The blade is very thin, so if you're looking for a knife to cut through bones or a whole pumpkin, this may not be the best knife, but it'll easily slice paper thin garlic and mince shallots. I've been using this knife everyday for about 4 months now, and the blade is not showing any signs of dullness. I am planning on getting other series from this line.

We received a Shun santoku and this fuschia-colored Komachi last Christmas. The Shun is fantastic, but this knife gets used just as much. For some things, like cheese, fruitcake and other sticky foods, the Komachi is much better slices thinly and cheese doesn't cling. It's lightweight and easy to control. We now have a few knives in the Komachi line and just love them (especially the bread knife) in spite of also owning and using the high-end Shun knives. At first, the bright colors of the Komachi were somewhat off-putting, but once we started using them we found them to be great, supersharp knives and there's no picking through the rack to find what one is looking for!

First off, I read through the positive and negative reviews before placing my order, and the general concerns seemed to be that the handle felt cheap, was smaller than ideal and that the knife was too sharp.

If you're concerned the knife might be too sharp, maybe this knife is too sharp for you. It's very sharp, and that's exactly what my wife and I were looking for. The furnished apartment we just moved into came with knives, but nothing you can cut a tomato with, let alone peel a fruit or vegetable with. When we moved, we sent our belongs by boat, including several nice, sharp Japanese knives, and this knife honestly seems as sharp and as good at cutting as our nice Japanese knives that cost several times what this cost.

Regarding the handle, yes, it is a cheap plastic handle, and as a tall man with large hands, I can say that if I was the primary user of this knife, I'd like a larger handle. That said, my wife, who has slender hands but long fingers, has no problems with the knife handle size, and neither of us expected anything nicer than this for the price of the knife.

The knife coating actually does make rinsing food off the knife easier. If you rinse the knife as you're cooking with it, it rinses clean even when I wouldn't expect a standard knife to rinse clean. That's a nice bonus, and not something I was specifically looking for when I was shopping for this knife. If you let food dry on this knife and come back to it later to wash it, expect to have to scrub the food off just like you would with any other knife, but if you rinse right after you finish using it, it really does rinse clean, which makes cleaning it much easier. I'm not sure how the coating will hold up after repeated cycles in the dishwasher, so like many other things, we wash it by hand, and it looks and cuts great after dozens of uses and washes.

Honestly, as someone who really appreciates a nice and sharp knife, and who was happy to see "too sharp" as a complaint, I expected less from this knife, and was very pleasantly surprised by the job it's done. It was purchased to fill a short term void, as we expected it to be relegated to a spare when our belongs arrived from Japan, but this knife will continue to be one we regularly use, and it was a bargain at the price we paid.

We bought an entire set of these Knives. I read the praise from other Reviewers and they are right. These are wicked sharp and as careful as I tried to be, still wound up cutting myself while cleaning one.

My gripe with these Knives are the Handle material. It is a Hard Plastic. It has no texture, design grip or rubberized coating, etc. It makes it not only feel super cheap, but outright dangerous for slipping when your hands are wet. I really was not expecting much for $8-10 a knife, but this is not something to overlook. The worst part is if the plastic gets a nick in it; you get a reminder of how cheap these knives are each time you use it, as the bur digs into you hand like a thorn. Sorry, Pure Komachi... I really wanted to like these Knives because the Blade is of fantastic high quality for the price.

It's not forged so it's probably not the best chef's knife you can find but it's very decent for the price and fun to use.

One thing I noticed and was weird but honestly I don't know if it's me or it should be like that the grooves on the knife are on the left face of the blade and if you're right handed then you should hold whatever you chop with your left hand. since the grooves are on the left face then the "non sticking" benefit happens in the side you don't need it... Again, I don't know if it's a problem or not but I got used to it and I enjoy working with it.

Would definitely recommend it to friends and family.

I bought these knives to use while crab fishing. They are so sharp that I can cut solidly frozen bait in 3 -4 strokes, bone and all. I've never had a sharper knife. They're inexpensive enough that when they get dull, I just toss them. Great knives for the price.

I love this knife. At first I didn't know if I would use this knife much, but I have used it alot. I do a lot of cooking on the ranch for men so I make alot of soups, stews, salads, etc. This knife is perfect for cutting vegetables. The size is right and the feel of the knife is excellent. Zwilling J.A. Henckels Four Star II 2-Piece Carving Set

Zwilling J.A. Henckels Four Star II 2-Piece Carving SetReceived this as a gift to add to my existing set of Henckels Four Star II knives. Have used it to carve turkey, ham, pork, and beef. It's the best carving knife I've used. Good weight and easy to grip also.

I was shopping for a a nice carving fork, and carving knife and not a set. This set popped up in my search and it didn't have any negative reviews. All glowing reviews and the price was reasonable at $135. The first thing I carved with this knife was a pork tenderloin, and it didn't slice thru the 1.5 pound lean, long, marinated tenderloin with one swipe. I washed, and dried it and honed it on my steel. Gave it another try with the same results. I had my husband give it a go when I cooked a rump roast and he asked if I got the knife at good will. We went shopping at W-S at the mall to purchase a better knife, and ended up getting the Wusthof Classic Ikon Carving Knife Wusthof Classic Ikon 8-Inch Carving Knife, Black plus some other goodies.

After running this Henckles Carving knife thru my new Wusthof knife sharpener, it did bring a new edge to it and make it much more useful. It's still far behind in quality compared to the Ikon.

I love the fork that came with the set. Holds the roast securely for carving and is also useful for turning steaks. Sold, sturdy and easy to clean.

I guess it's possible I got a bad knife.

Update:

We purchased the J.A. Henckels Professional "S" 10" Hollow Edge Slicer and my husband just had to have the Shun DM0720 Classic Hollow-Ground Slicing Knife, 9-Inch. Of course it's a no contest with the surgical, razor sharp edge of the Shun. But most large Shun knives make me nervous. Their bread knives and pairing knives I adore. The Henckels 10" Slicer does a beautiful job making thin slices of roast beef, prime rib, ham, pork roast and tenderloins and even hard salami and pastrami. Our neighbor turned us on to this slicing knife and I love it.

The Wusthof Classic Ikon Carving Knife is still my preference for poultry...my husband uses the Shun of course.

Gordon Ramsay Chef Knives Maze 6 Piece Knife Set

Gordon Ramsay Chef Knives Maze 6 Piece Knife SetI wanted to add a bit of info, since the description is pretty sparse.

The blades are all "European" (I am guessing German) X50CrMoV15 stainless steel, which is a good quality steel, a little softer than the Japanese steels but easier to maintain. It is used on other quality knives like Messermeister. The handles are either a polymer or a resin. I haven't had a chance to use all the blades yet, but so far they all seem to be sharp, decently balanced, and well put together. On mine, the polymer-to-metal fit is seamless on all the knives. While the steel used may be European, the knives themselves are made in China. I don't think that is too uncommon for high-value knives, as I have one J.A. Henckels International knife that is the same, but it is worth noting, especially if comparing to premium brands made in Germany (Wusthof, Messermeister, etc.) or Japan (Shun, Global, MAC, etc.).

The knives have a full bolster, which can help with balance, but requires a bit more maintenance than a partial bolster, since the bolster itself will need filed down over time to maintain balance. The knives have a flat, steel pommel, which is nice for crushing a bulb of garlic or the like.

One notable weak point is the honing steel. It is a flattened oval rather than round, and it has an extremely course grit which looks to be diamond coated. The grit is so aggressive, I'd never let a decent knife touch it, since it could easily destroy the edge in a few passes. Even in the best case it would be removing a ton of metal, which is not what you want to do when honing. Last off, on mine, the fit of its "blade" to the grip (unlike the knives, it isn't a single piece of steel) is less than perfect.

All in all, a pretty decent set, as long as you don't pay too much. They are nicer than the J.A. Henckels International knives, but you still don't want to pay too much more than for a similar J.A. Henckels Premio set--after all made in China is still made in China. RD recently had these on sale for 75% off. If you are looking at 65-75% off (~20-25 usd per knife), these seem like a good way to get a versatile set made from quality steel. Save a bit out for a new honing steel though.

*ADDENDUM*

For those just starting out on a collection, you may wish to consider a MAC Original chef's knife and paring knife. The two knives you will be using 95% of the time will be top quality, and only cost around 85 usd together. Really top quality, but not so expensive that you cannot replace them if a mistake happens as you learn to sharpen and care for them. Early on, those knives are where the focus should go. If you already have some nice blades like that, or are planning to get some, this set really shines as a compliment, as it is a decent way to round out the odds and ends like a bread knife, utility knife, etc., made out of good steel, without spending a fortune.

They aren't getting 5 stars because the sides did have a few cracks but they appear to have been filled with some kind of glue or something to keep them from getting worse. I don't think it will lessen the integrity of the boards. They look nice, don't move around too much when I'm using them, and do exactly what I need them to do be a surface to cut things on.

Cool looking cutting boards but all three came with splits in them. The medium one was split in 2 places on one side and badly on the outer edge. thankfuly all 3 were split on only one side so i decided to just keep them as they were only $25 anyway! if you are expecting great quality cutting boards these probably aren't them unless i was just lucky to get the one bad set (which i doubt). kinda have a funny scent too but i've never owned bamboo cutting boards before so it may just be characteristic of the type? hope this helps someone!

The utensils are made of thick and solid metal. They are very sturdy. The case, however, is a joke. It is the absolute cheapest thing they could find. The utensils don't stay in their designated areas and the latches are completely inadequate.

Made in Chinavery cheap set. When I opened it, the tools were all over. The other reviewer was correct in saying that the case is pretty much a throw-away. The tools themselves are low quality as well. Lots of loose parts. I would stay away and look at another grill set if you want to use these more than a couple times.

The tools itself are OK quality but the box is pathetic. The tools don't fit in the grooves, the box does not shut and lock at all. Very poor quality packaging.

I returned this because it arrived in condition too poor to give it as a gift as intended. All of the sharp BBQ implements inside came loose during shipping and damaged each other and the case. The shipping box was not damaged on the outside, and the case is quite flimsy, so it is probably not uncommon for the pieces to come loose like this. The case was cracked and scuffed in many places on the inside. The clips that hold the case shut don't clip at all. I ended up running to Target to buy a different one to give as a gift.

Victorinox 3-Piece Chef's Set, Rosewood HandlesAfter taking some cooking classes, which includes knife skills, so I noticed that the ones I used to by at Walmart were horrible. Did my research, and came upon this set of knives. They are great knives for the price, even my instructor was surprised. He said that the weight distribution was really good.

The only complaint I have is the handle. The handle is pervious to any liquid, there isn't a protective coating on the wood so it can stain easily.

Other than that, it's a great set.

My brother, the chef, swears by these knives. After trying them out for myself in his kitchen, I was convinced these are the best knives I've ever used! They cut like a dream. I'll be purchasing more of these! Plus, I will also invest in covers for the blades it is VERY easy to cut yourself with these knives, especially before you get used to using them.

The handle on this steel is 4 ½ inches (11.5 cm) long including the finger guard at the top of the handle. The sharpening rod is flat and oval, in contrast to the usual round shape. The rod is slightly over ½ inch (14mm) wide and 5mm thick at its thickest point. I don't find the oval shape any more difficult to use than round steels, and it requires fewer passes due to more surface contact with the knife edge. The rod is the same matte silver color as the Culinar handles. This Diamond Sharpening Steel isn't cheap, but it's a sturdy, attractive, accessory for the beautiful Culinar knives.

It is recommended that cooks steel their knives every time they are used. Steeling realigns the tiny teeth on your knife edge that go askew from normal use, dulling the blade somewhat. So steeling does sharpen the blade in the sense that it cleans up the edge, but it does not grind the blade. Knife blades must be re-ground every 6 months to 2 years, depending on the material of the blade and how often you use it. Chefs typically regrind their blades once a year using either a sharpening stone, a manual knife sharpener, or an electric sharpener. You can also have knives professionally sharpened if you're not in the possession of a sharpener or not confident in your skills. To steel the blade, hold the sharpening steel in one hand and the knife in the other. Place the blade at a 20-25 degree angle to the steel. And draw the blade across the steel in an arching motion, starting at the base of the blade, applying light, even pressure. (Well, that's difficult to picture, but most knife packages and many web sites have illustrations.) Steel the knife 6-8 times (or fewer if the rod is oval). Don't steel the same side more than once in succession. If angle is much less than 20 degrees, it will scratch your knife and won't steel properly. Not a big deal, but try to avoid it.

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove).

However, when it comes to sharpening steels, I have found very little difference. As long as you buy a high end steel, you really won't go wrong. Therefore, I shop for this item on price, and Henckels has a price advantage. Unless you want a matching set, shop on price, and look to Henckels.

When one speaks of "sharpening" a knife, one may be referring to either of two things.

One may be referring to what is also called "honing", which is intended to realign the edge of the knife, maintaining the sharpness without removing metal. Typically this is done with a rod of somewhat harder steel sometimes called a sharpening steel or iron. Many chefs hone their knives on every use.

Alternatively, one may be referring to actually grinding away a minute amount of the surface of the edge of the knife, restoring its sharpness when honing no longer does the trick. A "sharpening stone" made of alumina sapphire grit is normally used for this. This type of sharpening normally only needs to be done at long intervals months or years, depending on use.

The Wusthof Culinar diamond sharpener seems to act more like a sharpening stone than like a normal sharpening steel not surprising, since its diamond grit is even harder than the alumina used in sharpening stones. The difference is far more than the mere difference in looks that one of the other reviewers suggests.

Why did Wusthof decide to provide what is essentially a premium sharpening stone in the shape of a sharpening steel? I think it goes back to their original Culinar knives. Those original Culinar knives had a different blade composition than most Wusthof knives: the alloy included tungsten in addition to Wusthof's normal chromium, molybdenum, and vanadium. I have a few of these older Culinar knives, and the tungsten in their blades allows them to hold an even sharper edge, and keep that edge through a longer period of use. However, the added hardness of the tungsten blade alloy makes honing those knives less effective, so they need to be actually sharpened more often. This diamond sharpener makes that convenient to do.

The more recent Culinar knives I have purchased no longer have tungsten in their blade alloys. Perhaps Wusthof got complaints about the eventual dulling of the tungsten alloy blades from people who did not realize they also needed the diamond sharpener. On the other hand, having a diamond sharpener in the shape of a normal steel was evidently sufficiently convenient that Wusthof not only kept the diamond sharpener in their Culinar lineup, but also make a started making a black handled version that matches their other lines of knives.
