Diamond Cut 19Pc Diamond Cut Cutlery Set

Diamond Cut 19Pc Diamond Cut Cutlery SetI have had Diamond Cut knives for the past 20 years and just purchased this set to replace some knives (not diamond cut) that had seen better days. I researched all of the more expensive cutlery sets and decided based on my lifestyle, I would stay with what works. If you are a person who wants to put knives in the dishwasher, tends to leave dishes and knives in the sink and you don't want to have to worry about sharpening them and "taking good care of them", these are the knives for you. They are durable, did not rust, did not get water spots, they cut through just about anything and they have stayed sharp. They are lightweight, easy to handle and are maintenance free. So, if you are looking for an extra set, a beginning set, a hassle free set and just want to get the job donethis is a great set for the money.

I got these knives as part of a supermarket promotion. I did not expect much since they were practically free. It is now nine years later and I am still using these knives on a daily basis. They are still sharp and perform in a laudable manner. I managed to break one cleaver, but that was mostly my fault, since I was admittedly abusing it at the time. The nicest thing is that because I got these in a promotion, I bought two sets and some extra pieces just in case some broke. Since they have not, I have a complete set stored away in vacuum bags, ready to be pressed into service should the need arise.

I would not hesitate to recommend these knives to someone who wants a cheap set that will do the job and last a surprisingly long time.

I bought these knives individually. They are cheap, consistently sharp have not had to sharpen in over 2 years. The handle is one piece of black handle. Yes, its true the handle is not riveted on. but it can cut a tomato much better then my wusthof knife. Its not perfect for every job, but works great for 95% of jobs. i bought mine for $2 each! so even if one knife lasts 3 months, i already have my money's worth. i just throw in the dishwasher. love it, recommend it. will continue to buy again.

I bought these knives 13 years ago for my first apartment. They have lasted through a lot of abuse and now a family of four. So yes the knife broke at the blade and handle but were well worth it. That's only one out of 19. Thanks for making an inexpensive set that lasts.

Amazing quality knives for the price. Totally worth the purchase even if we only get a year's use out of them.(I'm sure they'll last a lot longer than that).

Farberware Steak Knives, Set of 6

Farberware Steak Knives, Set of 69 Years ago I bought a box of 8 serrated steak knives at the bricks and mortar kitchen chain store "Lechter's" here in Brooklyn, New York. The Great Lechter's chain was purchased and then purposely looted and destroyed by a private equity firm, much like was done to another NY chain with great stores "Linens and Things"....

These steak knives had a good, comfortable plastic handle and REMAINED razor sharp until they broke...

Over the years the knives broke one by one where the blade met the handle.

I bought these Farberware knives as a replacement. The are good quality BUT the blade stupidly IS NOT FULLY serrated and they aren't SHARP at all...

I have a problem cutting a raw onion with these knives...

THESE KNIVES ARE CRAP....

Beware! The knives shown in the photo are not the knives that you will receive. I bought the knives shown in the photo from Walmart a few years ago and I just loved them. Over time I lost most of them, and when I went back to Walmart to get more I discovered that they are no longer available there. I decided to check Amazon.com and sure enough, there they were in the photo! However, the knives I received have a much different blade that cuts very poorly and it tears most types of food. I will continue my search for the "good" Farberware knives but I do not recommend these.

Buy Farberware Steak Knives, Set of 6 Now

I bought a four pack of these at walmart, and believe me they are terrible. I have had them for maybe 3 months and within the first month the stainless steel started rusting, and it keeps getting worse. Every knife has a few rust spots. I guess i just get a little extra "iron" in my diet. Seriously stay away from these knives.

The knives I received today are not the same knives shown in the picture. I will return these cheap looking knives. The knives shown in the picture have a different blade than the ones I ordered and paid for. I will be very careful the next time I purchase from Amazon.

Want Farberware Steak Knives, Set of 6 Discount?

I purchased these knives because they look like good steak knives. Do not be deceived! The three "rivets" are decorative. In a high quality knife, the rivets pass through the handle material as well as the steel handle shim (this is the flat steel layer that sits in between the two handle pieces). The steel shim piece is only one inch long, narrow, and even the first rivet does not penetrate the shim. I used this knife to cut cheddar cheese and the handle torqued out of the plastic handle. Really? Did anyone test this product before it left the factory? I was very disappointed that a company as well regarded as Farberware would sell such poor quality knives. They should be ashamed of themselves. DO NOT BUY THESE KNIVES. Even at $6.99 for six as advertised here, they are not worth it.

Wild Eye Designs Standing Cheese Knife, Stainless Steel

Wild Eye Designs Standing Cheese Knife, Stainless SteelThis little gadget works great for parties or for spreading butter, peanut butter, salad dressing, or the like when making multiple sandwiches, wraps, crackers, or other finger food. It stands up instead of having to rest it on a plate. As such, the blade is less likely to become contaminated with bacteria etc. For this reason, it works well for parties. Although it is suppose to be used for cheese, I use it for other spreadables. I haven't used it for cheese.

FABULOUS!! Quirky but so practical. Conversation piece on the table. So cute!! LOVE IT. Wish I'd bought more than five!!

Wusthof Ikon 6-Inch Straight Fork with Blackwood Handle

Wusthof Ikon 6-Inch Straight Fork with Blackwood HandleProbably not suitable for taking in hand luggage to a thanksgiving dinner.

Wickedly sharp tongs, be careful what you're doing. Unlike some other meat forks with nice curves, this one will fit into your knife block, right alongside a carving knife.

Other than that, does what it is supposed to do. Left handed, or right handed. It might work out for a vegetarian for holding tofu, but I can't really say. ;)

Happy Carving !

Wusthof Classic 8-Inch Flexible Fish Fillet Knife

Wusthof Classic 8-Inch Flexible Fish Fillet KnifeI bought this knife because I love this company! The knife is very sharp and easy! And well bends as you need! While it remains in the form of .. I recommend to those who like lighter knives!

Wusthof 5-in. Gourmet Fork-Tip Tomato Knife.

Wusthof 5-in. Gourmet Fork-Tip Tomato Knife. This is the best knife and a must have for any kitchen. I not only use it for tomatoes...I use it for everything. A very sharp knife and one of my favorites. I love the tip as well. We have owned ours for several years and love it.

Very sharp serrated blade out of the cardboard sheath. Not flimsy. Two pronged very sharp, pointy fork tip useful for moving sliced/chopped items around (into a bowl; off the cutting board). Blade is easily made razor/hair shaving sharp with a ceramic steel.

I have 2 Wustof Santoku knives: gifts from family. This tomato knife is of similar quality except for the cheap red sticker. Cuts through tomatoes effortlessly; as well as melon, strawberries, peppers, etc... (you get the idea. the blade is very sharp )

The knife itself is excellent, but to earn 5 stars for a $30 tomato knife, leave the sticker off and laser brand/imprint the handle or leave it off entirely. The blade is marked indelibly; no reason to cheapen it with a tacky red sticker that is starting to peel on the handle.

I was on a knife purchasing kick and ordered the block set of Wustof Gourmet knives, so I decided to purchase this tomatoes knife since I eat a lot of tomatoes and really just liked the idea of it. It's a good knife, it's sharp, and it cuts tomatoes well. I just don't know if it's necessary to have a separate knife for tomatoes because it does not do any different or better of a job than the Santuku knife that I purchased. Again, it is a good knife and does the job well, it just depends on if you have a need or want for a separate tomato knife. If you already have a knife that cuts tomatoes well I don't think this does any different or better of a job. Good knife, not necessarily necessary!!

Shun Ken Onion 7-Inch Cleaver

Shun Ken Onion 7-Inch CleaverI've wanted a nice cleaver since I saw the Mortal Kombat character 'Meat' hacking away at his foes with a sweet pair of them, or was it the Swedish Chef recklessly flailing away in the kitchen on the Muppet Show in the mid 70's? Anywho. Due to a youthful affinity for the tool paired with the occasional lite butchery I've been doing from watching too much of the 'Food Network', i felt it was time to invest in a piece that was sturdy, functional & decorative. The Shun Ken Onion Cleaver does not disappoint on any of these criteria. It's like having one of those decorative battle-axes or Harry Potter swords on the wall that is actually functionally useful for cooking. It easily dispenses with meats, is well balanced, sharp & ergonomically feels like an extension of your hand. When the zombie apocalypse comes to wipe out humanity, I have no doubt that my Shun Ken Onion Cleaver will be a highly effective tool when close range combat becomes a necessity.

This is my third Shun knife and my second Ken Onion. They come quite literally sharper than a razor in that the edge lasts longer and it unbelievably sharp. I sharpen mine about once a month. Sending to Kershaw would take way too long. Blade is heavy and very thick, great for cutting through bone (which is why I bought it) but still sharp enough to slice through bits of skin. If you want the images to remain longer clean them with a gentle toothbrush or they will come off over time. Ergo handle very comfortable to use. Also have the 7" santoku knife with same handle. Look very attractive sitting on the counter and ready for action when needed. Love it!

Like all the Ken Onion knives, it's a thing of beauty. Unfortunately, the first time we used it, to break down a chicken, it chipped--a half-moon eighth of an inch crescent whacked out of the center of the blade. This was on a quality cutting board, and with proper technique, at least the way we understand it. We certainly weren't trying to hack through PVC or something. Sent it back for a refund. Our other Ken Onion Shun knives are keepers, though definitely on the more fragile side--not to be tossed around like cheaper cutlery. This cleaver though didn't cut it.

This is a very nice cleaver, very sharp, very solid and I personally like the style of the handle(I have big hands). It has a thick blade with a good wieght and was very sharp on receival(still is). It has made all the other chefs I work with quite envious. I have used it to chop a few things, mostly small and large cartilage joints, poultry frames and smaller bones like ribs with no problems at all, the edge has stayed sharp all the way through... so far.

I will continue to use my larger cleaver for more heavy duty carcase breakdown and keep this one for special occasions, although I am sure this cleaver would have no problem going through just about anything without dinging the blade.

If you have the money to blow this is a stylish useful tool to have around the kitchen

This is my 5th Ken Shun collection piece in addition to the 4-pc steak knife set, and my husband and are completely amazed and impressed. Yes, these knives are a bit on the expensive side, but they are worth it, even according to my hubby who leans more towards the "frugal" side. Interesting back story: I had previously purchased a Global cleaver (also through Amazon) and with it being my first cleaver and having nothing to compare it to, thought it was pretty good. My hubby and I used it several times for similar tasks (hacking through chicken bones, etc.) and were pleased. To my dismay, the Global knife started to rust and pit! Mind you, I am a Shun owner and know how to take care of a good knife: never in the dishwasher and thoroughly dried before putting away. Heck, I've even had my kids put one in the dishwasher and put away not completely dry and they still look beautiful. Thanks to Amazon for coming through with a full refund even after the return window had expired. My husband then said: "If you're going to get one, you might as well get the good one!" So I took the plunge and order my Shun Ken Onion Cleaver. My "frugal" hubby (after going a bit pale when I told him the price) used the cleaver tonight for our usual task of hacking through chicken bones. I asked him how the job went and he said: "There was no comparison! I hardly had to apply any pressure at allit was like chopping through butter, no resistance." My hubby(who is is a very tough sell, especially with expensive kitchen items) was also pleased with balance and feel of the knife. Although I haven't used it yet, I'm very much looking forward to it. In conclusion: if you are in the market for a good cleaver and can spare an extra $100 in your budget, get the Ken Onion Shun you will not be disappointed. We've been building our collection of the years and will continue to do so.

Yamazaki Gone Fishin 43-Piece Flatware Set, Service for 8

Yamazaki Gone Fishin 43-Piece Flatware Set, Service for 8I purchased this set for myself to replace a 19 year old Oneida set I had gotten tired of. I couldn't be more pleased. Each piece is shiny, attractively designed, and amusingly shaped. Just as important, each piece is well balanced so that the utensil does not tend to flip off the edge of the plate or cereal bowl as sometimes happens with other handle-heavy utensils. The forks are slightly bowl shaped which facilitates holding food which is not pierced. I have not found the fish lips on the soup spoons to be a problem during eating as long as you are not so rushed that you carelessly shove the spoon against your lower lip, as some reviewers have complained. When handwashing the utensils, some attention was given to check that no food particles are retained in the fish eye holes in the forks and knives; however, this was not an issue if a dishwasher is used. The included wooden caddy is utilitarian and plain, and was too tall to fit in my drawer, so it was replaced with a sleek bamboo utensil tray. This flatware is great for casual or party entertaining, and I really like it!

This is an awesome set of flatware that inspires lots of fun at the dinner table. It's functional, the highest quality, and most of all FUN!! I want another set.

Progressive International Set of 4 Chopping Mats

Progressive International Set of 4 Chopping MatsPrevious to purchasing this set of chopping mats, I had one fairly large chopping block and one quite small chopping block (both porous) which seemed to always be dirty. If they weren't dirty, I needed to cut all the vegetables before I cut any meat, and I'm not always that organized. These solve the problems, don't stain, and hang neatly on a nail inside my pantry. The flexibility is an added plus, as vegetables and meats can be swept into pots/pans of any size with ease.

These are handy mats that don't take up too much space, and the quantity of mats saves me the chore of having to wash the sole cutting board I used to have every night after dinner. They're also a good large size, which I like.

The main drawback is that the edges of these things curl a lot. I've tried flattening them under cookie sheets and heavy pots, but even after a couple years they still curl, which occasionally makes chopping awkward and messy. I've since bought mats that stay perfectly flat from Sur la Table, and which have a grippy silicone side to keep them from sliding around on the counter, and I'm much happier with those.

Bottom line: they're okay, and I use them, but I'd probably recommend something else.

Buy Progressive International Set of 4 Chopping Mats Now

We don't use these color-coded chopping mats to separate our meat and vegetables. Our extended family gets together every week for make-your-own-sushi dinner, which can be messy. We use these reasonably priced chopping mats in lieu of plates. We each have our own mat on which to construct and cut our sushi roll using very sharp knives -which do not leave any visible scratches on the mats. The mats clean easily and take little storage space. We wash and dry the mats by hand so haven't experienced curling problems mentioned by others. The hole at the edge of each mat is perfect for storage on a hook or nail in the pantry or cupboard. Several sets of these mats have really taken all the mess out of what used to be a rather messy process.

These are great. You can chop more than one thing at a time, and the flexibility allows you to bend it up and slide it straight into the pot. These are just heavy enough to be durable but still very flexible.

Want Progressive International Set of 4 Chopping Mats Discount?

Be prepared for these to curl up after the first pass through the dishwasher. It's not a complete nuisance, but it can be a little annoying.

They curl to approximately the arc of a hula hoop not quite a burrito, but certainly not flat.

Also, the photo (due to the corner of the red mat being folded up), makes these appear to be a floppier, silicon-like material, but they are actually a semi-rigid plastic.

All in all, at ~2 bucks apiece, they'll do the job, and I won't feel bad when I toss them in a year or so.

Farberware 3-Piece Wood Cutting Board Set

Farberware 3-Piece Wood Cutting Board SetWhat happens when you take razor sharp, tempered, high-carbon steel knives to wood? Well duh, the knives cut into the woood. I'm so tired of hearing complaints about wooden cutting boards showing knife marks. I read one review where the writer complained that they would probably have to replace the board after a few years. This is natural. If you don't want to see cut marks or replace your cutting board ever, get a slab of marble. It's bad for your knives, but these people seem not to care about that.

This Farberware 3-piece cutting board set is great. For the price, it's fantastic. These are the only cutting boards your average home cook should need. They are reversable (though only one side has grooves) and offer three various, useful sizes. The large is about the size of two sheets of paper side by side; big enough yet still managable in the sink to wash. The medium is about the size of one sheet of paper. The small is about the size of your avarage hardcover book. All are about as thick as the handles of your knives.

They are hard wood providing a nice cutting surface. The wood is well oiled to help protect it from water damage. After a while, your bound to have many cut marks, but so what? Take a look at the price again. You buy cutting boards so they take the damage, not your knives (or your counter).

The boards I received were all smooth and straight (not warped). None have any signs of cracking and seem well made. They are easily worth two or three times the price amazon.com sells them for.

If this seems like a ridiculous deal for three hardwood cutting boards, well it is. Only problem is two of the boards have split since I bought the set six months ago. I don't know if the wood is not cured correctly or what, but I have certainly not abused these cutting boards, nor have I subjected them to extreme temps or soaked them in water.

If I had it to do over again, I would get one good cutting board that would last, as these will have to be replace as they continue to split.

[added 4/3/07]

Just wanted to update with a note that for $10 I bought a huge heavy-duty wooden cutting board at a certain Swedish superstore. Buy the mineral oil that comes with it and treat it once a yearhaven't had any issues with it.

Buy Farberware 3-Piece Wood Cutting Board Set Now

I think it must be clear from the cost (and other reviews) that these are not what one would call "quality" cutting boards. Some of the flaws right out of the box were:

1. The largest had splinters (actually shavings half attached to the surface which would create an irregular surface once I'd pull it off.) The smaller ones have some irregularities too.

2. Also, they're coated with some sort of a material so that they don't absorb oil when trying to oil them initially. Dunno if that's good or bad, though.

I was not under any illusions when I bought them, but I'm giving them four stars because they serve the purpose I had in mind for them. I actually use them under flexi-plastic cutting sheets. Why use both together? Well, the flexi sheets let me transport the cut food to the stove (or wherever) easily, are cheap enough to replace periodically, and are dishwasher safe. The wood cutting board provides a surface underneath the flexi-sheet that is not as hard as my counter, thus protecting my knives' edge. And as I don't use the wood surface directly, I don't have to expose it to moisture etc. Sometimes stuff does trickle down to it, but that's different from cutting ON it, and can be taken care of by wiping it off. Hopefully, this will prevent the board from splitting apart, and the way I use them, small cracks won't bother me too much.

As an aside, I find the smallest board too small to cut anything on, so I usually use it as a trivet.

I read through all the reviews for this item before purchasing it. Since the positives outweigh the negatives I went for it. I have only used the big wood board three times and each time I washed it and dried it before placing it on a drying rack. Yesterday, I went to use the board and saw that it had warped and there was a huge crack running though the middle. It has been less than 3 weeks since I purchased this item and it is going straight back to Amazon. Go for the poly boards, skip the wood

Kai Wasabi Black Eastern Knife Set, 3pc

Kai Wasabi Black Eastern Knife Set, 3pcHaving coveted a particularly spendy chef's knife made by Shun but not quite ready to make that kind of financial commitment I was looking for a way to take smaller step into the world of super-fine cutlery. Made in Japan, this Wasabi line was developed in partnership with Shun in 2008 and has since garnered a reputation for being among the most well made and sharpest of knives.

I was lucky to find the 4 1/8 inch Deba knife locally and over the past six months it has become a favorite in my kitchen.

Single edge, beveled blade is super sharp and I mean *scary* sharp!

Contemporary designed handle is made of powdered bamboo and resin. A sort of D shaped handle that is thinner than I am used to but provides the right balance to work with proper control of the blade.

Made of high-carbon stainless steel which has better edge retention over time.

I use this mostly with vegetables and smaller cuts of meat, with the ability to get incredibly thin slices when needed. Works easily and delicately with things like a chiffonade of basil without blackening the tender leaves.

I haven't tried the other two knives in this set but something tells me that I'll soon need to be getting a larger knife block.

Black & Decker CO85 Spacemaker Can Opener, White

Black & Decker CO85 Spacemaker Can Opener, WhiteI totally agree with the previous reviewer, this opener has no power and even sounds like it's agonizing over the chore of opening the lid. It is definitely hard to get a can started since the cutting edge will not lift up enough to be able to hook the can edge into it, and forget about even trying to see the blade while doing said placement!

After only a week's use, it stalled numerous times while trying to open a large tuna can size. The can gets jammed and the motor continues to whine, and it took herculean effort to get the can back out of its grip. I had to unplug it several times to keep it from burning out its motor while I tried to free the can.

I cannot believe the poor design and jamming problems from the B & D namesake, much less the highly touted Spacemaker line of appliances over the years. It's definitely back to a Proctor Silex like I had before and this piece of junk is outta here!

We had a 10-year-old Spacemaker Can Opener that we liked. It died recently, and we purchased this model at the large superstore near our home. I am a handyman (we built our own home) and this new model will NOT mount properly on European-style kitchen cabinets (with a full-overlay door)! I could make a shim to mount it perhaps 3" below the cabinet, but that would be ridiculous. The mounting for this uses four screws through the base of the cabinet, but there are two front screws within 1/2" of the front of the unit. And the lever swings up 1" ABOVE the top of the unit to insert a can. So the front two mounting screws would need to be mounted into the bottom edge of the cabinet door, or the can opener cannot be used! The printed installation instructions do point out to be sure that the can opener is mounted close enough to the front of the cabinet so that the lever will clear the front of the door. But in doing this, the front two screws cannot be used. So it is going back to the store. What is wrong with B&D Engineering?

I replaced a 10 year old undercounter with this one. The wheel is small and uses a fixed cutter instead of a rotating one. As result cuts are slow, jagged, and often stalls the motor. Very hard to get a can started. Its going in the trash

Some of the pieces looked good, but many had missing and or faded dots. Also, there wasn't a smooth connect between the blade and handle. I purchased a different brand in gingham years ago at Target and was very pleased, but this brand was very disappointed. Returned for a refund.

I wanted to give a lift to my old flatware that we use everyday. I purchased this fun and bright flatware and mixed them in. It brightens my day just to look in the drawer and see the different colors and polka-dots. I get bored with the same old thing and it mixes well with what I have. I like fun and different. It was reasonable and makes me smile.

Global Chef's Knife

Global G-2 - 8 inch, 20cm Chef's KnifeThis is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.

Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

I have been a keen amateur chef for more than 30 years. I was given a full set of Sabatier chef's knives as a wedding present and have been using them since 1970. I had recently decided that 30+ years of sharpening had taken their toll on the Sabatiers and that new knives were called for but what should I buy?

At heart I am a traditionalist and the appearance of the Global range had put me off them. Fortunately I recently read Anthony Bourdain's Kitchen Confidential and noted his ringing endorsement of the Global range. I decided to buy the 8-inch chef's knife to see how I got on with it. I have never looked back!

Despite its rather unconventional look, the knife has excellent ergonomic design. It is well balanced, readily gripped when wet and astoundingly sharp. TMOT, you are unlikely ever to meet a sharper knife. Hold a sheet of paper from the top with one hand out in front of you and then cut downwards with the other this knife readily cuts the paper without it being tensioned. That is what we mean by a sharp knife.

As noted in the Amazon description, the knife's handle is fairly small. My hand is a medium male hand about 3.25 inches or 8.5 cm across its back. The knife is an excellent fit for my hand and could probably accommodate a hand upto 4 inches or 10 cm across the back. However, I have seen some chefs with meaty hands that might find this knife a less than perfect fit. The knife is fairly light it weighs 5.5 ounces or 160 grammes.

In all I am well satisfied with this purchase and shall go on to replace all my Sabatiers with the Global equivalents. Oh yes and if you haven't yet read Anthony Bourdain's Kitchen Confidential, buy that too but be careful not to cut yourself when you start laughing thinking about some of the things he has to say about professional cooks...

I've been a German knife snob for years. But this 8-inch chef's knife by Japan's Global is the finest blade I've ever owned. Period.

Maybe it's not as easy to sharpen as a Wustof or a Henckel, but then again, it holds its edge ten times longer.

I've spent ten years and hundreds (and hundreds and hundreds!) of dollars collecting German steel. Global is so good that it has me thinking of starting all over again.

This knife amazed me when I took it out of the box. I lightly dragged my thumb across the edge and felt some of my skin shave off, and looked closely at the edge to see flakes of my skin on either side of the blade. I tested it out on a tomato eagerly and it fell through it like falling through air. You cannot feel any friction whatsoever as the knife goes through the food. This knife is well worth the money, and really for a knife of such quality, its not that expensive.

It is lightweight and all one full piece of steel, which means all food can be washed from it without sticking in any cracks or seams, as well as rigid durability. The steel its made of, apparently "Cromova 15", shines in my eyes like the first time I got it every time it is washed, and repels water, so the juices from various foods drip away to help prevent slices of food sticking to the side of the blade.

I gave this knife four stars, because unfortunately, the edge will start to deteriorate after about 3-400 strokes to the board. And it is exceptionally difficult to sharpen due to the strange edge these knives have had put on them at the factory, BUT if you regularly stroke it across a mediocre steel once or twice on each side after a few uses the edge will remain factory sharp for quite a long time. This knife will make all your foodie friends jealous. I left mine at work for about 4 days whilst I was gone, and the head chef (who readily agrees it is the sharpest knife in the kitchen) used it heavily, disregarding his wuhstof collection. I came back and he had not honed the edge, so it had deteriorated well beyond repair to its original condition. Make sure you keep it sharp and treat it like family, and this knife will treat you better than any knife I have used, and I own Shun, Whustof, Henckels 5-star, Sabatier, and other various brands. I am sold on global.

So... you want to buy a nice knife for the kitchen, but aren't quite sure what's best? The truth is, there is no "best" knife as everyone hopes for. The idea is finding a knife that feels right in your hand, is sharp, stays sharp, and is easy to re-sharpen and hone.

If you're looking for a heavy knife that uses its own weight to crush through everything in its path, keep looking. Global knives are extremely light. That's the number one complaint I hear from my coworkers as to what they don't like about my knife. But the blade of this knife is very thin and holds an edge better than any other knife I've seen. So when I'm cutting an entire five gallon bucket of carrots for crudités, the knife glides right through the last carrot as smoothly and evenly as it did the first carrot. I rarely ever sharpen this knife, and I use my honing steel once a day at the beginning of my 10-12 hour shift. And despite this, everyone who touches my knife is always amazed by how sharp the blade is. For me, low maintenance is a blessing. Who doesn't love that?

The second complaint I hear a lot is the grip. Many firmly believe that the stylish metal grip becomes slippery when wet or combined with a little grease or fat from the food that is being cut. Sure, that's true. But first off, what knife handle doesn't get slippery when fat or grease is involved. That's what fat and grease does. It makes things slippery. Second, your knife hand should be holding the knife, not the food. If you put the knife down to handle the food, you should be washing your hands. Now dry them off and there's no worries, right? That complaint never made any sense to me.

My best recommendation to anyone looking for a good knife is that you first go somewhere that allows you to take a few different knives for a "test drive". Just chop a few things and see how it feels in your hand. If you live in a place where that is out of the question, then just keep in mind what qualities best fit your needs, and I wish you the best of luck with your selection. If this is the knife you choose, I know you won't be disappointed.
