Pure Komachi 2 Series 8' Chef's Knife, FuchsiaThis is a versatile knife that I use from carving meat to slicing vegetables. The blade is very thin, so if you're looking for a knife to cut through bones or a whole pumpkin, this may not be the best knife, but it'll easily slice paper thin garlic and mince shallots. The curved blade works great for chopping herbs and the sharp tip allows precise control over carving meat and fish.

I've been using this knife everyday for about 4 months now, and the blade is not showing any signs of dullness. I am planning on getting other series from this line.

We received a Shun santoku and this fuschia-colored Komachi last Christmas. The Shun is fantastic, but this knife gets used just as much. For some things, like cheese, fruitcake and other sticky foods, the Komachi is much better slices thinly and cheese doesn't cling. It's lightweight and easy to control. We now have a few knives in the Komachi line and just love them (especially the bread knife) in spite of also owning and using the high-end Shun knives. At first, the bright colors of the Komachi were somewhat off-putting, but once we started using them we found them to be great, supersharp knives and there's no picking through the rack to find what one is looking for!

I love this knife. We've had it for a week and it is super sharp, has a great balance. I also like the thin blade, it does not crack things like mushrooms when I cut.

First off, I read through the positive and negative reviews before placing my order, and the general concerns seemed to be that the handle felt cheap, was smaller than ideal and that the knife was too sharp.

If you're concerned the knife might be too sharp, maybe this knife is too sharp for you. It's very sharp, and that's exactly what my wife and I were looking for. The furnished apartment we just moved into came with knives, but nothing you can cut a tomato with, let alone peel a fruit or vegetable with. When we moved, we sent our belongs by boat, including several nice, sharp Japanese knives, and this knife honestly seems as sharp and as good at cutting as our nice Japanese knives that cost several times what this cost.

Regarding the handle, yes, it is a cheap plastic handle, and as a tall man with large hands, I can say that if I was the primary user of this knife, I'd like a larger handle. That said, my wife, who has slender hands but long fingers, has no problems with the knife handle size, and neither of us expected anything nicer than this for the price of the knife.

The knife coating actually does make rinsing food off the knife easier. If you rinse the knife as you're cooking with it, it rinses clean even when I wouldn't expect a standard knife to rinse clean. That's a nice bonus, and not something I was specifically looking for when I was shopping for this knife. If you let food dry on this knife and come back to it later to wash it, expect to have to scrub the food off just like you would with any other knife, but if you rinse right after you finish using it, it really does rinse clean, which makes cleaning it much easier. I'm not sure how the coating will hold up after repeated cycles in the dishwasher, so like many other things, we wash it by hand, and it looks and cuts great after dozens of uses and washes.

Honestly, as someone who really appreciates a nice and sharp knife, and who was happy to see "too sharp" as a complaint, I expected less from this knife, and was very pleasantly surprised by the job it's done. It was purchased to fill a short term void, as we expected it to be relegated to a spare when our belongs arrived from Japan, but this knife will continue to be one we regularly use, and it was a bargain at the price we paid.

We bought an entire set of these Knives. I read the praise from other Reviewers and they are right. These are wicked sharp and as careful as I tried to be, still wound up cutting myself while cleaning one.

My gripe with these Knives are the Handle material. It is a Hard Plastic. It has no texture, design grip or rubberized coating, etc. It makes it not only feel super cheap, but outright dangerous for slipping when your hands are wet. I really was not expecting much for $8-10 a knife, but this is not something to overlook. The worst part is if the plastic gets a nick in it; you get a reminder of how cheap these knives are each time you use it, as the bur digs into you hand like a thorn. Sorry, Pure Komachi... I really wanted to like these Knives because the Blade is of fantastic high quality for the price.

I'm new to ceramic knives, so I don't have a lot of experience with them, but I love using them. I wouldn't mind replacing all my metal knives with these, but I'm not sure how they're going to hold up. They're very sharp, and cut easily. I'd buy more. I read where you shouldn't cut on hard surfaces, they're more for slicing, but I use them for everything. We'll see how long they last.

1st Ceramic Knife I've purchased. Does the job. Will have to see how sharpe the blade stays over time. You must be careful not to drop the kinfe or chop on hard items or you could damage or break the blade.

I was really suprised the first time I used this sharpener. It worked great on my Henckels International Classic knives. What really suprised me was that it only took several strokes to get the blades razor sharp. Previously, I used the steel to reset the blades, but could not get the sharp edge on them that this sharpener accomplished. I will continue to use the steel to reset the blades (I don't want to wear them down too much), but using this sharpener instead is really tempting.

Construction: Think of two wagon axles, where, on each axle, the wheels can slide and bang in to each other. Then position one axle close to the other such that all four "wheels" inter-lace. The first set of wheels are dark, the last white. There is no way to hone only on the final stage. It's an all or nothing deal. The blade must pass through all four inter-lacing discs.

This thing is OK as a free gift with purchase but I wouldn't buy it. I had one very old Japanese steel blade parring knife. I used a steel to set the edge and ran it though. I got a decent edge with only modest effort. Next was an 8" Chinese "Titanium". Got an edge of sorts on that. Finally, a Chicago Cutlery 8" stainless steel chef's knife. Set the edge on a steel. Could not get an edge, the knife's poor grade steel was probably the cause. >>> Do not be tempted to run your better knives though this or they may be ruined. Not for Santoku style 15 degree blades.

Pros:

Sturdy footprint, good grip, and fairly idiot proof. Did sharpen several very old, abused blades that now can slice ginger paper thin.

Cons:

I don't expect this thing to hold up to more than a couple of dozen sharpening before the ceramic discs need replacing. Of course, you can not replace the discs because the body is glued. If the discs were replaceable, then I would have given this another star. Make this eco-friendly by include spare ceramic discs and I'll recommend for common knives for ease of use. Spend a few more bucks and get something with replaceable ceramic honing rods and with separate course or edge setter. Also, wheels can chatter and take chips out of some types of steel. I woulds, under no circumstance run a fine blade through this.

I love these knives! They make my life (and food prep) so much easier. Two knives are straight-edge, and the other two are serrated. They're very sharp so I use them with care. To keep them sharp, even though it says you can wash in the dishwasher, I wash them by hand. Even though we have a set of steak knives, I find myself reaching for one of these when I sit down to eat any meal with a meat entree. Another thing which is nice is having a specific knife block just for these knives alone. Yes, this was indeed a good purchase.

Stanton Trading 15 by 20 by 1-Inch Cutting Board, WhiteI like it but make sure that you have a large enough space on your counter for it as it is quite large. Both surfaces are lightly textured rather than totally smooth. Also it is not perfectly flat and IMO needs to have non-slip rubber feet installed as it can easily slide around on a formica or or other smooth material counter top. I have ordered some appropriate adhesive feet to install on it to tie it down.

Very close to truly 1" thick. I measured mine as .96" in thickness which I consider close to nominal listed thickness. This is better than the reviewed thickness of some thinner versions which have been reported as considerably thinner than nominal thickness.

Zyliss Smoothglide Peeler, GreenThe ergonomic handle of the Zyliss Smoothglide peeler, may be a little large for some with smaller hands, but if your hands are big enough, you should have pretty good control of the cutting blade, which has a normal straight cutting edge. Zyliss's Soft Skin Peeler, is a very similar product, except that it is red, and has a blade with a serrated edge. The serrated blade is much sharper, and has a fantastic bite! If you don't mind some curved edges, the Soft Skin Peeler is more reliable, and does a better job. It is simply wicked at shredding.

If you prefer straightedge cuts, this peeler is pretty good, although the blade could stand a little sharpening. The handle has a rubber grip strip that helps with traction, particularly when the handle or your hands are wet. There is also a cutting tip for digging out potato eyes, seeds, or other imperfections. Both the Smoothglide, and the Soft Skin Peeler, are eligible for Amazon's 4 for 3 program.

I treated myself to this vegetable peeler after having used the old, metal kind for years. I've purchased other Zyliss kitchen tools in the past and they do make excellent quality items. Check out their ice cream scoop.

I first used this over the holidays when peeling potatoes for a large group dinner. It was very sharp, had good balance, and was comfortable in my hand. It seemed to take a slightly thicker slice than my old peeler, but was not excessive, and, in my mind, the job being much faster and requiring less effort was a fair trade off. It has the metal "eye" removing tip which is very sharp and works slick. There is also a plastic blade protector on it when new that doesn't stay on well. I'm not sure if it's meant to but it would be nice as it would be easy to slice your finger while searching through the drawer without it being in place.

I highly recommend this vegetable peeler, and Zyliss kitchen tools, if you're looking for an upgrade to your existing ones.

This peeler is great! It is sharp and has a good gouger on the end for potato eyes. It puts my other peelers to shame. Even peels pumpkin with ease. Well worth the money.

The narrower grip is not an asset in this tool. Suppose you're making punch. As you hold a lemon to peel it (to mix the peels with sugar, yum), your steadying thumb will lie farther forward on the fruit, directly in the path of the blade, which is exactly how I cut myself.

With the Oxo Goodgrip peeler, the wider handle leaves your thumb a little further back, not completely out of danger, but a whole lot less likely to be cut. I've never had a cut from the Oxo; the Zyliss got me but good on its first day.

The Y-peeler from Zyliss does not have this problem. Again, your thumb winds up closer to the end of the blade where you're more likely to be able to get it out of the way if your stroke slips.

... I stumbled across this one at Sur la Table. It fits my hands perfectly and allows for a very comfortable grip due to the curved handle. I like that the peeler is stabilized at both ends due to the handle extension and additionally has the sharp top edge for removing bad parts of the vegetable. The sharp peeling edge also has more support behind it, thereby making short work of a tricky potato eye.

For many years, I used an old fashioned simple and cheap all-metal peeler. It wasn't the most comfortable to grip for long periods of time, but it was by far the best functioning peeler. Unfortunately since it was rusting, it needed to finally be replaced.

After trying three other peelers including ones by Cuisenart and KitchenAid, I found not all peelers are created equal. With many, I was struggling just to peel on tougher skins like sweet potato, mostly because only one side of the peeler was reinforced with the handle. The Zyliss is reinforced on both ends and removes every peel I've attempted smoothly and cleanly. We still have our KitchenAid peeler, but Zyliss is my go-to. It is extremely sturdy, comfortable to use and the best functioning peeler I've used to date.

To keep the blades sharp, I always hand wash!

UPDATE: 12/8/11 --> This peeler is still working wonders and has not dulled a bit. :-)

Black & Decker EC475B Extra-Tall Electric Can Opener, BlackPositive it runs very smooth and opens beautifully when it works, for maybe 9-12 months, just long enough to get past the warranty. Does open large cans easily, again, when it works. Negatives -must be more plastic gears, it works great but will not shut off even after can is removed. You have to unplug and wait. Very annoying when making a large pot of chili, etc., when there are 8-10 cans to be opened. Also, will not open, it NEVER did, small cans of tomato paste, I have to get out the crank opener. The small can just will not puncture and turn. Would NOT purchase again, would not recommend.

Cheap, cheap, cheap!!! The magnet won't stay on the opener and I end up with both it and the top INSIDE the can of food. Huh? Also won't stop running sometimes, even after the can is opened. Don't waste your money....

I absolutely hate this beast in my kitchen! So why have I put up with it for over two years? I need to have my head examined! I'm getting better though, as I'm on Amazon tonight browsing for a new can opener, and you can be sure it won't be another Black and Decker. I think they should stick to making tools for the handyman and forget appliances. We had a B &D toaster oven several years back that performed almost as miserably as this can opener.

On the positive side it does have a nice sleek design and looks good on the kitchen counter. The knife sharpener is a good feature and does work. The "one touch" idea would be great if only the can would stay in the cutter. Ditto for the "tall can" idea. Great, but the cans keep falling out. Very few cans of any size have ever stayed in and gone completely around. In order to even start, one must peel the label from the can first or it gets chewed up and causes a wad of paper at the cutter which in turn also causes the can to slip out. Other times this "beast" is a tease and only partially opens a can. You wind up with 3 or 4 cuts in the lid and the can opener cannot be persuaded to go around again and cut through completely.

I agree with the reviewer who wanted a minus star to rate this with, except I would like about minus 5! If you see this appliance in a store, run the other way. Do NOT waste your hard earned dollars on a purchase.

The Black and Decker EC475B makes a really sleek door stop. Even on days when the house is open, and a breeze wafts through, it has never failed to hold the door in place. I'd suggest removing the cutting head to improve the symmetry--it is of no particular use anyway and can be discarded.

For those wanting to open cans, I now use an EKCO Magic Glide C-865, one from my parents' estate, found in the "junk drawer" in their kitchen. It is the long handled version of what many campers use and has never failed, unlike "electric can openers" that seldom work, foisted off on unsuspecting buyers in mega-stores. Yes, the Ekco Magic Glide C-865 is an antique, available on EBay for around $16 + shipping. But since it is just a basic tool you might want to pick up a brand new Ekco hand-held can opener at the gadget aisle of your grocery store for under $3, or a fancy model of it for under $10. Or, if electric "pre-doorstop" models still call to you, maybe keep searching Amazon reviews for one less of a turkey.

Without a doubt that was probably one of the best investments I EVER made! Hands down. F. Dick markets to culinary students & schools for two very good reasons: 1) They then don't need to spend a fortune in advertising, trying to get housewives & wannabees to buy their knives...just to show off the new toy to their friends & neighbours. (Or brag about how much they spent.) 2) They're darn near bullet-proof...and thus perfect for students, working chefs or home users that aren't going to sharpen their knives every couple months.

I purchased my "regular" 9" before I had seen the Competition Knife...and being a student had to go without.

Well, seeing as I've have NOTHING but high praise for their knives I decided to finally get the competition knife. Have I used it in a competition..? No... But, along with being another OUTSTANDING F. Dick knife it really is a very cool conversation piece. My wife & I have a lot of "foody" friends and this still is the most popular piece of equipment that we have in out kitchen...and we have a LOT O' TOYS in our well stocked kitchen. It seems that everybody want to test their skills with it. ROFL (And it's still less than some of the advertised brands...)

Oh, and for the record... Nobody, and I mean NOBODY makes a steel as good as F. Dick. Go ahead, do a search or better yet ask somebody that knows what they're talking about. They're worth their weight in gold!

Emeril 8 Piece Block SetThese knives are not shaped well. If you have any experience at all with kitchen knives you will notice right away that these were not designed with actual use in mind. These knives are made for looks ONLY. If you are looking for a knife set that will look ok on your counter but you never plan to use, these will work,but they are really to expensive for that.

They are also not very sharp, and they cannot easily be sharpened.

These are a classic example of putting a famous guys name on a cheap Chinese product and selling it for too much to unsuspecting consumers. I am sure Emril is laughing all the way to the bank, but he really should really be embarrassed about putting his name on this product. I am certain he does not use these crappy knives himself.

These knives are very attractive and sleek. I also got them as a gift (that I requested). With keeping the price in mind they are very good and sharp enough for the starter cook. Note that there are knives that are much better quality (sharper with better balance) but do you want to pay $500.00-$2000.00 for the set? The thing I was disappointed in was I didn't know they were made in China until after I bought them. It didn't mention anything in the reviews or product description (that I could see). But for price I should have suspected. Since I cook every single day, I would rather have either German or Japanese engineered knives; and I will also have to fork out a lot more money for them. I'll probably save these knives and give them to some lucky college graduate who is starting out with nothing and would and should certainly appreciate them. I didn't look to see if any of the knives were defective. I only tested one. However, for the price, I'd just shrug it off. One rarely gets more than what they paid for.

I received these knives as a gift. They are beautiful, but one came damaged. It looks like the knife was pinched in the press in the middle (blade side). I've been trying to contact their warranty dept for 2 days. The line is perpetually busy. I don't know what the point of a "lifetime warranty" is if I can't contact them to replace a damaged product.

This Ceramic Knife set is great, Knives are as sharp as you would expect ceramic to be but they chip very easily, my 6" chipped chopping onions when it struck the cutting board (my Cuisinart paring knife is now 5 yrs old no chips). The chip is minor and only in the very tip not affecting the knife's usefulness but it does snag when cleaning. Over all I am very pleased with this knife set and am ordering more for everyone in my family.

Chef's Choice M120 Diamond Hone Knife Sharpener, Brushed MetalThis sharpener does not work as expected. I do not get razor sharp blades. I have very expensive knives so that is not the problem. When I bought the knives, they were razor sharp. You could shave with them. Now they are a little dull so I wanted the best sharpener for them to get them back to razor edge. The honing [3] did not work. I got a lot of different noises from the unit after attempting to sharpen my knife too. Sounds that make me think that this item is defective and maybe that is why it does not sharpen as expected. It is going back. I do not recommend this product.

Easy to use, makes even cheap knives super sharp. Would recommend to anyone want to get their knives sharp fast.

This product is advertised as a M130 but the picture is NOT the 130, but a previous model 120. The M130 is shown elsewhere at $149; so this is very confusing. Why offer a M130 at $130 w/a picture of the M120 and in another place offer a M130 at $149 w/the correct picture??? Tells me that if you order the $130 one, thinking you're ordering the M130, you may instead get the M120 model!! TOO confusing if you are specifically trying to order the EXACT thing! Picture should be accurate!!

The answer:

1. This knife is SHORT the whole thing is only about 50% longer than the length of an average adult female hand.

2. The blade is flimsy this is definitely a stamped (as opposed to forged), which means "cookie cutter", blade. Hence, although sharp, it is on the unstable side and lacks the balance and control one gets with a forged knife (which is typically thicker on the backside of the blade). I never thought that an 1/8-inch differential would make such a difference, but it does.

Nevertheless, it is useful for smaller kitchen tasks, especially if you have small hands. However, I would caution that novice chefs/cooks who have not experienced a forged knife should NOT use this as a beginner's kitchen knife the lack of stability and control can be dangerous if you don't know what you are doing.

Dansk Torun 5-Piece Place Setting, Service for 1I recently ordered four additional place settings as well as a few replacement forks/spoons of Dansk Torun. I have an original set from the mid 1980's. The new pieces were much lighter in weight, the spoons had different bowl shapes (both soup and teaspoon) and stamps on the back of each piece (including the 'made in China') were obnoxiously large and made the silverware ugly. I purchased these with a 'buy three get one free offe'r. Had I been aware of the poor quality of this recent edition of Dansk silverware I would not have purchased it new. I would have purchased used place settings from a replacement source.

We got a set of Dansk Torun in 1999; it was a beautiful and functional set We wanted to get some additional sets, so we got this.

These are amazingly inferior. Some of it is just quality: the spoons are shallower and have sharp edges. That's just cheaper forging. To add insult to inury, they also have a new shape which I don't like as well. The knife is similar to the original, but not as elegant.

If I'd known Dansk was going to do this I don't think I would have bought from them 10 years ago. I certainly can't recommend this set now.

I had the EXACT same experience as the previous reviewers. I purchased this beautiful, and not cheap, flatware in the late 1980's. I loved it. After years of "kids", many pieces had "walked away" so I ordered some replacements. The difference in quality was truly stunning. This was the first time I really began to understand that the flight to Chinese manufacturing (read: cheaper manufacturing costs), was also a flight to inferior products. The spoons were not rounded on the edges; they were flat and sharp. The luster was not there, the weight was lighter, and overall the flatware had a "cheap" look to it when compared to the original. Honestly, you should get what you pay for. I replaced it all with Ricci and have not been disappointed. Caveat Emptor buyer beware.

At $29.99 per place setting, Amazon is offering this pattern at outlet prices for Torun. I have owned this silverware for over 10 years, and it looks as good today as when I purchased it. The stainless is of the highest grade, 18/10, and this ensures that it will tolerate the dishwasher very well. Instructions that came with mine said to polish it once a year, but I have not found this necessary. The stainless is of a quality that it doesn't show scratches either. The design is timeless; it will be as contemporary 25 years from now as today. It is also versatile enough to use for every day and formal occasions. The only thing that takes getting used to is the knife; the curved handle allows for positioning the knife with the blade down. Also be aware that complementary and serving pieces are going to be expensive and hard to find. These can be located on Ebay or in any remaining outlet stores that Dansk may have.

I'd like to address some of the other reviewer's complaints with my own experiences:

1) Quality. I admit this is my first set of Dansk or Torun silverware, so I can't compare the quality to the product in the 1980s, but I will say I think this is very nice quality. It is 18/10 stainless steel, which is the highest quality grade. Also, it feels heavy, substantial, and expensive. And it's dishwasher safe, which is non negotiable for me.

2) Sharp edges on the spoons. I have no clue what that reviewer is talking about. Perhaps you had a defective set? I think the spoon edges are just a smooth as any other quality set.

3) Knives falling off. I disagree the whole reason why I purchased this set was because I was so impressed with a seeing a friend's set and the way all the pieces were made to balance....especially the knife. Nothing flops or falls on your plate and the place setting presentation is beautifully symmetrical with all pieces balancing upright. I just received this item and read the instructions for using it. So this is a PREview, not a REview.

After reading the manual, it seems to me to be a bit more difficult than I thought it would be. Also, the manual is not very well written i.e. much more technical than it needs to be, using terms that are not well explained, and having references to pictures that are on other pages. Chef's Choice makes great products, but needs to hire better writers and put more effort into their manuals for the slicer AND this sharpener.)

I like that you don't have to take the blade out of the slicer (very sharp blades can be very dangerous) but having to be careful of the alignment and the removal of the "burr" makes it more of a challenge, it seems, to get it right.

Having said that, considering the price of new blades, this is a great investment.

works on other makes as well. home slicers need all the help they can get to prepare evenly sliced, especially thin sliced portions. that blade had better be sharp or things get messy, especially uneven slice messy. this blade sharpener is easy to use and does the job, making those 1/16 inch slices ordinary and those slices that start that way and bump out to 1/8 inch left for another day.
