Chicago Cutlery Landmark 12-Piece Knife Set with BlockLike another reviewer, I was swayed by the recommendations of CR. Unlike several of the other reviewers, I have not yet experienced the problems encountered by them. So far, no rust spots, but I hand wash & dry immediately after use. When the set arrived the block, while not exceptional, was undamaged, and again, so far, the guides have not come loose. Perhaps customer complaints have led to a resolution to this problem?

Having never had a "real" set of knives to compare these to makes a ranking difficult. However, I am satisfied for the return on the money I spent. On a further, note, my daughter, who is in culinary school, stated that these knives are a little on the lightweight side, but the balance (feel) appears good, and that they cut very well.

UPDATE: I've had this set a year now. So far no problems and I am very satisfied with my purchase. I've had no rust: I DON'T put 'em in the dishwasher; I hand wash & dry immediately. I still hold to my initial assessment: This set is a good, not great, value for the money.

I like the knives. The sharpener works well. These are hand-wash-only knives. Take good care of them and they will take good care of you.

For $100+ I was surpised that they were Chinese made. The block is ok not up to German, American or Japanese/Korean standards (slight imperfections). The knives are well designed and with proper care sharp and very good to work with.

I would have preferred American Made (Chicago cutlery used to be 100% American Made) but that would probably have been 3-5x the price.

Overall I am happy with the knives and will tolerate the imperfect block with it.

They were great, until I washed them. Now they have little brown spots all over them. It looks like rust to me. Since you kind of need to wash your knives now and again, I would say to avoid these. Unless you're looking for a good, rusty knife, then they're the tops.

After revewing knife sets and checking CR recommendations I decided to purchase this set. CR said that Chicago cutlery was the way to go if you do not want to spend a small fortune on knifes that were still of decent quality.

This is the first time I buy something that did not have a review and the first time I write a review because I was so upset with the quality. The knife are not sharp, and they rust and the block is cumbersome and the inserts that hold the knifes come out it was actually missing one when it arrived.

I hastened to open it and set it up before I noticed, otherwise, if I still had the box, I would have returned it.

This knife set for a new product, is very diappointing. I'm returning mine. Out of the box it looked cheap. I agree with other reviewer that the little plastic inserts on the block don't stay in. You have to peal if off the knife everytime you pull a knife out, to put it back on the block-CC needs to try some glue to hold them in. CC makes much nicer sets for less money-this would be a hassle to use to use and why pay more a poorer set?

This sharpening steel was by far the lowest quality product I have ever ordered. The rod was not even round, as there were dimples along the body where apparently the grinding process to get it round never even touched. This produced a very uneven surface that was at one point fine, then coarse, then fine again which would play hob with any knife edge.... not to mention the changing of angles as the knife moved down the rod. Nor was the rod straight. It looked as if the rod was warped in the manufacturing process. It's too bad because this sharpening rod is a great idea that could have worked very well, but the quality and manufacturing process was the worst I've seen to date and the rod I received was totally unusable. A sad reflection on how cheap this coutry has become.

However, Amazon was very helpful and polite, and made arrangements for a return and complete refund.

Twin Four Star 2.75' ParerWe have the rest of the set of these knives they're the real deal, although don't loose them (as we did) as replacing the individual knives is expensive. The rest of the ones in the set have held up very well under daily use and infrequent maintenance or sharpening. We don't put them in the dishwasher (duh) and they hold their edge very well. I like the balance of this knife, and the curve is the right shape. Add to the balance a nice handle shape and the feel is great. The steel is a little too hard, though, making sharpening more difficult; but not impossible.

My two complaints are these: First, the blade is too thick so maintaining sharpness is difficult, and the blade has to be held at a very slight angle for fine slicing. Second, the handle, thought comfortable, is of plastic, which lends a cheapness to this knife.

Always look for the double-man symbol when buying Henckels knives, in my opinion. I believe this signifies manufacturing in Germany as opposed to the single-man made in Spain. Excellent blades, hand grips, and overall durability.

I originally bought the 11-piece Twin Signature set iwth the four steak knives. this utility knife does not come in that set, but there's plenty of slots open for additions. I purchased this knife a couple of weeks ago when seeing the knife in my son's Twin Signature set I got him for Christmas. It has become my favorite and most useful knife of all. It makes me think of the 8" chef's knife made into a 6" knife. It's great for trimming the fat off a tri-tip roast and is easier to handle than the 8" chef's knife while doing this task. It's perfect for slicing vegetables or fruit or anything else (except bread). As it is a Twin Signature, it's a sharp, quality knife, and extremely useful to boot.

Wusthof Classic 10-Inch Wide Cook's Knife

Wusthof Classic 10-Inch Wide Cook's KnifeThis is a great knife, which I happen to think is well balanced and offers a lot of stability.

It is however a very large knife which some might find unwieldy or too heavy. It is significantly bigger than the standard Classic 10" chef's knife.

More importantly, because of the knifes height (width), the blade itself is very wide and would not fit in any standard knife block I could find. In the end I bought the super knife block from Williams-Sonoma and took a router to widen the cleaver slot.

I must say this is one fantastic knife. It is the knife I usually use when prepping a meal (sandwiches don't count). When I purchase a knife, I always personally sharpen it, so I can't really speak for the factory edge, but it accepts and holds an edge wonderfully. Having the extra wide knife (along with added heft) has more of a curve to it allowing for an easy chopping motion. I have purchased Henckel Pro S in the past and, after noticing a couple of flaws that passed their QC in my expensive knives, I will never purchase one without personally inspecting it first. Wusthof has much better QC so I have no problem ordering them through the mail.

FYI-This knife needs a large cutting board and a serious knife block to hold it. I personally use the Wusthof 25-slot "mega" block and it fits in all three of the top chef knife positions. Overall this knive is an investment, but you will love it!

Don't let the size or price intimidate you, this is a great knife for the kitchen. I'd been using an 8-inch chef's knife for years because that's what came in a set. But it left a lot to be desired for chopping up even medium size quantities of food. This 10-inch Wusthof has been one of the best upgrades for our kitchen.

The handle feels just right and the balance is superb. The shape of the blade is perfect for a rocking motion that lets you quickly chop and mince. Of course the quality of the steel is legendary so this knife holds an edge and will last. Considering how frequently this knife gets used in the kitchen, it's a great investment.

The right chef's knife for you is a matter of personal preference, and with knives first impressions are not always lasting. You may be tempted to choose a lighter sleeker model. The size and heft of this knife may be a bit off putting at first. But if you are committed to using correct technique, you will soon fall in love with this blade for those very same reasons. While a cook might reach for this knife out of habit for any number of chores including those for which it was not designed, most often it will be used to chop stuff. This is the original food processor.

With your fingers curled away from the blade the knuckles of your holding hand confidently ride the wide flat surface of this blade. Meanwhile the knuckles of your knife hand are well clear of the cutting board. For greater comfort, I have ever so slightly relieved the edges of the bolster, but I have never owned a knife (with a bolster) that didn't benefit from the same treatment. The blade's ample mass keeps it steadily on line without a hint of flex or wobbles. Because the knife adds its own heft to the down stroke, you will not have to push down into it with the same forces you would need on another knife. This makes it safer. At 58C on the Rockwell scale, the chrome moly steel in this blade is an excellent hardness to take an edge keen enough to shave with and strong enough to chop wood. Also, it doesn't turn colors like older Soligen steel knives.

When the chopping is done, a cook always faces the same annoying choice, slide the pile up on the face of the blade to transfer it to the bowl or pan or reach for a dough blade. Little pile, use the knife, big pile reaches for the dough blade. While this knife does not solve that problem as well as a Chinese cleaver, it does give you just enough more surface that frequently you are pleasantly aware that you just beat the odds. This blade is guaranteed for life. When the terms of that agreement run out, you will still be glad you chose this knife.

I think this knife doesn't actually cut the food, so much as it intimidates it. The food looks up, sees this massive, wickedly sharp blade approaching, and leaps out of the way at the last possible moment. That's my best guess as to how this knife cuts so effortlessly.

Or I guess it could be the fact that blade takes and holds an edge like a dream, allowing the significant weight of this very large knife to just drop the blade through whatever you happen to put under it. Whatever. The bottom line is you don't have to exert any effort to cut you basically just steer, and the knife does all the work. Which is exactly as it should be.

I've had this knife for about 6 months, and use it almost daily, primarily for cutting up fruits such as pineapple, watermelon, large papayas, peaches, etc. Cutting the rind off a pineapple does require a tiny bit of effort, but otherwise, even a good size watermelon cleaves itself out of the way when it sees this beastie coming.

The wide blade is great for transferring food from the cutting board. Plus it adds that much extra weight, allowing the knife to do that much more of the work for you. I also find the width makes it easier to keep the blade against the fingers of my guiding hand, which makes me feel safer/more confident.

The length enables you to cut through small watermelons, large papayas and personal size pizzas with just one stroke. Sweet! The length also means that much more curve, meaning you can cut more and larger items without lifting the tip off the board. Also sweet!

If had one tiny complaint, it's that the length means the tip of the knife is quite far from your hand, so delicate strokes with the tip, e.g. to cut a blemish out of a piece of fruit, are a little awkward. I've gotten used to it, but it's taken some practice. However, since a 10" wide body knife isn't primarily designed for delicate tip work, I certainly won't deduct for that.

I have a Furi TechEdge Pro Knife Sharpening System. It's a great system, which I love to use. But I've only had to hone this knife's edge 2 or maybe 3 times in 6 months of almost daily use. Granted, I'm only cutting fruits and vegetables on a good quality bamboo cutting board. Still, that's pretty good edge-holding.

You really shouldn't buy a knife of this size, or in this price range, without at least holding it. How a particular knife will feel in your hand is unpredictable, particularly one this large and weighty. But I already knew I liked the Wüsthof Classic line, so I took a chance and bought this from Amazon without ever holding it. And I'm very glad I have it. I love this knife!

Victorinox Cutlery 6-Inch Straight Boning Knife, Black Fibrox HandleI grind my own burgers from roasts so I can have one rare or medium-rare without worrying about that nasty e coli, and I also like to butterfly chicken before grilling it because it makes it much easier to cook it evenly. Both of these tasks are made so much easier with a proper boning knife.

I have a full set of Henkel 4-stars and also some of their very fine Twin-star knives, but this is an exceptional knife for a price of less than $20.00. It was delivered extremely sharp, and the integrated semisoft plastic grip is non-slip, which is very important from the standpoint of safety. In fact, I actually think it is a safer grip than the much more expensive Henkels if you are cutting something wet and messy, as raw meat always is. I would never put a sharp knife in my dishwasher, but this knife is very easy to clean in warm soapy water after using it to cut meat or poultry. I bought this knife because it was the top-rated boning knife in Cooks Illustrated, and as usual, their recommendations are very much on the money. This is my second Victorinox -the other being a 12" slicer, and both are made from excellent steel with good grips, and are highly stain resistant and easy to clean and sharpen.

I suggest if you are working with something (like poultry) that is very slick, you consider using a washeable kevlar or steel knit glove to grip the surface. This knife came as sharp as any I've ever purchased, and just touching the blade to your skin can cut your skin so finely you can't feel it, and who wants to get even organic poultry or meat drippings on an open wound?

If you are considering a wedding present for someone just starting out who doesn't have a lot of money but wants to work with quality tools, a Victorinox set is a great starter set of knives.

This knife was a recommended item at America's Test Kitchen. I use it a lot as it is a great "filleting" knife,

The price was "friendly" compared to the big brand names.

Zhen Japanese Damascus 6.5" Light Cleaver Chopping Knife set

Zhen Japanese Damascus 6.5' Light Cleaver Chopping Knife setWe have been using cheap cleavers for awhile and now want to upgrade to a higher end one. After some research, we picked this one since it's priced similar to high-end German knives but with better Damascus steel imported from Japan. Plus, we like to support our folks since we are Chinese and this is made in Taiwan. This is also my first Amazon review.

I don't have a Shun cleaver but do have two paring knives made by Shun. Putting this cleaver on the side of the Shun, you can see the devil is in the details.

You can immediately notice: the Shun knives have flawless finishes throughout, the surface has higher gloss with even dragon pattern. The Zhen has less shine, the alternating pattern is also nice but appears not as evenly distributed.

The craftsmanship: as another reviewer of the Zhen 8" cleaver pointed out, the attachment of the handle to the rear of the bolster is not as smooth. There is even maybe a tiny gap on the bottom side. There are multiple noticeable scratches on the blade, especially on the surface between the blade and bolster transition tiny scratch pattern makes you feel this part was not well polished. There is a rather deep scratch about 5 mm long on the edge of the end cap of the handle. Also, I noted the burrs a few strokes on a steel easily took care of it; however, I should not have to do this with a new knife, especially one with a price tag considered expensive for most people.

One thing I don't understand, this one claims to have 67 layers, but Shun claims only 16 layers on each side. I counted the coarse lines on the blade: both have 15 lines. So I assume they have same number of layers.

Again, none of the above affects the usability of the knife. It's light, thin and razor sharp, perfect for Asians with smaller hands. With the material used, I expect it to perform much better than the cheaper cleavers we have been using. However, at this price, the company really should pay more attention to the details to be able to put this side by side with the higher-end German and Japanese made knives (think about someone wants to give this as a wedding gift, appearance will be as important as function). The minors flaws mentioned above are easily avoidable but definitely hurt the presentation of the product, I don't even see these problems in my cheap JCPenny Cooks cleaver made in China. Hence the subtraction of one star.

Not much to say about the carving knife. It also has burrs on the edge needed a couple of strokes on a sharpening steel. For $10 extra, I picked this set instead of the cleaver alone to get a small, sharp knife made of VG-10 core: seems to be good deal.

Progressive International Finger GuardI actually really looked forward to this (no more sliced fingers!) but found it far too cumbersome to be effective. My fingers would not fit into the rings and found the whole unit very slippery once I started handling food. I use the "Norpro Stainless Steel Onion Holder" and just stab the item before I start cutting now.

This product has saved my fingers more than once. I used to cut myself every time I used a knife, but those days are over.

Have you ever noticed that once stuff wanders into your kitchen it is hard to get rid of it: that old set of dishes, cutlery from college, gadgets that have long since outlived their usefulness? I still had some old serrated knives with plastic handles that I owned since college, but unlike my nice kitchen knives, somehow these would never disappear. With great hopes of displacing by dilution, I decided to give these a try. The wood handles are beautiful, the tang is adequate, but does not feel hefty (sometimes I like that). I would say they feel more like a surgical instrument, very sharp, very precise, and well-balanced. The wood handles are beautiful even after two years of use (hand wash only) despite the fact that I have not oiled the wood regularly. If you can stomach the price, they will not disappoint.

I purchased Open Frame Dishrack Stainless Steel last month. After using the dish rack for a few weeks, we found water leaking from the bottom of the channel waterway where

it is designed to catch the water and drain it to the sink. We though it might be a defective product so we returned it and replaced it with the same Open Frame Dishrack Stainless Steel. However, again....the water leaks from the same waterway section of the new dish rack. I spoke with customer support and they told me that they cannot fix the problem. If you do not want to go through the same hassle, I recommend to purchase another brand.

I have been looking for a great dishrack and this one has met all my expectations. First my sink has a big lip so I need a dishrack with a drain that would go over the lip and after installing the optional feet that came with it this one does. Second all surfaces are tilted toward the drain so no standing water!! Plus it holds a ton of stuff. The knife block is very nice and will fit in most parts of the silverware section. This is replacing a Kitchenaid Dishrack that looked great but was basically flat so there was always standing water that would end up getting slimy. This one is a MUCH better design really love it!!

I have used this for about 3 months now, no more messy countertop or nasty forever wet towel. I have seen no rust on any of the metal, I think the bamboo knife holder keeps my knives sharper and like the title states, the drain that can be aimed back into your sink is sweet.

I wish It was able to hold more cups, would hold cups higher up so there is no contact on the lip (sometimes leaves a funny water mark) and I have friends that complain they can's stack as many larger items in it.
