Wusthof 12-Inch Sharpening Steel

Wusthof 12-Inch Sharpening SteelInitially I didn't understand the steel and what honing was. Even after I figured it out I didn't see the point until I ran into this incredible steel. Unlike the cheap little ones included with sets, this steel has a big enough diameter, long enough length, and incredible machining on the grooves to really effectively hone every time out. It also has an awesome molded handle and big chunky hanging ring (which you might need because a 12" steel will stick out of most blocks).

Why use a steel to hone? Stainless steel is ductile and the edge of a knife is a place where the steel is very very thin. In use the very edge will bend or fold over microscopically. Then, then next cut you make will be on what will be on the fold rather than on the sharp edge. These micro folds can be straightened out by the use of a Steel a process called "honing". Honing involves wiping the blade across a hard steel rod which has a large number of tiny parallel grooves cut in it. When the wiping motion is done like carving at the angle the edge is ground the steel literally unfolds the edge and gives the fine edge a micro ripple. In this way, steeling a sharp knife that has recently gone dull is like magic full sharpness is immediately restored. Over time, however, all this cutting and steeling will actually wear metal away from the edge, or some folds will become permanent and the edge itself will become dull and the knife will need to be sharpened.

"Steeling", or "honing" is emphatically NOT "sharpening". These are two fundamentally different knife care techniques. In short, the steel restores the edge as much as it can, without removing metal; and the sharpening actually removes metal to grind a new edge. Sharpening is done on an abrasive stone or a metal plate onto which diamond or other abrasive has been adhered. Sharpening actually removes metal so it actually reduces the life of the knife to a certain extent.

The big message here is to steel frequently (ideally every single time you use the knife right before you use it) and to sharpen infrequently (no more than once or twice a year). Chefs are always depicted holding the steel in the air pointing up and flicking the knife rapidly over it. In practice it is almost impossible to properly steel a knife this way. Hold the steel facing down with the tip pressed into your cutting board and cut down, pulling the knife towards you with a slicing motion, with your knife at the grind angle (10-15 degrees for Asian style and 20-25 degrees for Western) while the steel is stabilized rock solid. This way the steel is held rigidly vertical and the angle is easy to see. When you get the angle right you can feel the edge "bite" a little into the steel.

Since you should be using the steel frequently, I highly recommend you get the best steel you can. There are some very real differences in the machining of the grooves. You should also be aware that "diamond" or "sharpening" steels are for sharpening, NOT honing. The other big factor in choosing a steel is length. Get a big long one. Theoretically your steel should be 1-2" longer than your longest knife so a 9" steel ought to be fine if you have an 8" knife. In practice, the longer the steel, the more comfortable and easy it is to steel. I've tried honing an 8" knife with a 9" steel and you have to do two passes to get one stroke. Henkel's 12" steel is a best seller and a great value: J.A. Henckels Twin Pro S 12-Inch Honing Steel. I, personally, went with Wusthof's, which is much more expensive but is utterly exquisite and a dynamite pleasure to use: Wusthof 12 in. Sharpening Steel. Be aware that these big long 12" steels will stick out of most knife blocks. The excellent functionality is well worth the little bit of trouble of it sticking out a bit.

FYI the item reviewed is Wusthof's 4474 the 12" steel with modern square handle. 4474 is the item being sold here the photograph was correct until late May 2008, when the photograph of 4471 (a 12" Wusthof steel with an old fashioned beehive handle) was substituted. The 4471 is also excellent with a virtually identical steel. However I find the handle of 4474 more comfortable. Be aware that the photograph is not of the item on sale. To see 4474 link to

I was skeptical of how well this would improve cutting quality between stone sharpenings. Much to my surprise it really made a big difference in how well the my knife cut (Wusthof Classic chef knife). These are supposed to realign the microfine blade edge rather than remove material like a stone would. It will not replace stone sharpening. These are not recommended for the super hard Japanese knives as edge may chip.

I really like well made high quality tools like this. The large square metal bolster that is supported at all edges by the handles is a nice touch. This particular steel does have longitudinal ridges. Wuthof sharpening steels are noted for their hardness and longevity. I have yet to had a disappointment with a Wusthof product.

I hold the steel with the tip down on a heavy towel and stroke the sharp edge downward. Personally I would never steel with the knife edge toward my body.

I made a mistake and ordered the wrong item. This sharpener was listed with other similar items that were what I wanted and I didn't notice the description change as I placed the order. I've contacted CutleryAndBeyond and they've agreed to refund the purchase price. Vendor was quite helpful so, for now at least, all's well.

I've not yet received the refund. Should there be a problem, I'll add an appropriate follow-up comment.

Slitzer® 15-Pc. Cutlery Set with Wood Block

Slitzer® 15-Pc. Cutlery Set with Wood BlockMy parents have owned this set for years, and growing up and even now I use them when I'm at their place. I think they are good knives. Sturdy. We have never had a problem with them. Dishwasher safe. About the only problem was having to resharpen them, but what knives don't you have to resharpen after years of use? I am purchasing this set for myself.

I bought this set thinking I will have a variety of different knives to use when I cook. However, the knives began to rust within a month of use. I always dry my knives on the drying rack before putting them back into the wood block after washing, but they still rusted. The blades were too dull to be useful for chopping things like carrots and potatoes. Also, the wood block is huge and takes up a lot of space. If you have a small kitchen, you might want to consider other options.

Packing appeared as though the products were packaged individually and then thrown into a box that did not hold the items inside secure. Further, the knives arrived dull and the shears where broken.Lastly, I hand wash my knives and the black handles are already fading after 3 washes. Very disappointed with the quality and who really wants to support China anyways, I have a set from Chicago cutlery that are still not the best but way better than these.

Chroma Type 7-Piece Knife Set with Block

Chroma Type 7-Piece Knife Set with BlockLet me start by saying I was so excited to get these knives when I ordered them from Amazon. I had previously ordered the Chroma 301 Chinese Cleaver separately and I love it. So when Fed-Ex delivered this I tore open the box and visions of the gourmet meal I would be preparing that evening using these knives flashed through my head. As I lifted the box up into my lap to open the cardboard flap I head what sounded like 7 Chroma knives tossed into a spinning clothes dryer might sound like (Well... not quite that bad). To my dismay, I discovered all the knives were located in one small cardboard box. They were loose and each was individually protected by a thin bag and a thin cardboard sheath. Each knife also had a hard plastic knife tip protector but 5 of the seven had fallen off and their tips were free and exposed. In addition, two of the knives had lost their bags and cardboard sheath completely and looked like they had been rubbing together for an extended amount of time. They were scratched and the handle edges were rough. Upon closer inspection two other knives had rough scratched handle edges.

Now I know why they say don't buy your knives in a block set. The individual Chinese cleaver I ordered came in perfect condition in a beautiful black padded custom presentation box. It seems that all Chroma individual knives receive this nice extra touch. For the amount of money these knives cost in a block set they should arrive in pristine condition especially since the whole point of these knives is to display their sleek smooth stainless look.

One last note, another reviewer claimed that these knives are made in China. I searched high and low and found no conformation of this. The box does not state where they were made. The Chroma website conveniently says "Our knives are manufactured in the best factories and are made of the finest and strongest modern high-grade steel." It also says, "The handle of the Type 301 by F.A. Porsche is constructed of 18/10 stainless steel, and the blade is made of high-quality Japanese 301 steel. The blade of each knife is carefully sharpened by the hand of a master." If they were made in Japan like Shun or Global knives, I think they would say it. Judging from the quality of the block set I am thinking they may be made in China then finished and sharpened by a Japanese master.

Let's hope they fix the packaging in the near future, these knives really feel great in my hand and I hope to have a complete undamaged set soon. Thank you Amazon for having such a fair and responsible return policy.

These knives, and the block, are gorgeous and a joy to use. I'm more of a designer than a cook, but these beauties get compliments from my designer and foodie guests alike.

Zyliss Apple Divider

Zyliss Apple DividerThis is an excellent and attractive apple slicer that works as well or better than every other slicer I've had. Zyliss produces kitchen utensils that show real thoughtfulness in the design, and this utensil reflects the company's general commitment to that ideal. The only possible way to improve it might be to rubberize the handles (I think Oxo does this), but in my opinion such modifications have little marginal value while adding unnecessarily to the cost.

The color, by the way, is a nice way to brighten up one's kitchen. These days, I prefer some departures from a regimen of black, white, and stainless utensils.

I was excited when I received the slicer thinking it would end my frustration when eating apples (biting with upper dentures & cutting with arthritic hands). To my dismay I did not have the strength to force the slicer through the apple. Not the fault of the divider, just keep in mind if purchasing for younger child or older persons' use. My adult son used it without a problem.

When looking for an apple slicer we looked for one that was sturdy and functional. We have a variety of Zyliss products and knew from experience with those that Zyliss = Quality. We were not disappointed. With 5 bushel boxes of apples to process this divider made it easier. Last night my sweetheart made a delicious apple crisp!

didnt ever think about the diameter for larger apples.. but this Zyless Apple slicer is perfect for larger apples. I have another brand store bought that will only work for small and med apples.. this one will handle all sizes easily.

This seems to be a sturdy gadget. Well made and the blades are tough and sharp. My only complaint is that you have to place the apple somewhat on a low level to be able to get enough weight on it to slice. At least I do. I put it on a plate in the sink and in about three seconds the apple is cored and nicely sliced. Sure beats messing with a knife.

I feel it's a smart purchase if you enjoy fresh apples and want them sliced in perfect slices.

Deba-Style Flexible Thai Knife (#171), Kiwi

Deba-Style Flexible Thai Knife, KiwiI read about Kiwi knives on Reddit and then various blogs and decided to try a couple out. They're phenomenal... especially for the price! But the price here, (as of this writing, $13.89 + $6.25 shipping), is a lot more than you need to pay. Look for a Vietnamese grocery store in your area (or Thai or Chinese, probably, too) and you will find a variety of Kiwi knives available for sale. I paid $6 for this knife at a Vietnamese grocery store in Fort Worth, Texas.

Kiwi knives are known for both their effectiveness and their affordability. While they tend to dull rather quickly (depending on what type of work you are doing, and how often,) they can be sharpened just as easily. As a sushi chef, I (as well as many/most cooks and chefs in any given restaurant,) use this style of Kiwi knife for a lot of daily prep and various odd jobs, and they have always held up well.

Having said that, I wouldn't bother buying them on here, as this price (listed as $18.99 with Prime,) is quite literally ten times what I have paid for this type of knife at my local Asian markets. You can get them from other distributors on here for $13.89, but that's still far too much for what I've known for them to cost. So, while I highly recommend them, I would only purchase them here if you have no other options regarding availability.

Buy Deba-Style Flexible Thai Knife (#171), Kiwi Now

I'm a professional cook and I own knives that cost way way more than this knife, but I have a great fondness for Kiwi knives. Their thin metal takes an edge very well and holds it relatively well depending on what you use it on. This is strictly for vegetable or boneless meat and fish cutting. I have no experience with their cleaver-type knives, but the chef's style and the "vegetable cleaver" (flat edge, thin blade) are one of the best ways to get the job done. I purchased it online for convenience, but Kiwi knives are easily obtainable for several dollars less in your local Asian kitchen and/or food shop.

This is exactly what you should buy if you want an excellent value knife. Instead of picking up a whole set of heavy, dull, thunkers in plastic packaging in a superstore, get one of these and a cheap paring knife. Sharpen if if you know how or want to learn. This is the perfect knife to learn how to use a whetstone with. Throw it out and buy a new one if that's too intimidating.

One of the best knives you can get. It cuts and cuts. If you straighten the blade before every use, you will never go wrong with this knife. I would not use this knife to chop through bones (especially chicken bone) because the blade is really thin, but it will cut through cartilage without a problem.

Want Deba-Style Flexible Thai Knife (#171), Kiwi Discount?

This knife is my favorite, Cuts tomatoes, baguettes and fresh soft bread without squashing it, trims meat, cuts spare ribs, great for lettuce cabbage, fruit, everything. I does not hold an edge very well but you can easily restore the edge with a whet stone, or knife sharpener that usually comes in a carving set (don't know how it works with knife sharpening wheels or other gizmos). I give it as housewarming gifts. So do yourself a favor and try one, you will be happy and save money.

Swiss Army Brands 40133 Cimeter Knife, 12-Inch

Swiss Army Brands 40133 Cimeter Knife, 12-InchI have had one of these blades for years, bought it in a little knife shop down in Carmel for $60.00 that was 12 years ago. I have a friend whose a chef who covets my knife so I figured Id look on Amazon and unbelivably they had it and it was still $60.00. I know guns and knives pretty well and I would say that blade is worth between $150.00-$200.00 no problem. It also makes a fantastic fillet knife for large fish like White Sea Bass. I see the deckhands on the dive boats I frequent with a more comercial kithen knife white handle but same blade configuation.

I got this knife after being in MI and seeing all the charter boat aptins using is to cut up all the fish. I have never seen a knife just slide right though a 20lb samon without any effort. I have used other kifes and electric ones in the past. This putts all other knifes to shame. Lets just start with the fact this is a 12inch blade you might not need this but once you get used to it you can go through fish like nothing. I have also gotten the 8 inch breaking knife and another great knife. If you want to cut alot of meat and fast this is your knife. If you want an extremly sharp durable knife this si the knife.

Quikcut Paring Knife

Quikcut Paring KnifeI'm sure cutlery connoisseurs may raise an eyebrow at this knife, but for peeling potatoes and small jobs, it's just the best.

I've tried others' knives on many occasions, and often wished I'd brought my own because I can whip right through a pile of potatoes. I was raised using a peeler gadget for potatoes and never thought I'd want to switch, but I prefer the Pampered Chef paring knife.

Don't use it for big jobs--it's much too flimsy for that. While it's great for peeling potatoes, I don't usually slice or dice potatoes with it.

While this knife may be dishwasher safe, I always hand-wash mine and they have lasted a long time. I've purchased several of these over the years (every time I get invited to one of those parties, it seems, they're only a buck and change) and have given several away and have two in my drawer. I am browsing the catalog from a party this weekend and see they have a special deal in garnet to match my kitchen. Guess what I'm ordering? I just love these little knives!

September 2011 update:

While I still believe this is a good little paring knife for the price, I've found something I like better: Kuhn Rikon Piranha Swivel Peeler, Red.

I have used this knife for years and it is a small all purpose knife. It is sharp sharp sharp!!! My Aunt bought the first ones for everyone in the family and we have been using them ever since. They will retain the edge for quite a long time and for the price you can replace them as often as you would like so buy more than one.

This set is a piece of garbage. It has rusted where the handle meets the stainless steel and the pattern has faded right off. I contacted Pfaltzgraff about the problem and they had me return it and gave me a credit. This set is a total waste of money unless you only want to use it six months.

Shun Steel 9-Inch Slicing Knife

Shun Steel 9-Inch Slicing KnifeIf you are shopping for a Shun, I assume you are already familiar with their reputation for razor-sharp edges, so I will address this knife itself.

This slicing knife is a great addition to your set. I recently used it to carve up some beef roasts and I was able to carve paper-thin slices. I didn't experience too much sticking either, this may be due to the Damascus-style pattern that creates micro air-pockets. Therefore, I think this version without the scallops will do just fine.

The knife has a good length that's great for most roasts, a tip that makes it easy to maneuver and a sturdy construction that feels balanced and comfortable. The handle is sturdy and has a slight matte finish that keeps it from being too slippery.

On another note, I have seen this knife advertised on Amazon for about $60 (which is the price I bought it for). It was first listed at $110, then went down to $60, and now as of writing this review it is back up to $110. I am not sure if it's a supplier issue, but you should constantly monitor the prices of the Shuns sold on Amazon due to these fluctuations. In any event, I still think this knife is worth $110 and I believe you will like this knife as much as I have.

Perhaps not as good looking as the paka wood classic version, this knife is nevertheless a superb slicer -just what you'd expect from the first rate Shun knife manufacturers.

Zwilling J.A. Henckels MIYABI 7000MC Chutoh Mid Size Utility Knife

Zwilling J.A. Henckels MIYABI 7000MC Chutoh Mid Size Utility KnifeI own many different professional knives, so I have opportunity to compare them on a regular basis. I maintain my knives well and use them with good technique. If you chop vigorously and scrape the cutting board with the knife edge and hack through bones or hard objects regularly, then Japanese knives might not be for you. The beauty of the Japanese knives is that they cut so well you don't have to hack through anything.

The knife does the work and cuts cleanly. Up until the last 10 years i was always told that German steel was the best and i was quite content with my Wustof and Henkels/Zwilling knives...that was until i encountered Japanese steel. The Japanese manufacturing and knife design has proven superior for me in almost every way. They have an elegance and refinement that is without equal. I absolutely love my shun and miyabi knives. Upon researching different knife steels I came upon the crucible powdered metallurgy steels like MC66 and Cowry. It was then I started paying attention to Rockwell C hardness scale and sharpening angle. I found out that my German knives were sharpened at 22 degree angles and with a Rockwell C running in the upper 50's( which explains why I have to hone them after each use) by comparison the Japanese knives like Shun and Miyabi are sharpened at 12-14 degree angles which is a thinner cutting edge and the Rockwell C is normally between 60-62. Those need to be honed after a few weeks use. However, this Miyabi 7000mc is at 66. That translates into, first of all, the ability to make a scary sharp edge and second, holding that edge with proper use for a much longer time. They stay wickedly sharp for over a month. I can't speak more highly of any knife! These are fantastic! But watch out...they are probably much sharper than any other knife you have ever used. They can easily nick your fingers with even the slightest pressure. You have to have good knife technique or you will hurt yourself.

MSC Joie Spud Dude Potato Wavy Knife

MSC Joie Spud Dude Potato Wavy KnifeI was unsure about this little guy, because so many similar tools had bad reviews.

It arrived in great packaging, and is much better made than it looks in the pictures. When you actually try to cut potatoes with it, it makes the wavy pattern, perfectly, same with carrots. As long as you're looking to make thick slices (it doesn't really work for thin slices), this is a great tool.

Zyliss Paring Knife, Green

Zyliss Paring Knife, GreenThe knife blade is nice and sharp and the handle fits comfortably in the hand. However, the knife comes with a protective holder that I would love to be able to use to protect the blade. The holder is so poorly designed that I cut myself severely the first time I attempted to insert the knife into it. If you buy this product, forget about trying to protect the blade, and just use the knife alone.Zyliss Paring Knife, Green

This knife is perfect for just about any precise cutting task. The handle is grippy, and easy to hold. The blade is somewhat thin, but not so thin that it can't cut through carrots with ease. Very balanced weight. All around decent knife for the money, and the design is nice. I prefer not to use the plastic sheath, primarily to prevent premature blade-dulling. As another reviewer noted, the stylized sheath has an opening near the tip that exposes the blade during insertion. If the sheath is held improperly, you can easily slice yourself. However, the sheath is handy, and I will keep it to protect the blade during transport. I could easily see myself buying another primarily for camping trips.

Update: First off, don't listen to me. I am not a chef. I actually use this knife often and I use it for everything from opening packages to stirring soup to flipping burgers. I use one utensil if I can so I don't have as many dishes to wash. Anyway, this knife, despite my earlier comments (below), is a good, sharp and useful item. I feel my 3-stars is a bit harsh... but then again, this isn't Japanese damascus from a master either.

Previous comments: I like knives and I'm Swiss. This was a spontaneous purchase. I am using it quite a bit... since it's affordable and easily sharpened it might even spread some peanut butter since it seems to be out of the drawer more than other knives.

That being said... It was not perfectly sharpened on arrival. Within a week it had a small knick in it. I resharpened it then it's nice.. but didn't hold it's edge long. 3-stars.

This Zyliss has become somewhat of a utility knife in our kitchen since the other blades I ordered the same day are much sharper, hold a refined edge better and seem precious compared to this. I'd like to give it 4-stars for the superior handle and cool guard... but a knife is really about cutting performance.

Update: There's nothing more to add. It was sub-$10 and it's very handy. I do think there are better. I ordered a Mora for outdoor use that is 10X the knife this is... but I also ordered a few kitchen blades that are much nicer.. in the same price range.

Would I buy another of this same knife? 3-stars... unlikely.

Kuhn Rikon Small 10-1/2-Inch Wedge Serving Knife

Kuhn Rikon Small 10-1/2-Inch Wedge Serving Knife, PurpleThis seemed gimmicky, but I was game to try it with the holiday season coming up and many pies to serve. Over time I've collected a number of pie and cake servers, but none really do as well as I'd like. The advantages of this server caught my attention so I decided to give it a try and I'm quite pleased with it.

The serrated blade does a good job in cutting a slice. While you may not need that sharp blade for a pumpkin pie, I found it's really a help for apple pie and vegetable quiche both of which can have firmer textured pieces that need to be bisected when cutting a slice. Because the blade part is offset, I found I can lower the entire blade into the pie plate to effectively cut the slice cleanly when needed. The blade itself is 5 1/4" long and works even with the large pie plates I use. The drop from the lowest part of the handle to bottom of the blade when in the cutting position is 2" and the wide part of the blade itself is 2 1/2". That does a good job of accommodating my thick apple pie. The blade offset when you hold the server flat to lift the cut slice from the pie plate is 1" from handle to blade so it gets into my pie plates effectively. The blade is somewhat flexible so I can get it down under the slice with minimum disruption to the bottom crust.

The handle is comfortable to hold and because the blade is sharp, it's nice to have the blade guard for storage. Although I haven't used this server on cake, I don't know why it wouldn't be good for that too. With the sharp blade you wouldn't have to saw and disrupt the frosting, just cut straight down to the cake plate.

I'm left-handed so I'm using the server backwards from how most people would, but it still works fine. I like having both the cutting and serving activities married into one tool (less to wash and take to gatherings). I'm pleased with this server and would rebuy.

Dynatec Expand A Drawer/ Cutlery Tray

Dynatec Expand A Drawer/ Cutlery TrayThis item would have been perfect for my cutlery drawer! Except that in the product description it says this item is "about 16 inches long" when it is actually over 17 inches long.... my kitchen drawer is 16.5 inches long. The other dimensions were true to product.

The plastic for this drawer was cheap and very thin. If you're expecting rubbermaid-type thicker construction you will be disappointed.

This product is exactly as described. It is easy to clean and is, of course, expandable. When the two expandable sides are closed someone who didn't know better probably wouldn't even notice they were there, but of course most people AREN'T going to buy this to keep it closed. I have a very wide but shallow cutlery drawer so I have both sides expanded and still have a couple inches on either side (not normal, I assure you). Some people may only be able to expand both sides an inch or so, but rather than have two small compartments on either side it is better to expand only one side as far as you can so that kitchen utinsels fit more easily.

I expect this product to last a long time and will probably buy more, one for one of my desk drawers and all those pens, pencils, highlighters, etc. and I may buy a couple to stack under the sink in my bathroom since there's NOT a lot of room in my bathroom for anything, but of course I have A LOT of makeup, makeup brushes, lotions, sprays, nail polishes, cotton balls, Q-Tips, etc. that could all use some organization.

This cutlery divider is not bad for the price but I was not impressed with the expansion sides. You simply slide them out to the left or right. The expansion sides have notches at the top and bottom that are supposed to serve as "stops" to set the amount of expansion you want. Unfortunately, these notches are so shallow that they don't hold the position worth a darn. Once you set the size you want, I recommend some white duct tape to hold them in place.

What a great product! Cleans easily; fits in the drawer. Can also use in the bathroom to organize things, that skinny drawer in your dresser, and tools and such in the kitchen junk drawer. Silverware trays are so handy. These are quite sturdy and clean up easily.
