Kuhn Rikon Julienne Peeler with Blade Protector, Stainless Steel HandleI can't say enough good things about this julienne peeler. I first bought an Oxo julienne peeler, and it was really a piece of junk. I used it twice and saw that it was steadily going downhill from the first use (the little tines started bending right at the first usage when only julienning a carrot!), so I returned it right away. I had remembered seeing this much more expensive Kuhn Rikon julienne peeler with much better reviews and decided to give it a chance. Oh my goodness, the difference is amazing. It performs so much better, and I've now used it several times and the tines have not moved a bit out of position. I love the nice all-over stainless steel design. Very functional, beautiful, and looks like it will be very durable also. WELL WORTH the extra money! Oh, I almost forgot to mention, I also used it on zucchini and didn't have any trouble. I took a little bit lighter approach to the zucchini than I would with a carrot since it is a softer vegetable. The way I avoid hurting my fingers is to lay the vegetable on the cutting board and spear one end with a fork. Hold the vegetable by the fork and then julienne away!

Now, to be perfectly frank, I like this peeler. However, it does merit a little extra finger watching when using. I won't call myself an expert cook by any means, but I know my way around a kitchen.

Using this peeler I've managed to cut myself quite a few times. It's not for lack care it just slips sometimes and the sharp, knife-like tines that make the julienne cuts very easily can slide and julienne your fingers or the area between thumb and forefinger.

Again, it's a good piece to have in the kitchen. It just merits a little care in its use.

I julienne lots of carrots so this works great! Seems like there's a bit of a trick to using it w/o having a clump on bottom where all the julienne pieces stick. It depends on how you use it. I was able to mess around with it and get julienne strips no problem. Recommended purchase, am buying several more for family members.

Nice sturdy peeler. Very sharp. It looks like it would last for years to come. The only down size is the Julienne size is a little too thin for Thai papaya salad. I had to return this and got the Kiwi Pro Slice Peeler (perfect size for papaya salad). I found the Kiwi peeler at a local Asian supermarket for 3 bucks.

I love julienned veges, but when dealing with just one carrot (eg for garnish) it seems a tad excessive to assemble a mandoline then do the cleanup (let alone pull out the food processor). This little gadget solves that problem perfectly. I've found the best way with carrots is to peel and trim both ends, then julienne one half of the carrot (working middle to end, rotating a quarter every cut), until you end up with a thin scrawny core attached to the rest of the carrot, which then becomes the handle to julienne the other half of the carrot. I end up discarding the core no real tragedy there since the core is usually a little bitter (and if not, hey, I'll just eat it).

Wusthof blade guard 10 cooksI have had no trouble with this protector. I put it on my knife, and it stays there. Note that I am not tossing this into a bag and carrying it around, but, it fits my 10" knife and holds firm as it should. I expect that this size would not work well on a smaller knife, so, be sure to purchase the correct size.

So, if your purpose is primarily storage to sit around, I can say that it works well for me. The knife goes in and comes out easily.

The felt inside is easy on the knife and nicely cushions a global chef's knife. However, if it ever gets dirty (and what doesn't get in a kitchen), I see no way of properly cleaning this device nor did it come with any cleaning instructions. So, it seems like it has a built in limited life.

edit: -1 star after original review because my knife easily slips out of this when it is my drawer, defeating the purpose of the knife protector.

I really have to wonder about the review that says the Wusthof Blade Guard falls off the knife. Certainly not my experience! It slides easily onto my Dexter-Russell Chinese Cleaver (8" x 3 1/4), stays put, doesn't scratch the knife thanks to the velvet lining, protects the edge from damage, and avoids accidental cuts when rummaging in the drawer where I keep the cleaver. What more could anyone expect from this product?

I LOVE this lightweight cover! My only complaint is that it is much longer than the blade of my knife. It's soft on the inside which helps wick any moisture I may have missed when drying, and it feels sturdy even though it's thin.

Round End Grain Butcher Block

Catskill Craftsmen 14-Inch Round Slab with FeetWonderful! The height of it is perfect for our counters which are low to us (we're tall), so it makes it more ergonomic for us.

Yes, it's very heavy, but I don't see that as a negative. I was looking for a substantial one. I just bring my pans to the board to unload the food. I would not bother trying to carry the board across the kitchen. It doesn't move on your counter even remotely and it looks beautiful.

Make sure you season this board with mineral oil and paraffin before use so it doesn't absorb any odors or bacteria. Here's how I do it:

In a double broiler (or a bowl over a pot of boiling water), melt 10 tablespoons of mineral oil and about 3T of paraffin (comes in a block at the grocery store) until the paraffin is completely melted. Don't melt it directly over heat, as the paraffin has the potential of being flammable.

Immediately after you remove it from the heat, pour 1/2 on the cutting board and quickly--in the direction of the grain and in long strokes--rub it in with a lint-free cloth. I put 3 thin coats on mine and water beads like a freshly waxed car :). Let it stand overnight and buff with a soft cloth and you're good to go.

I tried doing strictly mineral oil and I ended up having to remove the feet, drill holes and attach the feet to the opposite side for use due to the odors that I couldn't get rid of on the side I was using. I would strongly suggest using paraffin; it's wonderful and won't hurt you.

I love this board! I coveted my father's for years before finally taking the plunge and buying my own. It is a great height, adding just the right amount for comfortable cutting. I did remove the feet and just put the small plastic counter savers back on. I found that inch made a world of difference (I am just 5'5").

In time, the cutting board starts to show cuts and nicks and slices in the wood. The more it is used, the more rustic and pleasing it is to the eye. I am so glad I bought this!

Recently moved out on my own and started to buy my own things for my apartment and soon realized that plastic cutting boards are not the best option. I decided to search on amazon and came across the Catskill 15.5 inch Round slab (Catskill Craftsmen Wood End Grain Round Cutting Slab with Feet) but I thought it was too big and pricey for me so I kept searching and I found this gem. Not only is it cheaper, it is only 1.5 inches smaller in diameter and only 1/4 inch smaller in the thickness so I purchased this based on the good reviews of the 15.5 inch slab. Same brand, same quality! The difference in size versus the amount of money saved is definitely a plus! Get this one!

I am really pleased with this cutting board. The feet really grabs onto the counter top and doesn't move while I'm chopping away; it's perfect for chopping up vegetables and what-not. It looks great in my kitchen, I leave it out on the counter top as if its a decorative piece haha. I followed the recommendation given by another reviewer on the 15.5 Catskill slab. I used the paraffin wax and mineral oil mixture to treat the board before use and will continue everyday for the first week, then once a month, and then whenever needed :)

Highly recommend this cutting board, I love it!

Just be careful when unlocking, the spring causes the two halves to separate. You could end up dropping it on your foot which would not be good.

Shun DM0766 Classic Western Chef's Knife, 8-Inch

Shun DM0766 Classic Western Chef's Knife, 8-InchI absolutely love this knife. I have owned this for about 5 months now.

Yes, it is extremely sharp.

It is my "go-to" for prep work. I mostly use it for large-quantity vegetable prep, but it is heavy (and sharp!) enough to break down and cube large cuts of meat as well. The wider blade of this Western-style Chef's knife is nice for the "chop & scoop" move.

It feels great in my hand and I love the balance and weight of it. It's easy to handle and maneuver. It has held up very well so far with absolutely no issues.

In my opinion this is a must-have when building a set of quality kitchen knives.

My general thoughts on Shun knives:

I have chosen switch from my German Wusthof and Henckels I've been collecting since college and started building a set of Shuns. In doing so, I've noticed a few things:

Firstly, they are absolutely stunning to look at. If I'm honest, it is a large part of why I love these. Superficial, I know, but when people come over for dinner, they actually notice and compliment them. You won't get the same reaction with a Wusthof.

Practically, though:

I prefer the D-shaped handles of the Shun. It's comfortable for both the "hammer" and "pinch grip".

The Shuns are literally razor-sharp. These really slice through things quite effortlessly. The angle on the Japanese knives is different than on German steel. If new to Shun, take some time to familiarize yourself with this fact.

The Damascas steel is extremely hard, and these knives are incredibly well-made.

How I simplify the comparison:

The Germans engineer some amazing things, and their cutlery is world-class. There really isn't a task that the Shun does that a Wusthof can't.

It's just that the Shuns do it with such precision and beauty. I am extremely pleased with my set of Shuns and I absolutely consider them an upgrade to their German counterparts.

As with anything of value, take care of them. Always hand wash and never put in the dishwasher; and always store them appropriately. The limited lifetime warranty is great, and Shun offers free knife sharpening (aside from shipping costs).

Toastmaster 6102 Electric Carving Knife

Toastmaster 6102 Electric Carving KnifeOkay, I bought for the price. And it is effective enough. But it is very clumsy and unergonomic, so that after a couple minutes of use it is difficult to handle any longer. The main problems are: Balance of weight, and the switch.

First, the switch: Because it is a cheap push-in button, which must be constantly depressed to keep the knife on, you lose optimum control quickly. The handle is badly placed for this, as your thumb must always be on TOP of the handle and forward toward the front of it, but you can't hold your hand up there because your wrist angle will be completely wrong for cutting. In addition, keeping that button depressed is difficult not only because it does require a constant application of pressure at a different direction from both the grasp and the application of the knife, but because the button sinks deep into the handle, so your thumb is inside the handle as you're trying to hold and control the knife: Quick cramp. Moreover, as you're pushing it in, if the food you're cutting is moist (like a turkey), juices may run onto the handle, your thumb--and into the hole into which you're pressing the button. NOT safe. A couple times I've wondered whether that shooting pain in my thumb was from nerve torture or electric shock; either way, it wasn't good.

Then the weight distribution of the knife is not very good. Look at the huge bulk of the motor--and then look at where the handle is located, and how it is designed. There's no way to hold this at a proper angle with the handle shaped as it is. Add in the need to be depressing the power button as you're holding it awkwardly, and...

2 stars for effectiveness; minus 3 for bad functional design.

This knife was purchased for us as a wedding gift and we've used it for 10 years. Not all the time, mind you, but for special occasions like Thanksgiving. It's always worked well, never jammed, and it just slices through a turkey like it was butter. We've had nothing but good to say about this knife and for the money, well, it's hard to go wrong! But, if you are looking for something to use more consistently, I would definitely recommend a better brand because I honestly don't think this one would hold up well under a lot of use.

The bit at the end of the blades get hung up in my Presto slicing guide as the blades are too short; further, the switch is extremely temperamental and only works if you move your thumb around a lot. I'd return it, if the postage, packaging and trip to post office were worth it + trying to dig up original cash receipt! These people do NOT want return business! (They've been bought by Salton, so they use this brand for junk)

The Toastmaster electric knife is great, especially for adults with small hands. Most of the current models of other electric knives don't have a handle to grasp; and because the outside of the knife is smooth, it is quite slippery. Thus, it is difficult to grasp the knife. The Toastmaster's handle makes for easy holding during use.

However, all the manufacturers would be wise to lengthen the knives to the size they were decades ago and charge a few more bucks.

This is the biggest drawback of the Toastmaster -it's blades are shorter than other models.

I received my shipment in record speed timing! Brand new, still in the wrapper. Works beautifully! Although I must confess, I'm using it to cut foam wedges (up to 8 " thick) for upholstery cushions. It works perfectly, doesn't get hot after long non-stop cutting. Excellent clean cuts.

TruBamboo Bermuda Collection 2-Tone Cutting Board with Built-In Ceramic Knife Sharpener and Dual HandlesI am a serious gourmet cook who has used just about every type of cutting board on the market, and as far as bamboo goes, TruBamboo is the best. In the more pretentious days of my youth, I tended to use those massive, block style cutting boards almost exclusively (the kind with the cut grain of the wood facing up that cost about a year's salary), because if performance is all you care about, they are really hard to beat. Later, however, I realized that if you are NOT a chef in a large restaraunt who will be using them all day long and who has plenty of underlings to lug them down to your industrial-sized sink and clean them up at the end of the night, they're really not worth the trouble. So, when I was tired of expending as much effort cleaning my cutting boards as preparing my food, I started turning to lighter, more reasonably sized versions for daily use.

It didn't take long, however, for me to realize that the majority of those lighter boards were pretty flimsy and short-lived. Yes, they were easier to clean and store, but with daily use, they never lasted longer than a year before they started to crack and warp. And they would start to look "washed-out" and unattractive long, long before that happened--really within the first month. I experienced this phenomenon with every slab wood cutting board (bamboo or otherwise) I have ever owned, and I really did not think there was a way around it until I bought some Tru Bamboo boards.

I had my first set for five years with absolutely no splitting, cracking, or warping. They are strong, attractive, water-resistant, and durable, and with proper oiling even manage to resist fading. When my first set was carted off by my brother after an extended house visit, I wanted to buy some more, but didn't want to spend $45 at the TruBamboo website. So I was thrilled to find them here on Amazon for so much less. I am sure they will last me for years to come.

One note of caution, though. If you want to get years of use out of these boards, you MUST follow the manufacturer's directions for priming them before use. This is basically just the application of a food-grade mineral oil (you can get it at the drugstore for a dollar or two) to the boards every day for a week. The oil soaks into the boards, improves the texture, and makes them much more durable. And before you ask, yes, I have tried this process with cheaper bamboo cutting boards, and it just doesn't give the same results. Maybe it has something to do with TruBamboo's curing process. Whatever, it is, it works!

I needed a good knife for cutting veggies and meats and decided I didn't want to spend a fortune, so I gave this knife a try. I'm satisfied and a bit surprised how well it works in the kitchen, plus it has a lifetime warranty against dullness. Yes there are better and more expensive knives, but I didn't need another 100.00 knife. For the money I'm happy on this purchase. It's well contructed and sturdy. The all metal construction makes it easy to clean.

These are amazing. I bought 2 of them, and a dozen steak knives from ginsu as well. This particular knife is sold alone, and the matching steak knives come in packs of 4, for around $20.00 on amazon. They are the best knives I've ever owned, and all my friends with big expensive sets got nothing on me. All together I got 14 incredible knives for under $80.00, and couldn't recommend them highly enough. Simply the best!!!
