the box. I'll admit it: I'm a knife snob. When I saw the prices of these knives I wrinkled my pert little knife snob nose that was planted firmly in the air and thought with my irony-laden bourgeois tone, "Oh, $350 for a set of knives AND the case? That's quality stuff right there."My first apartment had the obligatory OMG these knives are only $30 and TOTALLY make me look like a grownup!!! set of Chicago Cutlery. I progressed from there, trying out everything from Ginsu to Wustof to Henckles to Shun. I have two Shun knives and I adore them. But I also own a catering company, and didn't want to schlep my precious knives all over town and constantly have to worry about them getting damaged or walking off. This knife set seemed like the perfect solution-a knife case with a set of knives that fit right in.
I figured these knives would be "disposable," much like the Chicago Cutlery type of knives... alright for a year or so, but then they'll quit even taking an edge and you're ponying up more cabbage for knives that you CAN sharpen. I'm fortunate enough to have a husband that's a wizard at knife sharpening (the man constantly has a patch of hair missing from his arm where he tests the sharpness), so I'm used to really sharp knives. I can honestly say the only time I haven't had to sharpen knives right out of the gate was when we got our Shun knives-Henckels and Wustof both had good edges, but not the super sharp edge I was looking for in my knives.
SO. I wasn't expecting much out of these knives when I ordered them-figured they be our bang around knives for catering. I WAS BLOWN AWAY BY THE QUALITY! These knives are crazy, crazy sharp. They'll cut a tomato so thin it'll disappear. The blades have an excellent balance to them. The edges of these blades are amazingly sharp and thin without being flimsy. I'm not the type of chef that wants a thick blade-I appreciate the thinness of the Shun knives for making incredibly precise cuts. It's kind of like the difference between using a scalpel and a machete. More importantly, these knives HOLD an edge. There's lots of knives you can PUT an edge on, but then use it twice and it's like trying to cut with a letter opener. Not so with the Saber knives-they come with an edge, and they keep it. In fact, I've had them for 3 months, used them almost daily, and they're still ridiculously sharp.
The range of knives included is all you'd need for a kitchen on wheels. The case is amazing-I haven't had ANY of the knives slip out in transit. I've even started taking them with me when I go to my mom's house. My sister used them and as she was washing them she made a comment about my expensive knives making her nervous. When I told her how much I paid for the set, her eyeballs just about popped out of her head-she figured since the quality was on par with Shun, the price must be as well.
This "catering set" of knives has several of them hanging on my knife block that I use regularly. And honestly, I've started reaching for these faster than I do my Shun knives-I'm not as "afraid" to use these, because if something happens to them I can replace them a heckuva lot cheaper! I've used them side by side with my Shun Premier knives, and they're neck & neck in terms of balance, edge and weight.
A last note: The Saber customer service is amazing, a level you just don't find anymore. I ordered a chef's knife directly from Saber that was damaged during shipping, and they made it right without any hassle or hesitation. I didn't have to call India, I didn't have to shout into voice recognition software then get frustrated and press zero for an operator anyway, and I received a level of customer service that made me briefly wonder if I'd traveled back in time to the 1950's.
You will not be sorry you bought these knives.I've had my Saber knives for a few months now, and it's completely changed the way I work in the kitchen. I used to spend a lot of time trying to cut awkward things with the few good global knives one of my roommates own, but they were taking a lot of abuse and were frequently the wrong knife for what I was trying to do. I dreamed of a set of good german knives, but couldn't stomach the amount of money I'd end up spending acquiring a knife collection. Then I discovered Saber.
Saber knives are made of quality German steel, forged (not stamped) in a single piece. They're made in China, but it's actually possible to make something decent in China if you're willing to pay for quality. Most companies cut corners in their Chinese factories to save money, but Saber has decided to sacrifice that profit in order to produce a quality product. The result? For the price of a couple of German knives, you can get a complete set (and it even comes in an awesome, functional bag). Now I have the right knife for nearly every job, and I have a bag I can store the knives in when I'm not using them to keep my abusive roommates from messing with my knives.
As for the knives themselves, they are pretty much awesome. Everyone I've let handle them comments on how balanced the weight is, especially on the chef's knives. The blades are quality and hold an edge, and with a couple of quick strokes of the honing stick are as sharp as any knife there is (eventually, like all knives, they'll need a good sharpening). A friend of mine has a Wüsthof Chef's knife that retails for almost $200, and I've used her knife many times, and for my hands at least the Saber is actually more comfortable.
Give the Saber knives a try. I think you'll like them.

I had the opportunity to cook two consecutive dinners for more than 40 people as part of a ski offsite; in the course of making a wide variety of dishes with the help of a fellow "chef" (we're not professionals, though we try) and more than half a dozen random people helping with prep, we managed to thoroughly exercise every knife in the set. We sliced, chopped, julienned, diced, and brunoised a wide variety of vegetables, 6 chickens, a large slab of pancetta, and more. With so many people using so many knives I expected someone to have something bad to say about the knives, but every comment was a compliment. And getting the knives to Lake Tahoe and back was as easy as could be because of the awesome included bag. I don't think we could have pulled that meal off without the Saber knives.

I was looking for a good mid-range knife set to replace the semi-cheap knives we got as a wedding gift 10 years ago. I am not a professional chef, but love to cook and spend a lot of time in the kitchen. I didn't want to spend $1k (or even close to it) on a knife set but wanted something high quality and sharp, and something that would last many years.I did a little research and all the "good" knife sets seemed out of my price range. I was browsing Amazon and found the Saber knives and thought I had found what I was looking for. The reviews were good, and it appeared that a German knife maker had simply opened up shop in China to create high-quality knives at a much lower cost. Now, before you say "China??" there are some extremely high-quality products made there -iPhone comes to mind. So the fact that they were made in China didn't really deter me.
I bought the set with the knife bag, because I like to take my knives when we go on vacation. I cook even on vacation, and it never ceases to amaze me how a 3-bedroom rental beach house can stock their kitchen with only dollar store knives. Anyway, back to the review... bought the knife set and chef's bag.
When they came in they sharp... I'm not sure about "chef's sharp" as I'm not a chef and have never used an expensive knife. They were sharp enough that the weight of the knife itself would easily slice a firm tomato without any assistance from me. The knives stay pretty sharp too, but I do use the honing steel before and after each use.
The only serious downside to the knives is they RUST. The first time I saw rust I thought it must have been food that wasn't cleaned, but on further inspection it was little brown spots of rust. I have a cheap flimsy plastic-handled Ginsu knife (the original) that is probably worth $2 that has never rusted in 15 years, and these "German steel" knives started rusted after a few months. I was able to get the rust off with a scrub brush, but the knife is noticeably duller than the others.
For the price, there is NO reason these knives should rust. I wash the knives and dry them immediately, they rarely sit an hour or two before getting washed and put up (just the time it takes us to eat dinner). I'm considering contacting the company and asking for a replacement of the couple of knives that have already started to rust.
I still think they're a pretty good value for the money, but while the knives are sharp and work well, the overall quality is not exceptional.
UPDATE 1/30/12
A few months ago I was contacted personally by the owner after he read my review. He asked me a few questions, including whether the knives were in contact with "contaminated" iron or soaked in cast iron. I've never soaked my knives in cast iron, but it is possible they came in contact briefly with my cast iron pans, as I use them all the time. He also said, "Contrary to commonly held beliefs....cheaper knives are more immune to rusting than high quality knives."
I'm not a professional chef nor do I know anything about knife manufacturing, so I'll have to take his word on that. However, I have been extra careful in the past couple of months to not let the knives come in contact with my cast iron, and I've also been very diligent about washing and putting them away after use (even before dinner). In the past few months, I have not seen any new rust spots on the knives.
The knives still hold an edge with regular honing, but several seem to need sharpening on a stone. I'm about to do that soon. Overall I'm pleased with the knives for the price, just be careful to wash and put them away promptly after use!!A friend of mine is a professional chef for an up-scale restaurant in downtown Seattle. He uses Saber Knives exclusively and claims they are by far the best on the market. I had no idea where to find a set; he got his through a chef supply place in New York. I've been checking on-line for some time now and then...finally Amazon has the same set he has. I bought a set immediately and they are fantastic! If you are serious about cooking and want the best in the kitchen, this Saber Knife Set will make you very happy.

I bought the version with out the bag. (same set of knives minus the bag, also sold on Amazon)First off, I'm not hard to please, a chef, or even accustomed to quality kitchen knives, and I'm only taking one star off as of now.
Received, inspected, washed, and used them today. While they all had the great feel, look, and balance that forged and bolstered knives are expected to have, and only had a few apparent minute imperfections that I had already expected for a set of knives within this price range, I was very disappointed with the sharpness of the blades out of the box. Some folks have used the adjectives "scary" and "insanely" sharp. I think one person even returned them, proclaiming them to be too sharp. Wow! they must have gotten WAY sharper knives than I did. Chef sharp? absolutely NOT mine. I couldn't really imagine any Chef being very satisfied with the sharpness of these right out of the box, unless they also use an "easy bake" oven.
Shave hair off the arm or slice a sheet of paper easily? Not EVEN close with the knives I got. While the knives seemingly come with a pretty good edge on them, closer inspection with a magnifting glass reveals the coarseness of the grind. The bread knife (serrated) seem's plenty sharp, but the edges on the others are not in anyway refined to their potential sharpness. Or at least I hope they have the potential to be sharpened better. It's going to take a little more than just "steeling" them. I don't want or need razor or surgical sharp, just real good and sharp. So I will find out how well they will sharpen, before I even use them anymore, and that really kind of sux coming right out of the box.
Don't get me wrong; the knives are still very usuable out of the box, they just don't live up to my expectations of being VERY sharp. Maybe all the hype about "chef sharp", being as sharp as they can get them at the factory, the mostly sharp reviews here, etc. set me up for disappointment.
Will have to write back on how well they sharpen and hold their edge. Until then I am having just a bit of regret.
Edit 12/21/11: Some minor sharpening got the edge that i wanted. They were easily sharpened and have kept their edge well since. No problems with rust whatsoever, but then I understand that the high carbon content in quality knives make them a bit more prone to rust and I have no problem washing and drying immediately after using, unlike some folks.
Deglon Oyster Knife
This is a good solid knife for opening oysters, but you should know that it's intended for opening oysters in the French style, from the side (instead of at the hinge). If you're looking to open oysters in what I'll venture to call the "normal" way you need a smaller tip like this other knife has Sani-Safe Commercial Cutlery, Oyster Knife, 4''Owned and lightly used the knife for 2.5 years, the blade broke. Used it about 3 times a year, so not great. Our previous knife was about 40 years old when the blade chipped (the Deglon snapped 1/4" from handle).I had great success with this shucker with all oysters except gulf monsters, for which this little guy does not produce enough heft/leverage. Handle design is brilliant, and blade behaves much like a boston style design. Just to put it simply, we have a lot of knives from a very wide price range.This is the knife I ALWAYS grab for general usage. I prefer it to knives we have that cost 10x as much.

NOT a chopper, not a heavy knife for butchery, but a great general usage veggie knife for the price.I used this knife professionally for 3 years until I lost it recently and I am buying another! I've seen it crash to the floor during many busy dinner rushes and it never took any damage (strength of a Global without the cost). The nakiri style is great for tight spaces or cramped cutting boards (its hard to stab yourself with it! :) Two other people I work with both bought this knife after using mine. Also, the handle is great for either hand and I like its antimicrobial properties.

This knife is my perfect veggie prep knife. I've been going through different styles (santoku, nakiri, Chinese cleavers, etc.) and have always had some beef with the various designs. Whether too small, too dull, too wide or just not comfortable, this knife beats them all.First, it's long enough. I have a nakiri that's an inch shorter and the Wasabi is perfect. It's also wide enough. A smaller blade is usually skinnier too and I love the width of the Wasabi. Not too wide as Chinese cleavers can be (though I still use a cleaver for large, rough cuts for veggie prep). Lastly, this blade is nice and sharp. It glides through every chunk of veg I have thrown at it.
Fit and finish is awesome and I really enjoy how it feels in the hand. I'll definitely be purchasing other varieties of the Wasabi line in the future. It's the perfect balance of features for the money that I have seen. I highly recommend.this is a very sharp knife. Used for first time to cut romaine and bitter melon. Almost no effort to cut cleanly and easily. Knife itself has more of the weight in the blade than the handle, not as "balanced" as other knives but in this case, it serves its' purpose very well. Sort of reminds me of the Chinese Cleaver that I used when I was a kid helping out cutting meat and vegetables, just not as heavy. Never tried this brand before. If the product line is this consistant, I would buy these. Have been using, and still love Henckels twin but those knives are pretty pricey. I will update should the this knife become dull or developes a problem, which I am not anticipating.

I just purchased this exact set not from Amazon but from a small Mennonite store. I've been looking for some good and I mean GOOD knives, and researching the Net and a number of chef magazines.As I pulled up to the little Mennonite store I noticed a sign stating they carried Rada Cutlery. I'd never even heard of it but I decided to check inside. Although the prices were slightly higher than Amazon offers I still thought they were low enough that the knives could not be of a high quality. One elderly Mennonite woman told me she owned the middle knife and that she loved it used it to butcher her chickens. That was a little icky, but I figured if it was good enough for that, I might as well try the set the price was right.
I am thrilled with the knives. I had to be careful with the parer it slipped through the potato skin so easily I was taking off more of the potato than I wanted. And the middle-sized knife slipped through bacon I was slicing (in a large chunk) as easily as butter.
Now I'm going to order more Rada knives to supplement my little set.

I've been looking for these knives for many, many years. I have had some Rada paring knives for over 20 years and liked them better than any knives I had. Through years of use and hundreds of sharpenings and after accidentally losing some of them at different places, I'd needed to replace them, but the brand name was not on the blades. Rada Cutlery, sharpened with the Rada sharpeners, are the sharpest knives I've ever used with routine sharpening. Their blades hold their edge and they slice easily and thinly every time. We're going to order more and replace the other knives we have and which we're always trying to sharpen and hone to a Rada edge. Although the handles of the larger knives are too small to provide me the feel I prefer in my hands (I have large hands), the size fits my wife's hands easily and she loves the feel. I am a knife junkie and love buying these when they are on sale. Most from Amazon don't come with any protection once I take them out of the box so these covers are perfect. They are nice and strong so I know the blades will be protected well. This is a nice large package with a variety of sizes. If you order this, inspect what you receive carefully. There must be poor quality control with the manufacturer, or these must be an old shipment of returns Amazon acquired somehow. I ordered this on a good day when the price was very reduced. Since then, I have been sent one set with rough edges to the blades, one set with the fork-tip knife from the larger set included instead of the Parmesan knife, and one set in which the handles were pitted and stained, also with rough edges. These are modern and full-sized, but I am beginning to think that even with all the replacements I'll never get a good set. I just keep trying because I got a really good price on the day I first ordered. Not sure why there are so many reviews praising the craftsmanship based on my experience. Also, the box is not attractive or gifty.Revised: If the quality is bad enough, it isn't worth it to pay the bargain price. Cheap garbage is still garbage. I tried four times because I got these for half-price the day of my order. The blades have rough edges that are going to pit, chip and rust. Every set had at least one, though most had two that were like this. Different sets had different amounts of serration on different blades. The handles in one set were tarnished a little, and another had scratches. The big issue with one set was that it had a knife that didn't belong: someone had swapped in one of the fork-tipped knives from the larger 5-item set. I thought if I had a replacement I might be able to make a good set with the best of the blades, but even with three sets in front of me I couldn't do it. True, I'm picky, but if you are only half as picky as I am these aren't going to please you either. Amazon has been great through the process with the returns and customer support, but I'm just giving up and will try something else. I don't know why others have rated these so highly; I don't think I'm crazy.This is a very nice set for the price, with a nice looking and well made assortment of quality stainless steel cheese knives and soft cheese spreader. But I did read the reviews before purchase and realized that the "Gift Box" is simply a thin cardboard enclosure with a thin plastic divider to hold the knives in place during shipping, maybe worth less than 30 cents. But the box will do until I add another slot in my flatware drawer to hold the set, and then it gets tossed.

I bought these for 14.99 as a lightning deal on Black Friday. I wasn't expecting much . . .but they turned out to be so nice. I get a lot of compliments on them. They are sleek looking and have great craftsmanship. Would pay up to $30 for these, and still consider a good deal.I would say the quality of the knives is good for the price but I'm surprised others consider the box a "quality gift box". The box is pictured above and looks better in pictures than in person. It is just cardboard with a flimsy red plastic liner that temporarily holds the knives. I'm happy that I went against those reviews and purchased. These knives are of exceptional quality. They are stylish, and a nice solid serving tool. I was surprised at the price I bought two sets for a little over $30 which gave me 6 knives. I purchased this knife about a year ago to clean fish. I can't stand a dull knife, and I have yet to find a knife at a Wal-Mart or similar store that will stay sharp for long or sharpen easily.This knife is exceptionally sharp, keeps an edge well, and is relatively easy to sharpen. I didn't realize most of my fishing holes were going to go dry when I ordered this knife, but I'm glad I did. I tried to catch and clean most of the fish out of my ponds before they went to waste, and I spent 3-4 days a week last summer cleaning fish. Bluegill, crappie, and bass are all a breeze. Even large bass (7+ pounds) I would not normally have kept were easy enough. I normally sharpened a little after each use, but the knife easily handled each days catch without going dull.
I was hesitant at first to spend this much on a knife. Now, I wish I had done this long ago.

I bought this knife because Cook's Illustrated, which is very reliable, rated it as the best paring knife they tested -even though paring knives can be had for over $100. They had also top rated the Forschner 8" chef's knife, after comparing it with forged knives costing many times as much. For those who watch their PBS television show, they really do use the Forschner knives.My experience with the paring knife has been very favorable. Although it's small and rather nondescript in appearance, I've used it to remove the silverskin from both beef and pork tenderloins far more efficiently than with any other knife I own, including a forged blade from a manufacturer with an excellent reputation and a high price. The stamped blade is easy to maneuver, and seems exceptionally sharp.
While the small handle might be a problem for people with large hands, the high quality of this knife, combined with its low price, make it worth trying for just about every home cook. Beyond that, if it's damaged, unlike the high priced paring knives that it competes with, it can be replaced without any feelings of angst. This is an exceptionally good knife at a remarkably low price. This little knife is easy to use, very sharp and stays sharp longer than most and sharpens very well This knife is pretty average. I had high hopes that it would be as stellar as the 8" chef's knife by Forschner, but it's very light and a little on the flimsy side. I've gone back to my Cutco paring knife that's 10 years old. This is a small, very sharp paring knife that's easy to use.
Because it's small, and the handle is narrow and light weight, the applications are limited to small and relatively soft items. The flexible blade is good for boning small items like individual pieces of chicken; it's also handy for working on jobs requiring a small blade such as coring strawberries.
I wouldn't recommend it when a stiffer blade is needed such as for cutting hard, or even semi-hard cheeses. This little paring knife recommended by ATK, does not disappoint. Fits nicely in the hand; thin, supple blade. Excellent price. Companion to the Chef's knife by the same maker--also a wonderful knife at a reasonable price.

These knives are fantastic. We have a complete set including the knife block that has 6 slots for steak knives. Unfortunately, most stores (ie Williams Sonoma) only sell the steak knives in sets of 4, which makes little sense to me. I finally found this product on Amazon and was thrilled they were sold in sets of 6. Wonderful product and cuts extremely well.The knives are wonderful, it makes cutting steak like cutting butter with a warm knife. Just what was needed to finish off the Wusthof knife block set we earlier purchased as a gift. Surprisingly, there are six slots for steak knives but are usually sold in sets of four. Buying a set of four and then purchasing the other two as individual items makes for an expensive proposition. Fortunately, the set of six became available again through Amazon. My wife is a pastry chef and bread maker. She is left handed and it made a perfect gift. She looks that she is spoiled with a beautifully made knife and her coworkers all lust over it!This bread knife feels solid. The blade does not flex like my old bread knife. The knife is balanced and sharp. I cut easily through light fluffy bread as well as through heavy crusty sour dough breads. I did not expect such a difference between my old serrated edge bread knife and this Shun Kershaw Bread knife. I like the left-handed version. The knife also looks great.
